Today I am sharing a very quick and delicious recipe . Lemon Puffed Rice / Mandakki chitranna is a filling and nutritious dish. It can be eaten for breakfast or lunch. It comes in handy to satisfy your hunger pangs in the evening and is also a great lunch box idea.
What is Puffed Rice?
Puffed rice refers to various foods made by introducing air into rice, typically in such a way that the grains of rice become larger and lighter, while also reducing moisture to achieve a crisp texture consistency .There are many recipes using muri or puffed rice or mandakki. It has a different name in every language. My family is used to light snack murmura served with coffee or tea.

Recipe for Lemon Puffed Rice / Mandakki Chitranna:
Ingredients:
2 Cups Puffed Rice
1 Tsp Urad Dal
2 Tsp Oil
1 Tsp Channa Dal
1/2 Tsp Mustard Seeds
1/4 Tsp Asafoetida
2 Green Chillies Finely Chopped
1 Onion (Big) Finely chopped
1/4 Tsp Turmeric
1/2 Tsp Jeera
1 Big Potato finely Chopped
Salt to Taste
1″ Ginger Finely Chopped
1/2 Tsp Red Chilli Powder
Juice of 1 Lemon
Finely Chopped fresh Coriander
Method:
Wash the puffed rice and soak in water for about 5 to 7 mins.
Squeeze the water fully and transfer it to a bowl.
Heat a wide bottom pan. Add oil.
Shallow fry urad dal , channa dal, jeera and mustard.
As the mustard splutters add finely chopped onion, green chilli and ginger.
Once the onion turn slightly golden add the chopped potatoes.
Now add haldi,chilli powder , asafoetida and mix well.
Once the potatoes are well cooked add squeezed puff rice and mix.
Add salt and Mix again. Switch off the flame.
Add lemon juice ,mix ,garnish with coriander leaves and serve.
We love lemon rice so I guess we will love this lemon flavored puffed rice aswell. Meanwhile this is a new recipe to me and the addition of onions and potatoes in this dish sounds interesting !
We often make murmura upma at home, but this is so very different! Your lemon-flavoured mandakki chitranna sounds so tangy and lovely. That plate looks so inviting, I’m tempted to dig in right away!
A completely new recipe for me. Never used soaked puffed rice. Sounds so spicy and delicious. Perfect for breakfast or tea time snack. I would love to try it sometime.
I’ve never used wet puff rice to make a dish.. mandakki chitranna looks very delicious. I usually dry roast puffed rice to make a snack. However, your preparation is tempting me try this recipe out.

been ages since I made mandakki chitranna. Whenever I get kadlepuri, I only make the masala murmura snack (khara kadlepuri) for snacking.. this is so good, preethi. vibrant and inviting!

Looks good the lemon puffed rice, love the dish, never heard about this.
We love to munch on puffed rice for snacking.. never tried to cook it.. this sounds so flavourful and yumm with all the spices and citrus lemons.
