Some days are very hot or some days it is raining heavily in our part of the world.Today I am sharing a easy recipe which can be ready in just 10 minutes. Curd Rice with Mandakki / Puffed Rice is a a perfect summer recipe to beat the heat. We do not need any prior cooking just tempering. I can bet you will simply love it. Perfect for lunch box too.
What is Puffed Rice?
A puffed grain is made from Rice .It is commonly consumed in many parts of Asia. There are many amazing recipes made using puffed rice.It is known by various names in different parts of India.It is usually serve as snacks , sweets or for breakfast and lunch. It is loaded with fiber and aids digestion. It is high in calories. But is known to be good for bone health , skin and boosting immunity. Anything eaten in moderation is ok.

Ingredients for Curd Rice with Mandakki / Puffed Rice:
Puffed rice / Mandakki : Used Puffed rice when you don’t want to make something quick and easy . This recipe is a summer cooler and good for health when eaten in moderation.
Japanese Cucumber: Makes the curd rice more refreshing and adds some crunch to the curd rice. You can use any kind of cucumber.
Green Chilli: I have just added one green chilli for some mild spice.
Curry Leaves: Curry leaves aids digestion and adds flavor to the dish.
Coriander : I love to add fresh coriander to curd rice.
Thick Curd :I have used home made thick creamy curd. The curd i have used is not sour.
Cashews : Add cashews to the tempering to make the curd rice more rich and delicious.
Split Urad dal : I have used this for tempering. I love the crunch split urad dal in the curd rice.
Mustard Seeds : Another main ingredient for tempering the curd rice.It is good for metabolism and aids digestion.
Red Dry Chilli : Add it to the tempering and it makes the dish look more appetizing.
Salt: Main ingredient of the dish.
Recipe for Curd Rice with Mandakki / Puffed Rice:

Ingredients for Curd Rice with Mandakki / Puffed Rice:
2 Cups Puffed Rice
Salt to Taste
1 Japanese Cucumber finely Chopped
4 Curry leaves finely Chopped
1 Tbsp finely chopped fresh Coriander
For Tempering:
1 Tsp Split Urad dal
1/2 Tsp Mustard seeds
1 Dry Red Chilli
6 Cashews
1 Tsp Oil
4 Curry Leaves
Method:
Wash and soak the puffed rice in water for about 7 minutes.
In the meantime finely chop the cucumber , chilli,fresh coriander and curry leaves.
In a wide bottom add the squeezed puffed rice , chopped cucumber , green chilli, coriander ,thick curd and curry leaves and mix well.
Heat oil in a small pan . Add cashews, split urad dal , dry red chilli, curry leaves and mustard seeds.
Pour the tempering on the puffed rice and curd mixture. Add salt and mix well.
A very interesting recipe! Love how you have used puffed rice here instead of the regular rice. Lovely variation to curd rice. Also that tempering on top looks so very good!

Curd rice with anything would be always welcome. This looks so tempting with that tempering on the top which makes it so crunchy.
