JOLADA PAYASA / CORN PUDDING

Today I am sharing a very easy dessert recipe that will impress your family and friends. They will be craving for more as this Jolada payasa aka corn payasam is very tempting and delicious.With easily available ingredients it will take less than 30 minutes to prepare this wonderful and nutritious dessert.

Recipe for Jolada Payasa / Corn Pudding

Ingredients:

  • 1 Cup Corn Kernels
  • 1/2 Cup grated fresh Coconut
  • 8 Almonds
  • 1 Tsp Khus Khus / Poppy Seeds
  • 4 Tsp Sugar
  • 3 Cups Milk
  • 6 Cashews
  • 12 Raisins
  • 2 Tbsp Ghee
  • Few Strands of Saffron

Method:

Coarsely grind Corn Kernels , freshly grated coconut and almonds.

Heat a wide bottom pan . Add 1 tbsp ghee. Slightly roast cashews and raisins .Remove and transfer it to a plate. Add balance ghee to the pan. Add the ground corn ,coconut ,khus khus and almond mixture. Roast on low flame till the raw smell is gone. Add sugar and milk. Mix well and allow it to boil on low flame.

Switch off the flame once it is done. Garnish with roasted cashews and raisins.

Enjoy this simple and nutritious dessert at the comfort of your home.

GULAB JAMUN (INDIAN DESSERT)

Rakshabandhan is round the corner. This is celebrated on the last day of Shravan which usually falls in August. This is celebrated to strengthen the brother sister bond.The sister prays for the well being of her brothers and ties rakhi on his wrist.The brother wows to protect his sister at all times.

I remember how we used to celebrate when we were kids. There used be so much enthusiasm as we always looked forward to yummy food, new clothes and the ceremonies. It makes me nostalgic every year as my brother and cousin brothers are all far away and we don’t get a chance to meet very often. Every year i continue to pray for their well being no matter where they are. We are connect by heart.

To celebrate this wonderful festival and my humble contribution for 208th #Foodiemonday # Bloghop theme #MeetheBandhan is this melt in the mouth Gulab Jamun. This week’s theme was suggested by Archana who blogs at https://themadscientistskitchen.com/ . She has some amazing collection of Goan recipes. You must check her blog.Her recipes are loved by her teenage children. You will get a lot of ideas to cook for your teenagers.

Recipe for Gulab Jamun:

Ingredients:

  • 1 Cup Khoya / Dried milk solids
  • 1/4 Cup Maida
  • 1/2 Tsp Baking Powder
  • Pinch of Cardamom Powder
  • 1.5 Tbsp Ghee / Clarified Butter
  • 1-2 Tbsp Warm Milk (use it as needed to knead a smooth dough)
  • Oil for frying

For Sugar Syrup:

  • 1.5 Cups White Sugar
  • 2 Cups of Water
  • 2 Tsp Lemon Juice
  • 1/4 Tsp Cardamom Powder

Almond slivers to Garnish

Method:

Take a wide bottom bowl . Add khoya, cardamom powder, baking powder and maida and mix well . Add ghee and mix well untill combined. Add warm milk little by little untill it comes together to form a soft smooth dough. Cover and allow it to rest for 20 mins. Take small portion of the dough and shape it into round balls using your palm. Ensure there are no cracks. Heat the oil.Ensure the oil is not too hot.Deep fry these balls on low flame till they are golden brown and ensure all sides are cooked.Remove them and transfer them to a plate once done.

Take a wide pan. Add sugar, water and cardamom powder and keep it on medium flame untill the sugar is fully dissolved.Once it starts to boil add the lemon juice and allow it to boil for another 5 mins. Once done switch off the flame and allow it to cool.

Once the sugar syrup is warm add the deep fried balls .Allow it to soak for 30 mins. Garnish with Almond slivers and serve.

QUINOA PAYASAM /QUINOA PUDDING

I am back to blogging after a short break.I am sure you will be excited to know about the recipe i am sharing today. Today’s recipe is a twist to the traditional Indian Sweets. I made Quinoa Payasam or Quinoa Pudding. A delicious payasam that will leave you licking the bowl and craving for more.A delicious treat to your family and guests.

Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids.. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. (Source Google).It has lately gained much popularity. You can substitute for Rice and use it in salads as well.It is filling.

For this week 205th #Foodiemonday #Bloghop theme #MithaiMeinTwist was suggested our Sasmita our co blogger . Check out her blog for awesome recipes at https://www.firsttimercook.com/ .Her basic idea was to keep the traditional name of the dessert using a foreign Ingredient.It was challenging though i thorougly enjoyed cooking for this theme. My family just loved it.

