Today I am sharing a very easy eggless Orange Cake . You can serve with tea or perfect for your kids to snack in school. I have used fresh orange juice ,organic unprocessed Sugar and unbleached flour . This cake is so easy and quick to make. I am slowly trying to get back to baking mode .Baking is always so Therapeutic. These orange cakes are incredibly delicious.
Ingredients for Eggless Orange Cake:
Unbleached All Purpose Flour:I always use unbleached flour for baking. They are easily available here.
Raw sugar: I use raw sugar . This is unprocessed sugar and far better than refined sugar.
Thick Yogurt: I use home made thick yogurt. It is not sour.
Odourless Oil: I use Sunflower oil. You can use any odourless oil.
Baking Powder:Acts as a leavening agent.
Baking Soda: Also acts as a leavening agent.
Fresh Orange Juice: Gives a nice citrussy flavor to the cake
Vanilla Essence: This is optional but i like to add a little bit of vanilla essence to my cakes.
Salt:A pinch of salt is added to the batter
Orange Zest: Imparts a nice flavor
Recipe for Eggless Orange Cake:

1.5 Cups Unbleached All purpose Flour
1/2 Tsp Baking Soda
1 Tsp Baking Powder
3/4 Cup Raw Sugar
1/2 Cup Thick Yogurt
1/3 Cup Oil
1/2 Cup Fresh Orange Juice
Pinch Of Salt
1/2 Tsp Vanilla essence
1 Tsp Orange Zest
Few Orange Slice for Decorating the cake
Preheat the Oven at 180C for 10 minutes
Sieve the All purpose flour, baking soda , salt and baking powder twice and keep the dry ingredients in a bowl.
Whisk yogurt and sugar untill the sugar is completely dissolved.
Add oil and orange juice to the yogurt mixture and whisk well.
Slowly incorporate the dry ingredients into the wet ingredients and fold it untill the mixture is nicely incorporated. Do not over mix.
Add vanilla essence and orange zest and mix again.
Grease the baking pan . Pour the batter . Tap it twice and place the pan in the pre heated oven.
Bake for 35 mins. Check with a knife and if it comes out clean then the cake is perfectly baked.
Allow the cake to cool completely.
Place the fresh orange slices on the top of the cake.
