Today I am sharing a very quick and delicious Raw mango / Amiya Ki chutney that is made in a very traditional way. Unripe mango is charred before it is pounded .A delicious accompaniment to serve with roti ,rice or even smear on the bread slices. Each bite can be relished with a perfect balance of sour and spicy taste. This chutney has lot of memories associated with it as it is pounded using mortar and pestle or ammikal. It tastes awesome when made traditionally.
What is Chutney?
Chutney is a condiment served in Cuisines of Indian Sub continent. hutneys may be realized in such forms as a tomato relish, a ground peanut garnish, yogurt or curd, cucumber, spicy coconut, spicy onion or mint dipping sauce.In India, chutneys can be either made alongside pickles that are matured in the sun for up to two weeks and kept up to a year or, more commonly, are freshly made from fresh ingredients .Mango Chutney is one of the popular when mangoes are in season.
Ingredients for Raw Mango / Amiya Ki Chutney:
Raw mango: Roast the mango on direct flame untill nicely charred and soft on all sides. Use unripe mango.
Garlic Bulb: Roast the whole bulb of garlic untill nicely charred. the skin will be separated easily.
Shallots: I have roasted shallots also on direct flame. It becomes soft very quickly.
Green Chilli: Add green chillies as per your spice tolerance. The quantity i added was just perfect to balance the sourness from the mango.
Fresh Coriander: Adding fresh coriander gives a nice aroma and taste to the chutney.
Cumin / Jeera: Dry roast cumin / jeera to make the chutney more flavorful.
Salt to taste: I have used Himalayan pink salt. You can use your normal salt.
Chilli Flakes: This is completely optional. It gives a nice texture to the coarsely pounded chutney.
Recipe for Raw Mango / Amiya Ki Chutney:

Ingredients for Raw Mango / Amiya Ki Chutney:
1 Unripe Mango
4 Green Chillies
1/2 Cup Finely Chopped fresh Coriander
1 Garlic Bulb
4 Shallots
1 Tsp Dry roasted Cumin / Jeera
Salt to Taste
1/2 Tsp Chilli Flakes
Method:
Roast the mango , garlic , shallots and green chillies on direct flame .
Green chillies and shallots will get roasted quickly. Once done transfer them to a plate and remove the blackened outer skin.
Mango and garlic will take about 15 minutes to be nicely charred and done. Mango will be nice and soft.
Garlic pods will easily fall out from the bulb.
Allow them to cool completely.
Remove the charred outer skin of the mango. Using a knife remove the pulp and chop.
Pound all the ingredients together in a mortal pestle to get a coarse mixture.
Roasted Ingredients add a nice smokey flavor to the chutney.
Do not add water .
Store in an airtight container and enjoy the chutney.
