What a lovely recipe Preethi. Recently my son brought some mini sweet peppers. Wish I had come across this recipe then. Looks so colourful and a delicious healthy starter or snack dish. Will try the recipe when I get some mini sweet peppers as they do taste different from the normal bell peppers.
