There are many types of leafy green vegetables too. Markets are flooded with so many varieties of fresh vegetables and fruits. We can balance our nutrition from all these fresh vegetables.Seasonal vegetables not only tastes very fresh and tasty. It also consists of essential elements to suit our body’s requirements during this time of the year. In cold weather, our immune system needs more support to fight against any germs. - Baby Spinach: Fresh Baby Spinach is rich in nutrients like Iron and is considered the best source for potassium and magnesium. We must include Spinach regularly in our diet as it is a powerhouse of nutrition.
- Capsicum: I have used green capsicum here. Feel free to use red or yellow too.An excellent source of Vitamin A & C. My boys love capsicum.
- Split Moong Dal: Packed with nutrients and rich in Antioxidants. Adds nice taste to the fries rice. I have not cooked the dal. It is just Soaked and used.
- Fresh Red Chilli: I love to add fresh chillies to the fried rice as thet add nice punch and heat to the dish. Fresh Red chilli is rich in Vitamin C.There are very powerful antioxidants in fresh red chillies.
- Onions: I love onions in my fries rice. They are low in calories and high in vitamins ,minerals and is a powerful antioxidant.
- Garlic: Garlic is loaded with with significant amounts of vitamin C, selenium, manganese, and iron.
- Garam Masala: Imparts nice flavor and taste to the dish.
- Aachari Masala: Pickle spice blends so well with the veggies and adds a nice aroma to the dish.
- Urad Dal: I have used a small quantity for the tadka or tempering.
- Cumin /Jeera: I love to use this whole spice in most of my dishes.
- Mustard: Another main ingredient for tempering
- Asafoetida: Aids digestion and imparts nice flavor to the dish
- Salt :Main ingredient for the dish

Recipe for Spinach Capsicum Fried Rice:

Ingredients:
- 300 Gms Fresh Baby Spinach
- 3 Cups Cooked Rice
- 1 Green Capsicum
- 1/2 Cup Soaked Split Moong Dal
- 3 Fresh Green Chillies
- Salt to taste
- 2 Tsp Aachari Masala
- 1.5 Tsp Garam Masala
- 2 Big Red Onions chopped
- 3 Garlic Pods finely chopped
- Hot water to soak moong dal
- 3 Tsp Oil
- 1/4 Tsp Turmeric
Method:
- Cook Rice in a rice cooker and allow it to Cool Completely.
- Soak split moong dal for about 15 mins in hot water.
- Wash baby spinach thoroughly after you remove the roots and chop it.
- Chop Capsicum in small chunks.
- Roughly chop fresh red chillies
- Heat a wide bottom pan with oil. Add urad dal , jeera and mustard. Once it splutters add asafoetida and turmeric.
- Now add chopped garlic ,red chilli and onions.
- Once the Onions turn slightly brown add soaked split moong dal (it would have nicely swelled by now) and chopped spinach.
- Mix well and add salt , aachari masala and garam masala.
- Cover and allow it to cook for 5 minutes.
- Remove the lid and mix well and allow it to cook untill all the water from the spinach evaporates.
- Turn off the heat.
- Add cooked rice and mix well. Rice should be nicely coated with the spinach masala. Add salt if needed.
- Serve with Raita , papad or mixture as per your choice.

What a wonderful way to use fresh tender spinach in the winters! I love the addition of onions, garam masala, achaari masala and garlic here. Must have made the rice super flavourful!
A healthy and hearty rice dish with all the flavors and nutrients. I’d love to add capsicum to it but hubby doesn’t like. Often make moong dal khichdi with loads of spinach added to it.
