Mid term holidays have started for my Kids.The menu for this month will be planned by my kiddos and executed by me.Hmm.. i need to treat them with varieties of dishes which are tasty and healthy at the same time. I love to cook for my family and whip yummy dishes whenever i am home .We have started the School holidays on a healthy note.

Recipe for Mixed Vegetable and Cheese Pancakes:
(Makes about 10 -12 Pancakes)
1Cup =250 ML.
Ingredients:
4 Potatoes boiled and mashed (Medium Size)
4 Florets of Cauliflower grated
1 Big Onion finely chopped
1/2 Cup Spring Onions finely chopped
1/2 Cup Fresh coriander finely chopped
1/2 Cup Tapioca Flour
1 Tsp Rice Vinegar
1 Tsp dried Basil
1 Tsp Chilli Flakes
1 Tsp Cumin / Jeera
1/2 Tsp Red Chilli Powder
1/2 Cup Mozzarella cheese
Oil for shallow frying
Salt to taste
Method:
Take a wide bottom bowl. Mash the boiled Potatoes. Mix all the ingredients.Take small portion of the dough. Grease you palm and pat the dough to flatten it. Take a heavy bottom pan. Add a Tsp of oil. Place the flattened dough and flip sides until it turns golden brown.
Once done serve with Mayonnaise or sauce or green chutney.
