IMLI KI CHUTNEY / CHINTHAPANDU PACHADI

Imli Ki Chutney / Chinthapandu Pachadi is a delicious delicacy from Andhra Cuisine.I have very fond memories of this dish during my stay in Vizag. One of the easiest and quickest dish. Sometimes we are bored of regular subzis ,then we can make this delicacy to relish and enjoy a yummy meal.Tamrind is a mandatory ingredient in every South Indian Household.

Some Facts About Tamrind :

  • Tamarind is a rich source of magnesium.
  • It contains more calcium than many plant foods. 
  • The seeds and leaves are also edible.
  • It plays and important role in traditional medicine
  • The polyphenols in tamarind have antioxidant and anti-inflammatory properties.

MAIN INGREDIENTS OF IMLI KI CHUTNEY / CHINTHAPANDU PACHADI:

  • Tamrind —- Clean the Tamrind and soak in a cup of water to make it moist.
  • Dry Red Chillies—Use a mix of Guntur Chilli and Byadgi Chilli
  • Garlic —Use fresh Garlic to add a nice flavor
  • Coriander seeds—- Use Good quality coriander seeds.
  • Cumin —–Use clean and good quality Cumin seeds to add a nice flavor .
  • Oil— I have used refined Sunflower oil here.

This recipe is my humble contribution for the A TO Z Recipe Challenge season 2 . This month was letter I and hence II made this delicacy.

IMLI KI CHUTNEY / CHINTHAPANDU PACHADI

Imli ki chutney is perfect to serve with piping hot rice and ghee . Make a big batch and store it in an air tight container. It is a lip smacking delicacy.

Equipment

  • 1 Wide Bottom Pan
  • 1 Spatula
  • 1 Blender

Ingredients
  

  • 2 Lemon Size Tamrind
  • 1 Tbsp Coriander seeds
  • 3/4 Tbsp Black Sesame Seeds
  • 1 Tsp Jeera / Cumin
  • 5 Nos Guntur Chilli (Spicy Variety)
  • Salt to Taste

For Tempering

  • 3 Tbsp Oil
  • 1 Tsp Channa dal
  • 1 Tsp Urad dal
  • 1 Tsp Mustard seeds
  • 10 Nos Curry Leaves
  • 6 Nos Garlic Cloves
  • 1/2 Tsp Turmeric
  • 2 Nos Dry red chillies

Instructions
 

  • Clean the tamrind and soak in 80 ml of water for about 10 minutes
  • Heat 1 tbsp oil in a pan. Add Coriander seeds ,jeera and black sesame seeds and roast on low flame .
  • Add dry red chillies as well. Roast untill sesame seeds starts to splutter. Ensure not to burn.
  • Allow it to cool completely.
  • Transfer the roasted ingredients , salt into a blender. Pulse until finely powdered.
  • Add the soaked tamrind pulp and pulse to get a fine paste.
  • Heat balance oil in the same pan .
  • Add channa dal ,urad dal and mustard seeds.
  • Once it splutters add garlic cloves and slightly roast it.
  • Now add turmeric , broken dry red chilli and curry leaves. Curry leaves will become crisp.
  • Now add the tamrind mix and mix well.
  • Turn off the heat after 5 minutes.
  • Serve with piping hot rice and ghee and enjoy………….

Notes

  1. Adding sesame seeds is completely optional. You can use white sesame seeds too.
  2. Adjust the dry red chillies as per your spice tolerance.
  3. Stay good in an airtight container for a month.
  4. You can make a big batch and store it in a refrigerator.
  5. You best quality tamrind .

    This is a totally different way of making Imli Ki Chutney from the usual North Indian style. Love how you’ve used garlic for tempering. A handy chutney to have in the fridge as you are right, sometimes we get bored of the usual sabji. Going to try out this recipe as soon as I get some tamarind.

    Chinthapandu pachadi looks so yumm . The tanginess from tamarind is something I really love ,puliyogre Gojju being my all time favorite. I will definitely make this and it will be a classic hit with tempered curd rice.

    My mother in law has family in Andhra. I love it when they come as they have so many lovely recipes. One they taught me as a new bride was this tamarind pachadi. Love it anyway with hot rice and ghee.