Recipe for Quinoa Payasam :

Ingredients:

  • 1 Cup Quinoa
  • Handfull of Nuts and seeds mix (Pumpkin seeds , almonds,dried cranberries,raisins,sunflower seeds,Cashews)
  • 750 ML Full cream Milk
  • 1 Cup Palm Jaggery
  • 2 Tbsp Grated desiccated Coconut
  • 1 Tsp Khus Khus
  • 2 Tbsp Ghee / Clarified Butter
  • 10 Cashews to Garnish
  • Few Strands of Saffron
  • 1/4 Tsp Fresh Cardamom Powder

Method:

Wash quinoa and boil and cook it in 2 cups of water.It will take about 8-10 mins .Once you see the thread like strands coming out switch off the stove.Allow it to cool. Soak a few strands of saffron in 1 tsp of hot milk.

Add nuts and seeds mix, khus khus and desiccated coconut. Blend it to fine powder. Take a wide bottom pan. Add ghee. Roast the cashews and transfer them to a plate.Add the blended mix to the ghee and roast for a minute or two untill the raw smell is gone. Once done add the cooked quinoa and palm jaggery and mix well. Then add milk and simmer on medium flame untill it comes to boil. Lastly add the cardamom powder and saffron soaked milk and mix well.

Garnish with Roasted Cashews and serve warm or cold as per your taste.

1 Cup = 160 ML

You can replace sugar in case you can’t find palm jaggery.

RATALYACHA GOD HALWA /SWEET POTATO HALWA

I recently joined a group Recipe Swap Challenge where the members are wonderful bloggers. We are paired one blogger and we have have to cook any recipe from their blog. I was paired with Archana who blogs at
https://themadscientistskitchen.com/ . I had short listed many recipes but settled to make Sweet Potato Halwa / Ratalyacha God Halwa.Glad I tried this recipe. I did tweak in a little as i did not have condensed Milk.You can read original recipe here.

Recipe for Sweet Potato Halwa / Ratalyacha God Halwa :

Ingredients:

1 Big Sweet Potatao

2 Tsp Brown Sugar

2 Tbsp Ghee

A generous pinch of Cardamom Powder / Elaichi Powder

1 Tbsp Milk

8 Raisins

4 Almonds Chopped

Few Strands of Saffron

Method:

Pressure cook the sweet potato upto 2 whistles. Allow it to cool .Peel the skin once it reaches room temperature.Mash the sweet potato and ensure it is lump free.

Soak Saffron in milk and set aside.

Heat a wide bottom pan. Add ghee and fry the almonds and raisins and keep it aside.In the same wok add the mashed sweet potato to the remaining ghee and allow it to cook for about 5 mins on low flame. Now add sugar and saffron soaked milk and cook it on low flame.The gooey halwa will start to thicken as the ghee leaves the sides of the pan. Garnish with raisins and almonds roasted earlier. Switch off the flame .

Serve hot and Enjoy!!!!!!!!!!!!

This is Vegan ,filling and refreshing.It is loaded with Vitamins and minerals. This smoothie bowl is made from Mangoes,chia seeds,Kiwi, Avacado and Strawberries.

Fresh mango contains a variety of nutrients but only vitamin C and Folate are in significant amounts .

Green kiwifruit provides 61 calories is 83% water and 15% carbohydrates, with negligible fat and protein). It is particularly rich in vitamin C (112% DV) and vitamin K (38% DV), has a moderate content of  vitamin E(10% DV), with no other micronutrients in significant content.


Avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals. Avacado is rich in Vitamin K,Folate,Vitamin C,Potassium,Vitamin B5,Vitamin B6 Vitamin E.It also contains small amounts of magnesium, manganese, copper, iron, zinc, phosphorous and vitamins A, B1 (thiamine), B2 (riboflavin) and B3 (niacin).

Chia seeds are rich in Antioxidents.It is rich in Protein and a high source of Fiber.

Recipe for Smoothie Bowl:

Ingredients:

  • 1 Mango cut into cubes
  • Pulp of 1 Medium Size Avacado
  • 1 Kiwi cut into cubes
  • 6 Strawberries
  • 1 Tsp Chia Seeds
  • 8-10 Black Raisins
  • 1 Tsp Sun Flower Seeds
  • 1 Tsp Pumpkin seeds

Method:

Add fresh mango cubes , kiwi cubes, avacado pulp , strawberries in a blender and blitz to get a fine paste.

Transfer the contents to a bowl. Garnish with Chia seeds, black Raisins, Sunflower seeds and pumpkin seeds .Add few strawberries pieces and mango pieces and serve .

