DHABA STYLE PANEER MASALA

This week I am sharing a Dhaba style Paneer Masala Recipe. Dhabas serve heavily spiced punjabi food.I decided to treat by boys with insanely delicious Dhaba style Paneer Masala as they love Paneer. It is very easy and quick to make. It is the Ghee that enhances the taste of this dish.

What is a Dhaba?

Dhaba is a road side Eatery which is frequented by travellers by road and Truck drivers.Punjabi food served in dhabas is wholesome and full of rustic flavour. Food is usually served on big brass or steel thali  and drinks like water, lassi, varieties of milk , or tea, as well as shorbas or soups are served. A wooden plank would be placed across the width of the cot on which to place the dishes. These days the cots were replaced by tables. The food is typically inexpensive and has a homemade feel to it. They serve Two types of food in Punjabi dhabas – non-vegetarian cuisine and vegetarian fare . I love the warmth of these dhabas. Food is finger licking good.

Recipe for Dhaba Style Paneer Masala:

Ingredients:

For Marinating Paneer:
  • 300 Gms Cup Paneer
  • 1 Tsp Kashmiri Chilli Powder
  • 1/2 Tsp Garam Masala
  • 2 Tbsp Water
  • 1/4 Tsp Haldi
  • Salt to taste
  • 1 Tbsp Ghee
  • 1/2 Tsp Kasuri Methi
  • Chopped Coriander leaves
For Masala:
  • 1 Tbsp Ghee
  • 2 Tbsp Oil
  • 1 Tsp Cumin / Jeera
  • 1″ Cinnamon Stick
  • 3 Cardamoms Crushes
  • 3 Cloves
  • 1 Bay Leaf
  • 4 Onions very finely Chopped
  • 1″ Inch Ginger Juliennes
  • 6 Cloves of Garlic Finely Chopped
  • 1 Tsp Red Chilli Powder
  • 5 Tomatoes Puree
  • 1 Tsp Kasuri Methi
  • 1/4 Tsp Pepper Powder
  • 1/2 Tsp Garam Masala
  • 1 Tsp Besan / Chickpea Flour
  • 1/2 Tsp Cumin Powder
  • 1/2 Tsp Coriander Powder
  • Salt to Taste
  • Water

Method:

  • In a bowl add paneer and add chilli powder, garam masala ,turmeric,salt kasuri methi and chopped coriander. Add water and mix well.Ensure the paneer is not broken.
  • Heat a wide bottom pan. Add oil and ghee. As it becomes hot add cumin , cardamom, cinnamon, cloves and bay leaf. Roast them for about a minute.
  • Next add the finely chopped onions , ginger ,minced garlic , salt and cook on medium flame untill it is golden brown.
  • Add kashmiri chilli powder, black pepper,garam masala,coriander powder, Cumin Powder and Kasuri Methi.
  • Next add besan and mix well and cook for 2 minutes.
  • Add tomato puree
  • Cover the pan & cook for 5 minutes.
  • After 5 minutes remove the lid and Cook on high flame untill the oil starts to leave the sides.
  • Add ghee in a new pan.
  • Roast the marinated Paneer untill the masala is cooked.
  • After the masala is cooked add the Paneer to the masala and add a cup of water.
  • Cook for 2 minutes.
  • Garnish with fresh Chopped Coriander or Kasuri Methi.
  • Serve hot with Naan, roti or Phulka .

  2. Yummmmm…such a flavorful and rich paneer masala. Best enjoyed with hot hot rotis. Yes, those were the days when one could seat on the cots and enjoy a meal. Some restaurants in Bangalore are now adding that authentic feel, by giving patrons an option to sit at the table or the cots.

  3. Dhaba style paneer masala looks so spicy rich and mouthwatering Preethi. Adding besan in the paneer curry is new to me. Lovely recipe. I will try it sometime.
