Today I am sharing a unique and delicious recipe Glass noodles and Veggie fritters. It is so finger licking good and addictive. These words were from my boys after they tasted it. It is very quick and easy to make with easily available pantry staples. Sneak in the veggies that your kids and adults in your family do not like to eat. This is shallow fried . You can make it with left over noodles or freshly cooked noodles .Serve it for snacks with some hot beverage and I bet your family will love it. Try it to believe it .
Ingredients for Glass Noodles and Veggie Fritters:
This is a quick and easy recipe using leftover cooked glass noodles. This recipe is a harmonious marriage of flavors and textures, marrying the lightness of glass noodles with the savory satisfaction of crispy fritters. Perfect for any occasion, whether it’s a casual dinner with friends or a special family gathering, this dish is sure to impress. I have used some veggies that I had at home. It is incredibly delicious and addictive. Some of the basic ingredients used :
- 1. Dosa Batter : I had some dosa batter and used it as a base to make these fritters.
- 2. Glass Noodles : I have used glass noodles here instead of regular noodles. I love the transparent glass noodles that is so easy to cook
- and relish.
- 3. Green Bell Pepper: I love green bell peppers. They are a great source of Vitamin C and B6. They are low in calories and high in fiber.
- 4.Potato : I have used grated raw potato here. You can use boiled potato as well.
- 5.Onion : I have used finely chopped red onions here. They enhance the taste of the fritters.
- 6. Green Chili: I have used mildly spice fresh green chili for a little spice kick.
- 7.Fresh Coriander: The aroma of the fresh coriander is so intriguing.
- 8. Fresh Curry leaves: Another aromatic ingredient that is not to be skipped. Curry leaves are rich in Antioxidants and has many nutritional properties. It is good for hair and skin.
- 9.Red Chili Powder: I have used Kashmiri dry red chili powder here. It give a nice color to the fritters.
- 10.Whole Cumin: Another important ingredient that is not to be skipped. It has Antioxidants and anti-inflammatory properties.
- 11. Coarse Black pepper Powder: I have used freshly ground coarse black pepper as it give a nice aroma and little spice kick in every bite.
- 12. Fresh Ginger : Finely grated ginger is used . It is good for digestion.
- 13. Oil for shallow Frying – Use any odorless neutral oil for shallow frying . I have used Sunflower oil here.

We had to think out of the box and cook for this theme. It is an amazing theme. She suggested two ingredients glass noodles and bell pepper and i suggested Sweet Potato and ginger . She whipped up this incredibly delicious Semiya Upma Cutlet and I made these Glass noodles and Veggie fritters.
GLASS NOODLES AND VEGGIE FRITTERS
Equipment
- 1 Mixing Bowl
- 1 Pan
- 1 Ladle
- 1 Vegetable grater
- 1 Spatula
Ingredients
- 2 Cups Dosa Batter (250 ml cup)
- 1/2 Cup Cooked Glass Noodles
- 1 No Finely chopped Green Bell Pepper
- 1 No Big Potato washed ,peeled and grated
- 1 No Large red onion finely chopped
- 2 Nos Fresh Green Chili finely chopped
- 2 Tbsp Finely chopped fresh coriander
- 2 Sprigs Curry leaves roughly chopped
- 1/2 Tsp Kashmiri Red Chili Powder
- 1 Tsp Whole Cumin / Jeera
- 1/2 Tsp Freshly ground coarse black pepper
- 1 Cup Oil for shallow frying
- 1 Inch Finely grated Fresh ginger
Instructions
- Soak the glass noodles in hot water according to package instructions until they are soft. Drain and set aside.
- In a mixing bowl combine Dosa batter , cooked glass noodles , chopped bell pepper , grated potato , chopped onion, green chillies , chopped coriander and curry leaves , kashmiri red chili powder, cumin , coarse black pepper and grated ginger. Mix well.
- Heat oil in a Pan .Take a spoonful of this mix batter and pour it onto hot oil. Let it turn golden brown on both sides. Once it is cooked transfer the fritters to a plate lined with paper towels to drain any excess oil. Depending on the size of the pan you can make 3-4 fritters at a time.
- Repeat the process for the balance batter.
- Serve hot with any green chutney or Sauce. I served it with home made Tamrind Tokku. It was incredibly delicious and addictive.
