CAPSICUM MIXED DAL VADA

It is pouring in this part of the world. The cool weather calls for something fried with garam masala chai. My family was craving for something fried and then I decided to treat them with this crisp on the outside and soft inside Capsicum Mixed Dal Vada. Served it with piping hot sambar and enjoyed it.

Mixed Dal :

I have used a mix of Urad dal and Green gram . An amazing combo for the vada. You can use a mixed variety of dals to make vada. These protein rich vadas can be baked or made in appe pan too. Sometimes it is good to treat ourselves with homemade fried stuff. Sunday was well spent with my family.

Ingredients for Capsicum Mixed Dal Vada:

  • Urad Dal: Use whole urad dal for best results.Wash thoroughly and then soak.
  • Green Gram:Green gram is packed with healthy nutrients . Give a nice green color to the batter and tastes awesome when added with urad dal.
  • Green Chillies: I have used mildly spicy fresh green chillies. You can increase or decrease as per your spice tolerance.
  • Black Pepper: I soaked black pepper with the dal as my boys like it that way. You may add coarse pepper powder to the batter instead.
  • Fresh Coriander: I love to add greens to my vada mix. You can grind it or add to batter as per your choice.
  • Curry Leaves: I always grind the curry leaves and garnish with fried crisp curry leaves when serving. You can finely chop it and add to batter instead.
  • Capsicum: Green Capsicum adds a nice taste and crunch to the vadas. You can add coloured bell peppers or any other veggies of your choice.
  • Onions : Onions enhance the taste of the vada. I skip onions only on festive occasions.
  • Ginger: Another major ingredient in vada. I like the tiny bits of ginger when i take a bite. You may grind it if you wish to.
  • Asafoetida: This is to add some flavor to the vada. Good for tummy too. You may skip it if you want to make it vegan.
  • Salt: I have used Himalayan pink salt. You can use your normal salt.

  • Total Time : 4 Hours 50 mins
  • Course : Starter / Snack
  • Cuisine : Indian

Equipment Used:

  • Wok for frying
  • Mixing Bowl
  • Blender
  • Slotted Spoon for frying
  • Spatula for mixing the batter

Ingredients for Mixed Dal Vada:

  • 2 Cups Urad Dal
  • 1 Cup Green Gram
  • 9 Green Chillies
  • 1 Tsp Black Pepper
  • 1 Tbsp Fresh Coriander
  • Handful of Curry Leaves
  • 1 Capsicum finely chopped
  • 1/4 Tsp Asafoetida
  • 3 Onions Finely Chopped
  • 1″ Ginger Finely Chopped
  • Salt

Method:

  • Wash Urad dal and green gram .
  • Soak urad dal , green gram and black pepper in enough water for 4 hours.
  • Drain the water .
  • Blend soaked dals , black pepper , green chillies , fresh coriander and curry leaves to a smooth paste. Do not add water while grinding .
  • To this batter add finely chopped capsicum , onions and ginger and mix well.
  • Add salt to taste.
  • Heat oil in a wok for deep frying.
  • Once the oil is hot deep fry small portions of batter shaped as roundels or like a doughnut. As per your choice.
  • If you find it difficult to shape the vada then just drop spoonfuls of the batter directly in the oil.
  • Once the vada are slightly golden then gently turn over with a slotted spoon and continue to fry.
  • Fry the vadas till crisp and golden. The oil should be not very hot, but medium hot as we want the vadas to be cooked from inside.
  • Once the vadas are golden brown remove them with a slotted spoon and drain the excess oil.
  • Repeat the process for the remaining batter.
  • Serve with Sambar and Enjoy…………………….

Notes:

  • Very hot oil will quickly brown the vadas from outside but they will remain uncooked from inside. Less hot oil will make the vada to absorb too much oil. Even if the batter is thin then also the vada will absorb too much oil.
  • Shape the vada as per your convenience.
  • You can add Jeera and coconut pieces too.
  • Serve with Chutney or Sambar.
  • Best when eaten hot.
  • I usually grind black pepper and chillies as my boys like it that way. You can add coarse pepper powder and finely chopped chillies to the batter.
