Today I am sharing a hearty soup recipe that is so perfect for this cold weather and also wet weather in different parts of the world. It is bursting with flavors and is very quick to make at home with simple ingredients. I love soups and have been experimenting with different flavors. I am never bored of soups as sometimes they are a complete wholesome meal . Tom Yum flavored mushroom coriander soup is insanely delicious and comforting.
What is a Soup?
Soups are basically liquid food served warm or Cold. It can be a thick or clear soup. There are many varieties of soups and varies from region to region. Some ingredients like vegetable puree , mashed lentils ,flour etc are used as thickening agents. These days canned or dried soup is commercially available. My preference is always to prepare soups with fresh ingredients at home. In some countries Cold soups are even served as desserts. When you research on soups you can find a large list with so many varieties.

Ingredients for Tom Yum Flavored Mushroom and Coriander Soup:
Mushroom: I have used big brown mushroom. You can use any mushroom of your choice.Mushrooms are rich in Vitamin B.
Coriander:Fresh coriander imparts a nice flavor and taste to the soup.It is rich in antioxidants and aids digestion.
Cherry Tomato:Rich in Vitamin A,C and E.It is rich in lycopene, which is great at fighting free radicals that cause disease.
Tom Yum Paste: You can use home made or store bought paste. It adds a nice flavor to the soup. it is also used as a marinade.Each ingredient used in this paste has numerous health benefits. I have used the vegetarian tom yam paste.
Coconut Cream: I love the coconut flavor in the soup. You can add coconut milk instead of cream.
Red Chilli: Adds some spice kick to the soup.
Salt: Most Important ingredient .
Lemon Pepper Seasoning: I am in love with this seasoning. Add a nice tangy and spicy taste to the soup.
Oil: Very little oil to saute the mushrooms and tom yum paste.
Vegetable Broth: It is very nutritious .You can use water in case you do not have vegetable broth.
Recipe for Tom Yum Flavored Mushroom and coriander Soup:

1 Tsp Oil
1.5 Tsp Tom Yum Paste
3 Big Brown Mushroom
2 Tbsp Finely Chopped Fresh Coriander
1 Fresh Red Chilli Slit into pieces
6 Red Cherry Tomatoes cut into halves
1 Tbsp Coconut Cream
1.5 Cups Vegetable Broth / Water
1/4 Tsp Lemon Pepper seasoning
Salt to taste
Wash the mushrooms nicely and remove the stalk. Chop the Stalks finely. Slice the mushroom into thick pieces. Keep them aside.
Finely Chop the fresh coriander and keep it aside
Cut the cherry tomatoes into halves
Heat a wide bottom pan. Add oil. Saute the mushroom slices for about 2 minutes.
Add tom yum paste and saute for a minute on low flame.
Now add cherry tomatoes , slit red chilli and mix well.
Add vegetable broth and allow it to simmer on low flame for about 5 minutes. All the flavors have to be absorbed by the mushrooms.
Add coconut cream and mix well. Simmer for a minute.
Turn off the heat.
Sprinkle the lemon pepper seasoning and serve hot.
