AMLA SOUP / GOOSEBERRY SOUP

I am back after a short break . I am slowly getting back to routine and hope to be more regular in blogging. It has been a slightly hectic for the last few days . I am so happy to be get back now. I am so eager to share a very easy immune boosting soup. Amla Soup / Gooseberry Soup is very delicious and addictive. With the addition of some minimal spices in your pantry the soup becomes even more nutritious and delicious. I love to have soups as it is so easy to make yet filling and light on tummy. I am having severe cold and cough and this soup is so soothing for the throat.

  • The soluble fiber in Amla helps the absorption of blood sugar
  • Rich in Vitamin A ,it is good for the eyes.
  • Helps to fight against free radicals
  • Rich in AntiOxidants
  • Excellent Source of Vitamin C,E,A ,Iron and Calcium

Our hostess for Oct theme is Priya Iyer who suggested Soups as the theme. She has whipped up this amazing Carrot soup with coconut milk. I am so intrigued by the color of this soup and am sure it absolutely delish. I was paired with Jayashree who is another versatile blogger. She gave me two secret ingredients Gooseberry and Coriander seeds . I gave her salt and clove. She has whipped this insanely delicious Palak Soup. My humble contribution to this theme is nutritious and delicious Amla Soup / Gooseberry Soup.

Equipment

  • 1 Blender
  • 1 Large Pot
  • 1 Ladle

Ingredients
  

  • 5 Nos Gooseberry / Amla Cut into Pieces
  • 1 Tsp Jeera / Cumin
  • 10 Nos Black Pepper Corns
  • 1/2 Tbsp Coriander Seeds
  • 1 Inch Fresh Ginger finely chopped
  • 1/4 Tsp Asafoetida / Hing
  • 1 Tsp Oil
  • 1/2 Tsp Rasam Powder
  • Salt to taste
  • 1/2 Cup Finely chopped fresh coriander leaves
  • 2.5 Cups Water

Instructions
 

  • Wash and pat dry the gooseberries.Cut them into smal pieces.
  • Heat oil in a pan . Roast jeera , coriander seeds ,asafoetida and pepper corns until slightly fragrant.
  • Now blend roasted jeera ,pepper corns ,asafoetida ,coriander seeds , chopped ginger and chopped gooseberries.
  • Now transfer this paste to a pot. Add water ,salt,turmeric and rasam powder and mix well
  • Let it simmer for about 5 minutes.
  • Garnish with fresh coriander and serve.
  • You may strain if you wish too. I did not strain the mixture as we like it that way.
  • Enjoy…………….

Notes

  1. You can substitute  star gooseberries in case you can’t find normal gooseberries.
  2. I have used home made rasam powder to give some aroma and thickness to the soup.
  3. You can add green chilli if you want it spicy. I have not added.
  4. Strain the soup before serving if you wish too. I did not strain it.

    Wow, no wonder I couldn’t guess amla as the secret ingredient. An unusual recipe and perfect to ward off colds and coughs. Got to give this tempting soup a try as amla are in season.
