Today’s recipe is a royal version of humble Khichdi. It is an easy one pot meal to treat your tastebuds.This Mix vegetable Masala Khichdi is a delicious treat for your family and friends.It is nutritious and filling too.It can be easily cooked in 15-20 mins apart from 10 minute preparation.

What is a One Pot Meal?

One pot meal involves only one utensil in which you cook all the ingredients and whip up a delicious dish.It is wholesome and one dish.It is quick and easy to prepare. You have a huge variety of one pot meals and lot to experiment with different flavors and cuisines.

Recipe for Mix Vegetable Masala Khichdi:


  • 1 Cup Rice
  • 1 Cup Split Green Gram
  • 2 Potatoes Peeled and Cubed
  • 1 Cup Frozen Mix Vegetable ( Carrots ,Beans, Green Peas ,Cauliflower)
  • Salt to Taste
  • 1/2 Tsp Coriander Powder
  • 3 Garlic Pods Finely Chopped
  • 1 Tsp Finely Chopped Ginger
  • 1/2 Tsp Jeera Powder
  • 1 Tsp Pav Bhaji Masala
  • 10 Cashews
  • 1/4 Tsp Haldi
  • 1 Tsp Jeera
  • 1/2 Tsp Mustard seeds
  • 1/4 Tsp Hing
  • 1 Tomato Finely Chopped
  • 2 Green Chillies Slit
  • 1 Onions finely Chopped
  • Fresh Coriander to garnish
  • 1 Tsp Ghee
  • 1/2 Cup Chopped Spring Onion
  • 2 Tsp Oil
  • 6 Cups of Water


  • Wash the rice and split green gram and soak for 10 min.
  • Place the cooker on the stove and switch on. Add oil and ghee.
  • Now add jeera ,hing and mustard.
  • As it splutters add chopped ginger , garlic ,green chilli and onions.
  • Once the onions are nicely browned add potatoes and frozen veggies.
  • Add cashews, jeera powder, coriander powder, pav bhaji masala,haldi ,tomatoes and mix well.
  • Drain the water and add the chopped spring onion along with soaked rice and dal mix.
  • Add 6 cups of water and salt and stir again.
  • Close the cooker lid and cook upto 4 whistles on medium flame.
  • Allow the cooker to release the pressure and then open the lid.
  • Garnish with Fresh coriander and serve with Roasted Papad and Pickle.
