There is some pancake mix lying in my pantry for last few weeks. Boys did not want to have pancakes so i decided to turn them into Mini Bundt cake. They turned out amazing. Loaded with choco chips it tasted insanely delicious. It is perfect for people who plan to bake last minute due to many constraints.It is Eggless too.You won’t be disappointed …I bet…

Christmas is an annual celebration to commemorate the birth of Jesus Christ, observed December 25 .It is celebrated by Christians from around the world. Lots of goodies and gifts are exchanged. Christmas trees are decorated and lot of gifts are placed below the Christmas tree. People visit churches for the Mass. Many beautiful christmas carols are sung. We all hope and pray for a beautiful world and good health for everyone on this planet.

Ingredients for Pancake Mix Mini Bundt Cake:
Pancake Mix : I had some betty Crocker pancake mix. These bundt cakes turned out insanely delicious. Perfect for those who want to bake last minute.
Brown Sugar: A Great alternative to the regular refined sugar. I have used granulated brown sugar.
Full Fat Milk : I have normal full fat milk. If Vegan use any plant based milk.
Butter : Butter makes it nice and moist. Do not Skip.
Cocoa Powder: Gives a nice Chocolaty flavor. You can skip if you want.
Vanilla Essence: Adds a nice flavor to the cake
Mini Choco Chips: I love to add Choco chips in my bakes as my boys love them. You can skip if you don’t like choco chips and sprinkle some Cinnamon powder on the top. It is a personal Choice.
Recipe for Pancake Mix Mini Bundt Cake:

Ingredients:
2.5 Cups Pancake Mix
3/4th Cup Granulated brown Sugar
1 Tsp Vanilla Essence
1/4th Cup Melted Butter
1 Tsp Cocoa Powder
1/2 Cup Mini Choco Chips
1.5 Cup Milk
Method:
Pre Heat the Oven at 180 C for 10 minutes.
Add all the ingredients in a wide bowl except the choco chips. Mix until well incorporated but do not over mix.
Add Choco chips.
Fill in the greased mini bundt pan upto 2/3rd full in each cavity.
Tap once to spread uniformly and remove the sir bubbles if any.
Place the pan in th pre heated oven and bake for about 15 minutes.
Cake with pancake mix is a wonderful option for quick and easy baking. Cake looks so moist and spongy and nicely baked.