Recipe for Khajoor Modak:

Ingredients:

1Cup =160 ML(Makes 10 Modaks)

1 1/2 Cup  Dates (Soft Medjool dates seedless)

1 Cup Almonds

1 Cup Cashews

1/4 Cup Raisins

1Tbsp Ghee

Method:

Heat a wide bottom pan. Add ghee.Once the ghee melts slightly roast the cashews ,alomonds and raisins(Separately for a few seconds).Once done remove from the ghee and transfer it to a bowl and allow it to cool.Leave the extra ghee in the pan. When it is warm blend all the dry fruits to a fine mixture.Transfer this dry fruit mixture to the pan with ghee. Blend the dates also to a fine paste.Transfer the dates paste to the pan with dry fruits powder. Mix all the ingredients. Add some ghee if you feel the mix ture is dry. Make small balls of this mixture and shapre it as a modak.

Khajur Modak is Ready.

KADALA PARIPPU PAYASAM

 

 

Onam is celebrated this year on Aug 25th. Two days later ie Aug 27th is a  memorable day in my life as I got married on this day few years ago.Onam Festival is celebrated all over Kerala. It usually falls during the Malayali month of Chingam (Aug – Sep) and marks the homecoming of legendary King Mahabali. Carnival of Onam lasts for ten days and brings out the best of Kerala culture and tradition. Intricately decorated Pookalam, ambrosial Onasadya, breathtaking Snake Boat Race and exotic Kaikottikali dance are some of the most remarkable features of Onam – the harvest festival in Kerala.

For our 157th #Foodiemonday # Bloghop theme #Onamrecipes my humble contribution id Kadala Parippu Payasam.

Recipe for Kadala Parippu Payasam:

Ingredients:

3/4 Cup Channa dal / Kadala Parippu

1/4 Cup Coarsely ground Brown rice

2 Cups Palm Jaggery

1/8th Tsp Dry ginger powder

1/2 Cup Coconut Milk (thick)

1  Cup Coconut Milk (Thin)

1 Tbsp Ghee

A generous pinch of  Cardamom powder / Elaichi powder

15 Cashews

Coconut Pcs (Optional)

Method:

Heat 1/2 tbsp ghee and roast the cashews.Once done keep it aside.Heat the balance ghee in a pressure cooker.Dry roast channa dal and broken rice until fragrant. Add required amount of water and pressure cook for 2 whistles.Switch off and keep it aside.

Heat a white bottom pan.Add jaggery and allow it to melt on low flame.Mash dal and rice mix with a laddle. Now add this syrup to the dal and rice mixture and mix well. Once done add coconut milk (thin)and allow it to simmer on low flame.Once it starts to boil add the thick coconut milk.Allow it to simmer for another 5-7 mins. Once the mixture starts to thicken add cardamom powder ,dry ginger powder and mix well.

Garnish with roasted cashews and coconut pieces and serve.

Notes:

Payasam will thicken after some time.You can add hot milk and adjust the consistency before serving.

Serve hot or cold as desired.

CHOCOLATE CAKE (EGGLESS)

Hello !!!

I am so happy to share that my humble blog completes 3 Yrs this month. It has been an amazing journey which has taught me so many things , introduced me to many wonderful and talented people who are always encouraging with their lovely feedback which has helped me to improve.I would also like to thank my family, friends and my wonderful readers who have time and again given their honest feedback which has made me better understand them and improve myself constantly. Do continue to shower your love and blessings which will boost me .I have met many of them personally and there is long list of people whom i am keen to meet sometime soon.To share this milestone i have baked a moist chocolate cake and decorated it as well.

Now coming back to this wonderful recipe it is eggless. I have tried to step out of my comfort zone and worked with Ganache. It was an awesome experience working with chocolate ganache. I know i need to work on my decoration skills. This is just a baby step and I am happy to have taken it.

Recipe for Eggless Chocolate Cake:

Ingredients:

For Cake:

1.5 Cups All Purpose Flour (Unbleached)
1 Cup Granulated Sugar
1/2 Cup Cocoa Powder
250 ML Milk (At room temperature)
1/2 Tsp Salt
1/2 Cup Oil (I have used Olive Oil)
1 Tsp Vanilla Extract
2 Tsp Vinegar(Incase you don’t have Vinegar you can use buttermilk instead of milk and vinegar
1 Tsp Baking Soda

For Ganache:

3/4 Cup Dark Choco Chips
250 ML Heavy Cream (I have used Amul cream)

For Toppings:

3 Nos Ferrero Rocher

6 Nos Fresh Stawberries

12 Nos Chocolate eggs

Method:

For Cake:

Pre heat the Oven at 180C for 10 mins. Grease the Cake tin and dust some flour and keep it aside.

