Hello!!!!!!!!

I just love Ice cream in any season. I like to whip up soft serve with frozen fruits when you have a sudden craving for desserts or sudden guests at home. Absolutely no cooking involved. Just a few ingredients and a yummy dessert is ready.

Soft serve is a type of ice cream that is softer than regular ice creams as a result of air being introduced during freezing.These days it is commercially sold in many flavours.

This week’s theme for 102 #Foodiemonday #Bloghop is #FirelessCooking and my contribution for this theme is Strawberry Soft Serve. This theme will be very useful for many parents who participate in cooking competitions in their Kid’s school or elsewhere.Do check out all the recipes from my fellow bloggers too for all the amazing ideas.

Recipe for Strawberry Soft Serve:

Ingredients:

10  big Strawberries fresh or frozen

3/4 Tin Condensed Milk

2 Tins Nestle  Cream

1/2 Tsp Vanilla Extract

Method:

Freeze fresh strawberries one day before you plan you make the soft serve. You can use store bought frozen strawberries if you plan to make it on the same day.

Puree the frozen strawberries in a blender until they are no lumps. Then add the condensed milk, cream and vanilla essence and pulse it until all the ingredients blend well. Pour this mixture in a metal baking pan. Cover it with a cling wrap and freeze it until firm.

Remove from the freezer 5 minutes before serving . Scoop it and serve it in wafer cones garnished with fresh strawberries.

STUFFED MANGO PANCAKES

Work has kept me busy and away from blogging for sometime. Hope you are all looking forward to my latest recipe.Today i will be sharing a very popular dessert from HongKong. This yummy dessert is so light and refreshing  that it will leave you craving for more.This dessert is actually a thin pillow shaped crepe stuffed with whipping cream and mango chunks.It tastes absolutely divine and is so easy to to make it at home.My boys went gaga over this dish.I just loved the elastic and moist pancake with mango chunks.

Recipe for Stuffed Mango Pancake:

Ingredients:

(1Cup =240 ML)

1 Cup Fresh Milk

1/3 Cup Unbleached All purpose Flour

3 Eggs lightly beaten

1/4 Cup Custard Powder (Plain)

10 Gms melted Butter

For Stuffing :

1/4 Tsp Vanilla Extract

1/2 Tbsp Icing Sugar

300 ML Whipping Cream

3 Mangoes peeled and cut into chunks

Method:

Take a mixing bowl. Pour the milk in the bowl. Now sift the flour ,icing sugar and custard powder into the bowl.Whisk all the ingredients untill it is lump free and well combined.Add the lightly beaten eggs and melted butter to the mixture. Mix well. Now sieve this mixture in order to remove the lumps if any. Custard powder gives a nice yellow colour to the pancake.

Heat  a non stick pan over low heat. Pour  mixture using a ladle and swirl it to form a thin disc (just like  you make dosa). Once the air pockets appear on the top remove the pancake and allow it to cool .It is to be cooked only on one side.Repeat this procedure for the balance mixture.

In the meantime whip the cream and whipping cream till you get stiff peaks. I have added a tsp of icing sugar to this mixture.

Now lay the pancake on a flat surface .Smooth side will be facing down. Add a tsp of whipped cream in the centre of the pancake.Place a mango chunk on the top.Wrap the filling from all the four sides to shape like a pillow. Place the folded side facing down and chill these pancakes for about 30 minutes before you serve . This will keep the whipped cream stiff.  My boys could not wait so i had to serve it immediately.

MANGO YOGURT SMOOTHIE BOWL

I was craving for some dessert this weekend. I had a few ingredients in my pantry and viola i came up with a yummy and healthy Smoothie bowl with the goodness of Mango , greek yogurt, honey and organic dried Mulberries.Yogurt is a staple at my place. An important part of our daily diet.

Yogurt is extremely versatile. You can dip it, spread it, freeze it, add fruit to it or eat it plain. Yogurt is often included on healthy food lists and for a good reason. Yogurt is highly nutritious and is an excellent source of protein, calcium and potassium. It provides numerous vitamins and minerals and is relatively low in calories. The difference between yogurt and Greek yogurt is that Greek yogurt is more creamier as it is strained thrice compared to the normal yogurt.

Here are some other ideas:

1.Make a breakfast parfait by layering yogurt, dry cereal or granola, and topping with your favorite fruit

2.Top waffles or pancakes with yogurt and sliced strawberries

3.Enjoy a mid-day snack by blending yogurt, fruit and juice to make a delicious smoothie

4.Dip raw vegetables in plain yogurt

5.Use yogurt for salad dressing and dips

6.Serve plain yogurt on quesadillas, tacos, soups and chili—as an alternative to sour cream

Today I am sharing a healthy recipe for Mango yogurt smoothie bowl which can be whipped up in just 5 mins and can satisfy your sweet cravings and hunger pangs.By adding some cornflakes or Museli you can serve it as breakfast too.

