MINT MOJITO MOCKTAIL(WITH COCONUT PULP)

The weather is getting hot day by day. We need to keep ourselves hydrated all the time. Today i am sharing a very easy mocktail recipe .Mint Mojito with coconut pulp is absolutely delicious and can be prepared in just 5 minutes with just a few ingredients in your kitchen.This is not a fancy drink but will leave you craving for more. This is a perfect Summer drink.

What is Mojito?

Traditionally, a mojito is a cocktail that consists of five ingredients: white rum, sugar, lime juice, soda water, and mint. Its combination of sweetness, citrus, and herbaceous mint flavors is intended to complement the rum, and has made the mojito a popular summer drink . There are many mocktail mojito recipes for people who don’t take alcohol. Mint Mojito Mocktail is alcohol free refreshing drink to treat your family and friends. I am sharing a recipe with minimal ingredients given the current situation. I just love her delicious odiya recipes and i have tried a few. Recipe for Mint Mojito Moctail:

What are the Ingredients?

  • 500 ML Fresh Coconut Water
  • Juice of 1 Lemon
  • 10 Mint Leaves Crushed
  • 1 Tsp Honey
  • Few Slices of Lemon
  • Coconut Pulp
  • Some Ice Cubes

What is the method to prepare this drink?

  • Crush the fresh mint leaves and put it in the jug.
  • Add Coconut water to the jug
  • Stir in the honey
  • Add more coconut pulp
  • Stir well
  • Add slices of lemon
  • Put some ice cubes in the glass. Pour this mint mojito mocktail on the ice in the glass. Serve chilled .

CUCUMBER & CORIANDER LASSI

Summers are approaching and we need to keep ourselves hydrated. Drink lot of water which will keep your throat moist. I decided to treat my family with delicious and refreshing Cucumber and Coriander Lassi. Hmm … could not stop at one glass and they just loved it. I love spiced Lassi compared to the sweet ones. Cucumber and yogurt act as coolents and when added to lassi ,it makes it more nutritious and delicious and Roasted Cumin adds a nice flavor too. Lassi is a thick yogurt based drink which originated in Northern part of India.You have salt and sweet lassi. and Fruit puree is used to make sweet lassi. There are many variations of Lassi these days.I prefer salted lassi with some spices but like some selected sweet lassi.

Recipe for Cucumber and Coriander Lassi.

Ingredients:

  • 1 Whole Japanese Cucumber
  • 3/4 Cup Fresh Coriander chopped
  • 1/4 Cup fresh Curry leaves
  • 2 Cups Thick Yogurt
  • 1 Tsp Jeera / Cumin dry Roasted
  • 5 Pepper Corns dry Roasted
  • Salt to Taste
  • 1 Green Chilli (Optional)

Method to Prepare Lassi:

  • Wash and Chop the Japanese Cucumber.
  • In a blender add yogurt , chopped Cucumber, green chilli, coriander,curry leaves, roasted cumin ,roasted pepper and salt.
  • Now blend all the ingredients to get a smooth puree.
  • Delicious Lassi is now ready. Serve fresh or store in a refrigerator and serve chilled.
Notes:
  • Use thick yogurt
  • Using green chilli is optional
  • You can use normal cucumber if you cannot find japanese cucumber.
  • Do not add water as lassi is always thick.
  • Cucumber and yogurt keeps your body cool .

CHOCOLATE BANANA MILKSHAKE

Hello!!!!

Hope you are fine.The schools have reopened in many parts of the world. This weekend I thought of treating my boys with this delicious Chocolate Banana Milkshake. We all love Chocolates and Milk shakes are the best treat.It is a quick and delicious treat for all chocolate lovers. Calling all chocolate lovers to check this recipe and treat yourself.

There are several types of chocolate, classified according to the proportion of cocoa used in a particular formulation. I love all types of chocolate except the ones with Mint.Banana is a cheapest fruit easily available throughout the year.It is loaded with nutrients and good for health.Banana and chocolate makes a delicious combo. You can have it as a breakfast on the go.

Recipe for Chocolate Banana Milkshake:

Ingredients:

1 Ripe Banana

1/2 Tsp Hershey’s Cocoa powder

1 Tsp Choco chips

1/4 Tsp Vanilla Essence

200 Ml Milk

1/2 Tsp Honey

1 Kit Kat to Garnish

6 Cashews

2 Almonds

Whipping Cream

Method:

Put all the ingredients except Kit Kat chocolate and Whipping cream.Blend untill the mixture is smooth. Pour the mixture into a glass.Garnish with banana slices, whipping cream and kitkat or choco chips.

