BAKED VEGETABLE WANTON CUPS

Today I am back with a exciting Appetizer recipe. These Baked vegetable wanton cups will be a star attraction of any party. I bet Your family and guests will crave for more. You can adjust the spice level as per your palate. My family loves a slightly spicy starters as they go very well with the drinks served. You can also serve as a after school Snack . You can add veggies or meat of your choice. A I am a vegetarian , I love to serve these with Mix vegetable stuffing . You can make these in just 25 minutes and serve. I have used ready made wanton wrappers to make the cups. If you have time you can make them at home too.

Ingredients for Baked Vegetable Wanton Cups:

  • Wanton Wrappers– You can use store bought wrappers and make them at home in case you have time.
  • Baby Potatoes–A versatile vegetable and goes well with all Spices.
  • Fresh Shiitake Mushrooms –I love to add mushrooms as my meat loving friends will not miss the meat. Mushrooms give a nice meaty texture to the filling.
  • Baby Corn–Another versatile vegetable i love to add to my appetizers.
  • Ginger Garlic Paste– Enhances the taste of the dish.
  • Onion—I love the golden brown onions in this dish.
  • Cumin/ Jeera–One of my most favourite spice to add to my indian inspired dishes.
  • Mustard Oil–You can use any oil of your choice .I love the flavor it imparts to the dish.
  • Mustard / Rai—Anotheer main ingredient for tempering.
  • Turmeric / Haldi– Lot of health benefits and i try to include this spice in my dish.
  • Kashmiri Chilli Powder– Gives a nice color to the dish .It is not spicy.
  • Curry Masala –Gives a nice taste to the dish. You can add any masala of your choice.
  • Pav Bhaji Masala—One of my most favourite masala. Blends very well with the veggies I have used.
  • Salt to taste– Main ingredient of the dish.
  • Fresh Coriander–Love the greens in my dish. Imparts a nice flavor.
  • Fresh thick yogurt– I love Yogurt dressing and this goes very well with this stuffed wanton cups.
  • Dried dill leaves– You can use fresh dill leaves if you can get them . If not dried dill leaves are fine too.
  • Red Chilli Flakes– Some spice kick to the dish.

Recipe for Baked Vegetable Wanton Cups:

Ingredients:

  • 20 Wanton Wrappers
  • 12 Boiled baby Potatoes (each cut into 4 parts)
  • 8 Fresh Shiitake Mushrooms chopped
  • 10 Baby Corn chopped
  • 1 Onion Finely Chopped
  • 1 Tsp Cumin/ Jeera
  • 2 Tsp Mustard Oil
  • 1/2 Tsp Mustard / Rai
  • 1/4 Tsp Turmeric / Haldi
  • 1/2 Tsp Kashmiri Chilli Powder
  • 1/4 Tsp Curry Masala
  • 2 Tsp Pav Bhaji Masala
  • Salt to taste
  • 1/2 Tsp Ginger Garlic Paste
  • 1 Tbsp Fresh Coriander
  • 2 Cups Fresh thick yogurt
  • 1.5 Tsp Dried dill leaves
  • 1 Tsp Red Chilli Flakes
  • Oil to grease the baking tray
  • Cherry Tomatoes for Garnish (Completely Optional)

Method:

For the Stuffing:
  • Heat a wide bottom pan. Add mustard oil. let it become hot.
  • Once the oil is very hot at jeera and rai. Let it splutter.
  • Add finely Chopped onions and ginger garlic paste. Saute for 2 -3 minutes.
  • Add cubed boiled potatoes and baby corn . Let it turn golden brown .It will take about 5 minutes.
  • Now add chopped mushrooms , chopped fresh coriander .Mix well and saute for another 3 minutes.
  • Now add turmeric, chilli powder, curry powder and pav bhaji masala.
  • Mix well and cook till the vegetables are nicely coated with the masala.
  • Turn off the heat and let it cool.
For Wanton Cups:
  • Grease the cup cake tray.
  • Gently Press the wanton wrappers into the muffin pan forming the cups.
  • Make sure there is enough opening for the filling.
  • Place them in a preheated oven at 180 C and bake for about 5 minutes untill they turn slightly brown.
  • Once done remove them from the oven.
For the Dressing:
  • In a bowl mix the thick yogurt , dried dill leaves , chilli flakes and salt.Keep it aside.
Assembling the :
  • Take a baked cup
  • Stuff the cooked vegetable mix. Garnish with the yogurt dressing and cherry tomatoes and serve.