Recipe for Mango Yogurt Smoothie bowl:

Ingredients:

1 Ripe Mango Pureed

4 Tbsp Greek Yogurt

6 Physalis (Fresh fruit)

10 Raisins

6 Almonds grated

10 Organic dried Mulberries

2 Tsp Honey

Method:

Add Mango puree , Greek yogurt,honey and blend to get a smooth paste. Pour this mixture in a bowl . Garnish with raisins,grated almonds, organic dried mulberries ,Physalis and serve as a dessert.

Enjoy this healthy and yummy no fuss dessert at the comfort of your home.

This post is dedicated to my MOM on the occasion of Mother’s Day. Mother’s day is a celebration honoring the mother of the family, as well as motherhood, maternal bonds, and the influence of mothers in society. It is celebrated on various days in many parts of the world, most commonly in the months of March or May. I feel it is a celebration not on just one day but everyday.

My Mom is my strength. She has always encouraged me ,taught me and made me what I am today. I have understood her much better since I became a MOM.My mom is a self taught woman who lost her parents at the age of 18. She has equipped herself to be an independent woman in every possible way. She is always outspoken ,caring and helpful. She treats everyone equally irrespective of how she is treated, but never compromises on her self respect. She is always positive and vibrant with energy. She is one person who has never changed in any circumstance. I am always amazed to see how well she handles any situation. She is very practical .I am constantly learning from her. I love you Mom.I am so blessed to be your daughter.

My Mom loves Mangoes, Ice cream and Chocolates. This Mothers day I am sharing the recipe of her favorite dessert Mango Mastani.

Recipe for Mango Mastani (2 Servings):

1 Ripe Mango peeled and cubed

4 Scoops of Vanilla Ice cream

3 Glazed Cherries

1/2 Tsp Honey

4 Pistachios roughly chopped

4 Almonds roughly chopped

Few pieces of  Mango

4 Cashews roughly chopped

1/4 Cup Chilled Milk

Method:

Peel the mango and cut the pulp into cubes. Keep some pieces aside for garnish. In a blender put Mango cubes , 2 scoops of ice cream , honey ,milk and blend to get  a lump free smooth thick paste. Pour this mixture into 2 glasses. Add a scoop of Vanilla ice cream in each glass. Garnish with chopped cashews, almonds, pista, mango pieces and glazed cherries and serve.

Enjoy this royal dessert with your MOM and cherish these memories lifetime!!!!!!!!!

NO BAKE MINI CHOCOLATE STRAWBERRY PIES

 

Valentine’s Day is celebrated on February 14. It is a festival of romantic love and many people give cards, letters, flowers or presents to their spouse or partner.The most common Valentine’s Day symbols are the heart, particularly in reds and pinks, and pictures or models of Cupid. Cupid is usually portrayed as a small winged figure with a bow and arrow. In mythology, he uses his arrow to strike the hearts of people. People who have fallen in love are sometimes said to be ‘struck by Cupid’s arrow. Other symbols of Valentine’s Day are couples in loving embraces and the gifts of flowers, chocolate, red roses and lingerie that couples often give each other.

As we approach Valentine Day this year i thought of making these No Bake Mini Chocolate Strawberry Pies which can be whipped up in a jiffy. A perfect recipe for all those need last minute ideas or due to time constraints they are unable to whip up anything special.

As a part of our 79th #Foodiemonday #Bloghop theme of #Valentine’sSpecial recipes, my contribution is this quick and easy No Banke Mini Chocolate Strawberry Pies.

Ingredients:

12 Double Chocochip Cookies

3 Tbsp Butter

1.5 Cups Chocolate Chips (Semi sweet)

10 Fresh Strawberries Halved

Colourful Sprinklers for Garnish

Method:

Pulse the chocochip cookies in a blender untill you get fine crumbs. Add butter and pulse untill the mixture holds together.Line a muffin tray with cup cake liners.Press the cookie crumb mixture into each liner.

Put the semi sweet choco chips in a microwave safe bowl and microwave on high for a minute. Stir in at 15 secs interval and microwave untill the chocolate is smooth and melted.Add this chocolate mixture on top of the cookie crumb in the cup cake liners.Press the halved strawberries into the chocolate. Place the muffin tray in the freezer for about 20 mins or untill the chocolate is firm. Garnish with some colourful sprinklers just befoe serving.

