Today I am sharing a very Flavorful spice mix. Kadai Masala / Home made Karahi Masala is one handy spice mix that is perfect for Kadai recipes . Perfect for any vegetarian or non vegetarian Kadai Recipes. Absolutely flavorful and quick to make. Home made masala powders are the best.

What is Kadai Masala / Karahi Masala?

Kadai masala is made with red chillies, coriander seeds, jeera, pepper, cardamom, and cloves. These spices are dry roasted to bring out the aroma and then ground to a slightly coarse powder. You can pound them in a mortar and pestle or grind in a mixer. Ensure the texture has to be coarse.The flavors are unbeatable. You can make this masala in just 10 minutes and store it in an air tight container.You can restaurant style Kadai recipes even on bust days. This Kadai masala is the secret masala for any authentic Kadai recipe.

Ingredients for Kadai Masala / Home Made Karahi Masala:

  • Kashmiri Dry Red Chilli : It is not spicy and adds some color to the spice mix.
  • Dry Red Chilli (Mildly Spicy Variety): I like to add to spice kick to the masala. You can skip and add only kashmiri chilli if you wish to. just increase the quantity of the chillies.
  • Coriander Seeds: Add whole coriander seeds. It is rich in immune boosting antioxidants.
  • Fennel : Imparts a nice flavor to the spice mix. It Has antioxidant, anti-inflammatory, and antibacterial effects.
  • Cumin Seeds: Cumin seeds enhance the taste and flavor of the spice mix. Has many health benefits.
  • Black Pepper: I have used whole black pepper corns. They add some heat to the spice mix.
  • Green Cardamom: It has Antioxidant and Diuretic Properties and imparts a nice flavor.
  • Black Cardamom: Imparts a strong flavor and has many health benefits.
  • Cloves: Cloves are full of antioxidants. These compounds help our body to fight free radicals,
  • Bay Leaves:Bay leaves are a rich source of vitamin A, vitamin C, iron, potassium, calcium, and magnesium. Imparts a nice aroma to the spice mix.

Recipe for Kadai Masala / Home Made Karahi Masala:

Equipment Used:

  • Wide bottom Pan
  • Spatula
  • Blender

Ingredients for Kadai Masala / Home Made Karahi Masala:

  • 3 Kashmiri Dry Red Chilli
  • 3 Dry Red Chilli (Spicy Variety)
  • 1/3 Cup Coriander Seeds
  • 1/4 Cup Fennel
  • 6 Green Cardamoms
  • 1/4 Cup Black Pepper
  • 2 Black Cardamom
  • 1/4 Cup Cumin Seeds
  • 10 Cloves
  • 2 Bay Leaves

Method:

  • Heat a wide bottom pan on medium flame.
  • Dry roast all the ingredients untill you get the aroma and they turn slightly golden.
  • Turn off the heat and allow the spices to cool completely.
  • You can pound them in a mortar & pestle to get the most flavorful spice mix. You can even grind it in a mixer.

Notes:

  • By using mortar and pestle you will have a better control in getting a coarse spice mix.
  • Do not over roast the spices.
  • Ensure not to grind into a fine powder.
  • Dry roast for about 3-4 mins to get the perfectly roasted spice mix.
  • Store in an air tight container and always use a dry spoon.

  1. Homemade spice mix is the best. Kadai masala is so quick and easy to make that it can be prepared at home and stored.

  2. This kadai masala must be so aromatic and flavourful. Like making spice mixtures at home and will try this one out for all my veggie kadai preparations. Coarsely pound spices, coat the veggies and paneer so nicely.