Sieve the flour, Cocoa Powder, Baking Soda and salt twice in a wide bowl . Sieve sugar in another bowl.

In another bowl mix milk,vinegar,sugar and oil. Keep it aside till sugar is completely dissolved .

Slowly unfold the flour mix into the liquid mix and mix untill you get a smooth mixture without any lumps.Do not over mix.

Pour this mixture into the greased cake tin and bake it for about 40 mins or untill the toothpick comes out clean.

Keep it on a cooling rack and allow it to cool completely.

For Ganache:

Bring Heavy cream to light simmer and switch off the flame . Pour this over the chocolate chips and cover it for about 5 mins .Do not mix. After 5 mins mix the 2 ingredients to get a smooth mixture .I got the perfect consistency for decorating the cake. Allow it to cool completely.

One cooled pour it on the cake and uniformly spread it on the whole cake.Decorate with all the toppings mentioned above and serve.

Enjoy this super moist eggless chocolate cake !!!!!!

STRAWBERRY SOFT SERVE (NO COOK RECIPE)

I just love Ice cream in any season. I like to whip up soft serve with frozen fruits when you have a sudden craving for desserts or sudden guests at home. Absolutely no cooking involved. Just a few ingredients and a yummy dessert is ready.

Soft serve is a type of ice cream that is softer than regular ice creams as a result of air being introduced during freezing.These days it is commercially sold in many flavours.

This week’s theme for 102 #Foodiemonday #Bloghop is #FirelessCooking and my contribution for this theme is Strawberry Soft Serve. This theme will be very useful for many parents who participate in cooking competitions in their Kid’s school or elsewhere.Do check out all the recipes from my fellow bloggers too for all the amazing ideas.

Recipe for Strawberry Soft Serve:

Ingredients:

10  big Strawberries fresh or frozen

3/4 Tin Condensed Milk

2 Tins Nestle  Cream

1/2 Tsp Vanilla Extract

Method:

Freeze fresh strawberries one day before you plan you make the soft serve. You can use store bought frozen strawberries if you plan to make it on the same day.

Puree the frozen strawberries in a blender until they are no lumps. Then add the condensed milk, cream and vanilla essence and pulse it until all the ingredients blend well. Pour this mixture in a metal baking pan. Cover it with a cling wrap and freeze it until firm.

Remove from the freezer 5 minutes before serving . Scoop it and serve it in wafer cones garnished with fresh strawberries.

STUFFED MANGO PANCAKES

Work has kept me busy and away from blogging for sometime. Hope you are all looking forward to my latest recipe.Today i will be sharing a very popular dessert from HongKong. This yummy dessert is so light and refreshing  that it will leave you craving for more.This dessert is actually a thin pillow shaped crepe stuffed with whipping cream and mango chunks.It tastes absolutely divine and is so easy to to make it at home.My boys went gaga over this dish.I just loved the elastic and moist pancake with mango chunks.

Recipe for Stuffed Mango Pancake:

Ingredients:

(1Cup =240 ML)

1 Cup Fresh Milk

1/3 Cup Unbleached All purpose Flour

3 Eggs lightly beaten

1/4 Cup Custard Powder (Plain)

10 Gms melted Butter

For Stuffing :

1/4 Tsp Vanilla Extract

1/2 Tbsp Icing Sugar

300 ML Whipping Cream

3 Mangoes peeled and cut into chunks

Method:

Take a mixing bowl. Pour the milk in the bowl. Now sift the flour ,icing sugar and custard powder into the bowl.Whisk all the ingredients untill it is lump free and well combined.Add the lightly beaten eggs and melted butter to the mixture. Mix well. Now sieve this mixture in order to remove the lumps if any. Custard powder gives a nice yellow colour to the pancake.

Heat  a non stick pan over low heat. Pour  mixture using a ladle and swirl it to form a thin disc (just like  you make dosa). Once the air pockets appear on the top remove the pancake and allow it to cool .It is to be cooked only on one side.Repeat this procedure for the balance mixture.

In the meantime whip the cream and whipping cream till you get stiff peaks. I have added a tsp of icing sugar to this mixture.

Now lay the pancake on a flat surface .Smooth side will be facing down. Add a tsp of whipped cream in the centre of the pancake.Place a mango chunk on the top.Wrap the filling from all the four sides to shape like a pillow. Place the folded side facing down and chill these pancakes for about 30 minutes before you serve . This will keep the whipped cream stiff.  My boys could not wait so i had to serve it immediately.