Diwali falls on 29th Oct this year. I am sure everyone is busy cleaning and decorating their houses to welcome Goddess Lakshmi.The colourful diyas are lit in every corner of the house. I miss India during Diwali as the celebration here is not the same.There are no crackers here, but the festive spirit is the same.

Are you all looking forward to some last minute sweet recipes?I will be sharing a easy recipe of a yummy sweet and this is one of my favorite. I have another reason to treat myself as it is my Birthday!!!!

So i prepared Yummy Shahi Tukda to treat myself and also my contribution for the 63rd #Foodiemonday #Bloghop theme #DiwaliSpecial-Sweets.

Recipe for Shahi Tukda

2 Pcs of Brown Bread cut into triangles with the sides removed

2 Cups of Full cream Milk

6 Tsp Sugar (Fine grain)

6 Almonds Finely chopped

20 Raisins

A generous pinch of Cardamom powder (freshly ground)

2 Tbsp Ghee /Clarified Butter

8 Strands of Saffron

Method:

Take a wide bottom pan. Add a little ghee and roast both the sides of the bread until crisp.

Roast the dry fruits in ghee and keep it aside.

Pour the milk in a heavy bottom pan and keep it on medium flame until the milk reduces to half.Keep stirring and scrape the sides.  Add sugar, cardamom powder,saffron .Allow it to boil for 3 to 4 mins.Switch off and allow the mixture to cool.

Take a plate. Place the roasted bread slices, pour the milk on top and garnish with roasted  dry fruits and serve.

Enjoy Shahi Tukda at the comfort of your home and treat your guests with this yummy delight!!!

Mango Ice Cream with Chocolate swirl

Mother’s Day  on 8th May is a celebration honoring the mother of the family, as well as motherhood, maternal bonds, and the influence of mothers in society.Mothers are the pillars of a Family.My Mother is my friend,mentor,guide who has been with me through all the thick and thin. She has moulded me to be what I am today. I am blessed to be her daughter. Every day is mother’s day as there is so much efforts the mothers put in to train and mould their kids to be good humans. I can relate to all the things my mom used to say after i became a mom. I am also blessed to be a mom of two Wonderful boys who  are in the process of being moulded to be good human  being with values.

Well coming back to the recipe, my mom is fond of ice creams and chocolates. As she is here with me ,I decided to to treat her with home made Mango Ice Cream with a drizzle of chocolate syrup and garnish with Choco chips. She was so happy and surprised seeing this wonderful treat.I am glad she loved it.

Recipe for Mango Ice Cream with Chocolate Swirl.

Ingredients:

1 Cup =250 ML

1 Cup Fresh Mango Puree

300 ML Chilled Whipping

100 ML Sterlised cream

3/4 Cup Milk Powder

3/4 Cup Sugar(Adjust as per the sweetness of Mango)

2 Tsp Hershey’s Chocolate Syrup

2 Tsp Choco Chips for Garnish (Optional)

Method:

Pour the whipping cream and sterlised cream in a bowl and blitz it in a blender. Add the Mango Puree ,1/2 cup milk powder  and sugar and blitz again for about 5 mins.You can see a nice fluffy mixture.

Freeze this mixture in a freezer safe container for 4 hours.After 4 hours  remove the container and pour the mixture in a bowl . Add the balance milk powder and blitz for about 2-3 Mins. Pour the mixture in an same freezer safe container and wrap the container using a plastic wrap. Place it in the freezer for about 2 hours.

After 2 hours remove the mixture and blitz again for 2 mins. Pour the mixture in a freezer safe container, pour the hershey syrup and using a toothpick make a swirl.Wrap the container with a plastic wrap . Freeze overnight or for 7-8 hours.

Serve the Creamy Mango ice cream with some hersheys choco syrup and garnished with choco chips.

Fruit & Nut Kulfi Temptation (No cook Recipe)

 

Summers are in full swing .Looking for some summer coolers to beat the heat all the time.Kulfi is a much sought after frozen dessert at my place. Kulfi has similarities to ice cream in appearance and taste, however it is denser and creamier .The traditional methods are time taking. With hectic work schedules i resort to short cuts sometimes without compromising on taste.

My Cousins and aunt were visiting us.I made this yummy kulfi to treat them.

There are many recipes of Kulfi. One of the most favorite at my place is Fruit & Nut Kulfi.