Feel free to garnish as per your liking and taste.

RAGI KANJI /FINGER MILLET PORRIDGE

I am just back from my India Trip. Had a wonderful time in Delhi with Colleagues and friends.Weather is getting hotter day by day.Summers are in full swing in many parts of the world.I am always looking for some healthy home made summer coolers to keep you hydrated all the time.

Today I am sharing a very simple ,easy and healthy recipe that can be had for breakfast or anytime of the day to beat the heat.It is filling and delicious.

This is my contribution for #flavorsofregionalcooking.This month we have decided to share recipes from Tamil Nadu.

Recipe for Ragi Kanji / Finger Millet Porridge:

Ingredients:

  • 3 Tbsp Ragi Flour
  • 1.5 Cup Water
  • 1.5 Cup Butter Milk
  • Salt to Taste

For seasoning:

  • 1/2 Tsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1/2 Tsp Urad Dal
  • 1/2 Tsp Channa Dal
  • 1 Red Chilli Broken into Pcs
  • A generous pinch of Hing / Asafoetida
  • 1 Sprig Fresh Curry Leaves

Method:

Mix 3/4 cup of water and Ragi flour in a pan and ensure it is lump free.Cook on medium flame until it is cooked and thickens. Mix well and ensure it does not burn.Switch off the flame and allow it to cool completely.

Take a big bowl. Add water,buttermilk,salt and whisk well.Pour it onto the Cooled ragi and whisk again to mix well.It should be lump free.

Heat a small pan with oil. Add channa dal, urad dal ,red chilli and once it turns slightly brown add mustard seeds , curry leaves and asafoetida.Pour it on to the Ragi Mixture. Serve in small earthern pots.

ICED GINGER LEMON TEA

 

Hola!!!

The weather has been hot and humid in my part of the world.I am basically a tea lover and like to have tea anytime. I am back with another wonderful recipe ICED Ginger Lemon Tea which tastes awesome and can be enjoyed anytime.

This tea keeps you refreshed with the goodness of lemon ,ginger and honey.This combination  of flavors is one of the best.

My contribution for 153rd #Foodiemonday #Bloghop  # TypesofTea is this simple Iced Ginger lemon Tea.

Recipe for Iced Ginger Lemon Tea:

Ingredients:

1/2 Litre of Water

3  Tea Bags

Handful of Mint Leaves

2 Inch Ginger crushed

4 Tsp Honey

Juice of 1/2 Lemon

Extra slices of lemon and mint to serve

Method:

Boil water in a Sauce Pan along with crushed ginger. Once the water starts to boil add the tea bags and switch off the flame. Leave the tea bags until the water is  lukewarm. Now remove the tea bags, stir in lemon juice and honey. Muddle some mint leaves and add it to the tea.You can refrigerate it until you serve.

Add some ice cubes to the chilled tea,lemon slices and mint leaves and serve!!!!!!

Enjoy the goodness of this tea at the comfort of your home!!!!!!!!!!!!!!!!!!!!

DRY FRUITS & NUTS LASSI

 

Hello!!!

Most of us are welcoming Summers in different parts of the world. With summer comes summer coolers to keep you hydrated all the time. I love king of fruits Mangoes. During my childhood i remember my mom making  different types of  fresh fruit juices , lassi and buttermilk. Hmm… everyday we would have a new menu and we as kids would be eagerly waiting to gulp down the juices / lassi /buttermilk. We must drink plain water and keep  ourselves hydrated as the scorching heat will drain you off.

My family loves different types of lassi and i treat them as per their requests.The happiness on their faces make me happy.

This week our 141st  #Foodiemonday #Bloghop theme is  #Yogurtbasedrecipe. My contribution for this theme is lip smacking Dry fruits and nuts Lassi that is sugar free too.

Recipe for Dry Fruits & Nuts Lassi:

2 Cups Thick Yogurt

1/4 cup Milk

3 Ripe Bananas peeled and  chopped

2 Tnsp Cashew Nuts chopped

2 Tbsp Almonds chopped

1 Tbsp Sunflower seeds

1 Tbsp Pumpkin seeds

1 Tbsp Raisins

5 Dried Apricots

5 Walnuts

3 Tbsp Honey

8 Ice Cubes

Method:

Take a blender.Grind all the dry fruits and nuts  .Some coarse pieces  of dry fruits are  fine. Add ice cubes , yogurt , banana ,milk and honey and blend well. Serve chilled in tall glasses and hydrate yourself.

