Hope you are all in the pink of health . Today I am sharing a recipe with minimal ingredients and can be whipped in a jiffy. Chow chow raita is a perfect accompaniment for Roti, Parathas and even rice. It is a delicious and nutritious side dish.
Chayote belongs to the gourd family and is rich in Vitamin C. It is widely used in south Indian cooking. Dishes range from Sambar ,Kootu ,Palya and many more. It is popularly used in Aisan Cuisine. This is one vegetable that is regularly used in my place. I add it to make akki rotti and parathas too. It is absolutely delicious.

Recipe for Chow Chow Raita:
Ingredients:
1 Chayote / Chow chow peeled and grated after removing the seed
2 Green Chillies Slit
1 Fresh Red Chilli Slit
Few Curry Leaves
1 Tbsp Peanuts roasted and crushed
2 Cups Yogurt
Salt to taste
1/4 Tsp Haldi / Turmeric
1 Tsp Mustard seeds
1/4 Tsp Asafoettida
1 Tsp Oil
1/2 Tsp Jeera
Method to prepare the Raita:
Wash and peel the chayote or chow chow. Remove the seed . Grate and keep it aside.
Heat a wide bottom pan. Add oil. Now throw in the jeera , mustard, curry leaves , green chilli,red chilli, turmeric and asafoetida. Once they start to splutter add the grated chow chow.
Add salt and Saute the chow chow for 5 minutes. Switch off the flame and allow it to cool completely.
Add yogurt and mix well. Add salt if needed.
Garnish with roasted and crushed peanuts and serve with rice or rotis of your choice.
