The weather here is wet as it is pouring most of the days. The cold nip in the air calls for some warm soup that is quick and flavorful . This soup is a complete meal for me. Thai green curry peas soup is a delicious and irresistible soup perfect to beat the cold weather.I love thai cuisine and lately I have been posting soups with thai flavors. I am sure everyone loves soup and it is perfect for the cold weather in many parts of the world. I Love winters.

Ingredients for Thai Green Curry Peas Soup :
Green Peas : You can use fresh or frozen peas. I have used fresh peas .
Red Onion : I have used a small onion that blends well with the green peas.
Garlic Cloves:It is loaded with nutrients and imparts a strong flavor to the soup.
Coconut Cream: I love to use coconut cream .You can replace it with coconut milk.
Water: To adjust the consistency of the soup
Lemon Pepper Seasoning: I love to add this seasoning. In case you do not have add juice of 1 lime and a generous pinch of black pepper.
Thai Green Curry Paste: Enhances the taste of the soup and imparts a nice flavor to the soup.
Coconut Flakes : I love to garnish this soup with coconut soup but it is completely optional.
Green Chilli: I love some spice kick in the soup. I have garnished with mildly spicy chilli.
Salt:Most important ingredient.
Fresh Coriander: I love to garnish with this flavorful Coriander
EVVO: I love to use Extra Virgin Olive Oil for soups. You may uses any odourless oil.
Recipe for Thai Green Curry Peas Soup:

Ingredients: (1Cup =250Ml)
1 Cup Fresh Peas
1/3 Cup Coconut Cream
1 Cup Water
Few Coconut Flakes for Garnish
1 Medium size Onion
2 Garlic Pods
1 Tbsp Thai Green Curry Paste
1/2 Tsp Lemon Pepper seasoning
1 Green Chilli for Garnish
1/2 Tsp Extra Virgin Olive Oil
Fresh Coriander for garnish
Heat oil in a wide bottom pan. Shallow fry onions and crushed garlic for a few minutes until soft.
Add Thai green curry paste , green peas and ,coconut cream and water.
Let is simmer for about 5 minutes and then turn off the heat.
After 3 minutes transfer all the contents to a blender , add salt and blitz until it is smooth without any lumps.
Transfer the soup to the serving bowls. Garnish with Green chillies ,Lemon Pepper seasoning ,fresh coriander and coconut flakes. You can drizzle some coconut cream if you wish .