ICED CHOCOLATE COFFEE

I am back after a short break.Today i am here with another popular beverage Iced Cold Coffee. Coffee is one of the most popular drinks in the world.It can be prepared and presented in a variety of ways (e.g., espressoFrench presscafé latte, etc.). It is usually served hot, although iced coffee is a popular alternative these days. Filter coffee is a quintessential beverage in ant typical SouthIndian household. I love the aroma of fresh Filter Coffee and love  to have it . Although i am not a coffee person i love first dose of fresh filter coffee and Iced chocolate coffee.

My contribution for 140th #Foodiemonday #Bloghop theme # Coffee is Iced Chocolate Coffee. It is so tempting and perfect for this hot weather that will leave you craving for more. .It is so easy to make .

Recipe for Iced Chocolate Coffee (1 Serving):

2 Tsp Nescafe Coffee Powder

1 Tsp Cocoa Powder

3/4 Cup fresh milk

2.5 Tsp Sugar

8 Ice Cubes

Whipping Cream

2 Tsp Choco Chips

Few granules of Coffee Powder for Garnish

Method:

Take  a blender. Throw in coffee powder,cocoa powder,  1tsp choco chip, milk and ice cubes. Blend well until all ingredients are mixed well.

Pout it in a jar / mug. Add whipping cream on the top. Garnish with choco chips and coffee granules and serve chilled.

Recipe for Juicy Mint Mocktail:

Ingredients:

2 Portions Orange Juice

1 Portion Red Guava Juice

2 Portions Ginger Ale

Handful of mint leaves finely copped or crushed

Ice Cubes as per your requirement

Method:

Mix orange juice, guava juice and ginger ale. Add chopped fresh mint leaves and ice cubes. Serve Chilled.

Enjoy and treat your guests with this wonderful mocktail.

ROSE AND ORANGE INFUSED WATER

Hello!!!!!

Infused water is the latest craze worldwide. This is the best way to drink more water and avoid frizzy drinks .This will help you to keep the unwanted sugar at bay and at the same time the body will be hydrated. There are many types of infused water.Today i am sharing an interesting recipe  of Rose and Orange infused water that is so refreshing with  the goodness of rose petals and citrus.If you don’t drink enough water, dehydration kicks in and you start feeling tired, achy, crampy, and constipated. Your skin starts to show it, and it only gets worse from there.Drinking more water helps you feel fuller and addresses the false hunger that dehydration can cause. Just that one healthier habit can lead to healthier body mass.

I am feeling unwell this weekend .This infused water really uplifted my spirits and left me feeling so refreshed and hydrated.

Perfect for this Valentine to keep you  hydrated and feel refreshed.

Recipe for Rose and Orange infused water:

3 Navel Oranges sliced

Fresh Petals of 2 Roses( Pesticide free roses)

800 ML Filtered water

1.5 Tbsp Rose water

Lots of Ice

1 Tsp dried rose petals (optional)

Method:

Fill the pitcher /jug with water. Slice the oranges .Add ice and sliced oranges.Now add rose water and stir well. Add the rose petals .Mix well. Sprinkle dried rose petals (optional).

Let it sit for sometime and then serve.

Enjoy this drink and feel refreshed!!!!!!!!!!!

Watermelon Yogurt Smoothie

Summers are in full swing these days. Healthy and hydrating coolers are always on my mind.Watermelons are found everywhere during summers.The best natural cooler.They  are tropical or subtropical plants and need temperatures higher than about 25 °C to thrive.Watermelon pulp contains carotenoids, including lycopene.The amino acid citrulline is produced in watermelon rind.I managed to get seedless watermelon here.The pulp is deep red in colour and tastes sweet too. They are used in Juices, Shakes ,Smoothies, Salads, Curry and pickles to name a few.

For the #88th #Foodiemonday #Bloghop Theme #Watermelon my contribution is this easy and yummy Watermelon yogurt Smoothie with no added sugars.

Recipe for Watermelon Yogurt Smoothie :

2 Cups of Watermelon pieces

1 Cup Greek Yogurt

4 Tbsp Honey

Ice Cubes (Optional)

Method:

Blend the watermelon pcs and 3/4 Cup yogurt till you get a lump free smooth texture. Refrigerate this mixture for about an hour. Blend this chilled mixture with balance greek yogurt and honey .Serve Chilled Watermelon Yogurt Smoothie. Adding ice is optional.
