SATTVIC BHINDI CURRY (VEGAN)

Today I am sharing a very delicious and lip smacking curry without onion and garlic. Satvic Bhindi Curry is an absolutely quick and yummy curry. Perfect to be served with Rice or Roti. You can make this curry with easily available ingredients in our kitchen. It is completely Vegan Curry.

What is Sattvic Food?

Saatvik is derived from a Sanskrit word “Sattva”. Sattva is a concept from Indian Yogic philosophy. It means one that is pure, true, ethical, energetic, clean, strong, wise and vital.The Sattvic diet is a high fiber, low fat vegetarian diet followed by many people.The word sattvic means “pure essence,” and sattvic foods are thought to be pure and balanced, offering feelings of calmness, happiness, and mental clarity.Sattvic diets are rich in fresh, nutrient-dense foods, including fruits, vegetables, sprouted whole grains, fresh fruit juices, legumes, nuts, seeds, honey, and herbal teas . It promotes holistic health .Basically processed foods are to be avoided.The Sattvic diet is a vegetarian diet that’s based on Ayurvedic principles.

Ingredients for Sattvic Bhindi Curry (Vegan):

  • Bhindi / Lady Finger: We love bhindi and this is one of our favorite recipe.
  • Peanuts: I have used dry roasted peanuts. Dry roasted peanuts can be stored in an air tight container.
  • Fresh Coriander: Fresh coriander adds a nice flavor to the curry.
  • Green chilli : I have used mildly spiced green chilli. You can increase or decrease as per your spice tolerance.
  • Jeera /Cumin: I love the crunchy jeera in the tadka . Enhances the flavor of the curry.
  • Tomatoes: Adds some sourness to the curry and blends well the spice mix. Balances all the flavors perfectly.
  • Dhania / Coriander Powder: Dhania is dry roasted and finely powdered. Adds a nice aroma when freshly powdered.
  • Jeera /Cumin Powder: Jeera powder is home made. Dry roasted jeera is finely powdered.
  • Jaggery Powder: Gives mildly sweet taste to the curry and balances all the flavors perfectly.
  • Salt: I have used Himalayan Pink Salt. You can use any normal salt.
  • Kashmiri Red Chilli Powder: Add a nice color to the gravy and is not spicy.
  • Turmeric: I use turmeric in my cooking because of its medicinal properties.
  • Oil: I have used Sunflower oil.You can use any odorless oil.
  • Curry Leaves:I love the crisp curry leaves in the tadka. Enhances the flavor of the curry.

Recipe for Sattvic Bhindi Curry (Vegan):

Equipment Used:

  • Wide bottom Pan
  • Spatula
  • Blender

Ingredients for Sattvic Bhindi Curry (Vegan):

  • 12 Nos Bhindi / Lady Finger
  • 3/4 Cup Roasted Peanuts
  • 1 Cup Chopped Fresh Coriander
  • 6 Green chillies
  • 1 Tsp Jeera /Cumin
  • 3 Tomatoes Pureed
  • 1/2 Tsp Dhania / Coriander Powder
  • 1/4 Tsp Jeera /Cumin Powder
  • 2 Tsp Jaggery Powder
  • Salt to taste
  • 1 Tsp Kashmiri Red Chilli Powder
  • 1/2 Tsp Turmeric
  • 2 Tsp Oil
  • 1 Cup Water

For Tempering :

  • Few Curry Leaves
  • 1 Tsp Oil
  • 1/2 Tsp Jeera
  • 1/4 Tsp Mustard
  • Pinch of Red Chilli Powder

Method:

  • Wash and wipe the bhindi or lady finger dry. Chop them into 1″ long pieces. Keep them aside.
  • In blender make a coarse powder of dry roasted peanuts , coriander and green chillies and keep it aside.
  • Heat oil in a wide bottom pan. Add chopped bhindi and roast on medium flame.
  • Once it turns colour and slightly roasted add turmeric powder , chilli powder, coriander powder , jeera powder and salt to taste.
  • Add water to ensure the dry masala does not burn.
  • Let it simmer for 5 minutes.
  • Now add jaggery powder and the peanut mixture. and mix well. Keep it on low flame for 3 minutes.
  • Next add tomato puree and mix well. Add more water to adjust the consistency if required.I have not added only 1 cup water.
  • Close the pan and allow it to simmer on low flame for 10 minutes.
  • In a small pan heat oil. Add cumin , mustard and curry leaves .
  • Once it starts to splutter add chilli powder and turn off the flame.
  • Garnish the Curry with this tempering .
  • Serve hot with Rice ,Roti or Phulka.
  • Enjoy the meal…

This is a new way of making bhindi .. we make it in dry subzi form with onions or chickpea flour.. your recipe with peanuts, all the spices and tomatoes sounds a delicious and rich gravy for festive days especially when we are off onion and garlic.. will love to try it soon..
