This Diwali I am celebrating Diwali with my family and friends in India after a long Gap.
Presenting Carrot Kesar Malai Burfi!!
Recipe for Carrot Kesar Malai Burfi:
400 Gms Mawa or Khoya
2 Tsp Ghee
200 Gms Milkmaid(1/2 tin)
2 Tbsp Carrot Puree
Few Strands of Saffron soaked in 2 Tsp Milk
1/2 Tsp Cardamom Powder
Few Cashews to garnish
Mash the Mawa/ Khoya with hand and ensure there are no lumps.
Heat a heavy bottom Pan. Add Ghee. Add Mawa , Milkmaid and mix well for 5 mins. Add carrot Puree and saffron soaked milk.Mix all the ingredients well for 15 mins on low flame. Sprinkle the cardamom powder and mix well.
Grease a small plate with ghee generously.Transfer the Mawa mixture on to the greased plate. Refrigerate for an hour. Cut into desired shape. Garnish with Cashews and Saffron and serve.