Recipe for Fruit & Nut Kulfi Temptation:

Ingredients:

1 Tin Nestle Evaporated Milk
1 Tin Nestle sterlised cream
3 Slices of fruit and nut bread(Gardenia Fruit & Nut Loaf)

1 Banana Chopped
1 Mango Pureed
2 Tsp of condensed milk

8 to 10 Cashews

Method:

Blend all the ingredients in a blender .Set it in the freezer for 2 hours. Blend it again and freeze for an hour. Blend once again. Add some chopped banana in the moulds / freezer safe  container and  pour this mixture and freeze overnight. Add a scoop or two in a bowl,garnish with nuts and raisins and drizzle some Chocolate syrup and serve.

Chocolate Oreo Blizzard (5 Min Dessert)

 

 

 

Looking for some classic treat this summer? Here is one to enjoy in this scorching heat. Blizzards are simply thick soft serve ice cream blended with your choice of a topping. You can have many varieties as per your choice. Although I love chocolates and not a great fan of Oreo, this yummy dessert left me craving for more. It just takes a few ingredients and less than 5 mins to make this delicious Blizzard at home.

Our theme for this week for 34th #Foodiemonday #Bloghop was #NocookNobake. So Blizzard was a perfect choice for this theme.

You just need 5 mins to whip up this yummy dessert and a few ingredients.

Recipe for Chocolate Oreo Blizzard:

Ingredients:

2 Ripe Bananas (Refrigerate for an hour before making the blizzard)

12 Oreos (Chocolate or Vanilla)(I have used Chocolate filled oreos)

2 Scoops of Cardamom Kulfi(Kulfi used here is homemade. You can use any ice cream of your choice)

10 Cashews (Soaked in water for 2 hours)

8 Almonds Peeled  (Soaked in water for 2 hours)

Note: Cashews and peeled almonds can be used without soaking too.

Method:

Place cookies in a food processor or blender and pulse to get a coarse consistency .Remove some chunks and keep it aside. To the balance Oreo mixture add bananas, soaked cashews, almonds and Kulfi  and blend until thoroughly mixed. Scoop into a large glass or bowl , garnish with the Oreo chunks and serve immediately.

Thai Sticky Rice with Mango

 

 

Mangoes are flooded in the market. After my trip I was craving to have some dessert. To satisfy my sweet tooth and also coinciding with our 33rd  #Foodiemonday #Bloghop theme #Rice I decided to make Thai Sticky Rice with Mango.I thoroughly enjoyed the dessert. I have used low fat coconut milk but there is no compromise in taste.

Thai Sticky rice with Mango or khao niao mamuang is a Thai dessert made with glutinous rice , fresh mango and coconut milk. It is a traditional Thai Dessert. It is prepared with glutinous rice also known as sticky rice. Thai Sticky rice with Mango is a popular dish in the Indochina region of Southeast Asia, such as Thailand, Laos, Cambodia, and Vietnam.

I have replace Sugar with Palm Sugar .Palm sugar is produced by tapping the sap from the inflorescence of the tree and boiling it down to produce a syrup, which is then sold as is, or allowed to crystallize into various shapes and sizes. In some instances the tree itself is tapped rather than the flowering spikes. Palm Sugar is a commonly used in Thai Desserts. Palm sugar is a nutrient-rich, low-glycemic crystalline sweetener that looks, tastes, dissolves and melts almost exactly like sugar, but it’s completely natural and unrefined. It’s acquired from the flowers growing high on coconut trees, which are opened to collect their liquid flower nectar. This nectar is then air-dried to form a crystalline sugar that’s naturally brown in color and naturally rich in a number of key vitamins, minerals and phytonutrients, including potassium, zinc, iron, and vitamins B1, B2, B3 and B6.

Recipe for Thai Sticky Rice with Mango

Ingredients:

1 Ripe Mango

1Cup Glutinous Rice

1Cup Coconut Milk(Low Fat)

50 Gms Palm Sugar

1 Tsp Roasted Sesame Seeds

1 Tsp Desiccated Coconut

 

Method:

 

Cut the Mango into cubes and keep it in the air tight container in the refrigerator. Soak the glutinous rice for 3 hours.Discard the excess water. Take a heavy bottom pan. Add the Coconut milk .Once it starts to simmer add the soaked rice and palm sugar. Keep stirring and ensure it does not burn(Approx 20 to 25 mins on low to medium flame). Once you see the palm sugar is melted and the rice is soft,sticky and fluffy, cover the lid and switch off the flame. Serve once it reaches room temperature. Place the sticky rice in a serving dish, garnish with Sesame seeds and desiccated coconut and serve with ripe mango .
