LEFTOVER ROTI TACOS (FUSION)

Today I am back with a leftover makeover fusion recipe that you will all love. We all have leftovers at home most of the times and have to think of creative ways to present them again to our family. This is one such awesome recipe that is not to be missed. Leftover Roti Tacos (Fusion) is perfect for snacks and kids and adults will enjoy at any time. The recipe uses very simple ingredients mostly available in our pantry.Treat your family with these delicious Tacos and I bet it will leave them craving for more. Using Raw Mango chutney is a fab idea.I will also share some suggestions and substitutes in my notes below. Do check it out.

Basic Ingredients for Leftover Roti Tacos Recipe:

  • Leftovr Rotis
  • Raw Mango Chuntney
  • Onions
  • Green Bell Pepper
  • Harissa Spice

Leftover Food at home:

We are taught not to waste food since birth. There is food shortage in many parts of the world and do keep them in mind , then you will never waste food. Wasting food is a sin. The are so many of our fellow being on this planet who are deprived of basic amenities including food and shelter.We always have some leftover food on some days as you cannot cook exact quantity everyday. LEFTOVER ROTI TACOS (FUSION )

Leftover Roti Tacos (Fusion) is an amazing idea to serve your left over Roti or Flat bread.This is a Fusion recipe and I bet it is insanely delicious.

Equipment

  • 1 Pan
  • 1 Girdle
  • 1 Spatula
  • 1 Chopping Board and Knife

Ingredients
  

  • 1 No Large Red Onion Chopped lengthwise
  • 1 No Green Bell Pepper Cut into long thin strips
  • 2 Tsp Raw Mango Chutney
  • 4 No Tofu Puffs cut into small pieces
  • 3 Tsp Oil
  • 1/4 Tsp Harissa Spice
  • Salt to taste

For Raw Mango Chutney

  • 1 No Raw mango chopped into pieces
  • 1 Cup Fresh Coriander Leaves
  • 3 Nos Fresh Green Chilli
  • 1/2 Tsp Cumin / Jeera
  • 1/4 Tsp Channa dal
  • 1/4 Tsp Urad dal
  • 1/2 Tsp Mustard Seeds
  • 5 Nos Curry Leaves
  • Salt to taste
  • 1 Tsp Kashmiri Red Chilli Powder
  • 1 Tbsp Oil
  • 1/4 Tsp Asafoetida

Instructions
 

For Raw Mango Chutney

  • Grind the Raw mango , jeera, green chilli ,salt and fresh coriander to a fine paste.
  • Heat oil in a pan . Add channa dal , Urad dal , curry leaves. Once it turns slightly golden brown add mustard seeds , asafoetida and red chilli powder . Mix well.
  • Add the mango paste and mix well for a minute or two. Turn off the heat.
  • Allow it to cool and store in an Airtight container. Always use a dry Spoon.I always make it in advance and store it.

For the Tacos

  • In a pan add a tsp of oil. Saute the chopped onions and capsicum on high heat for about 5 mins. Add harissa spice and salt and mix well . Turn off the heat after 2 minutes.
  • Transfer the contents to a bowl. In a the same pan add the chopped tofu puffs and roast for a minute or two until crisp.
  • Turn off the heat.
  • Place the leftover roti on a plate. Spread 1/4 th Tsp of Raw mango chutney on one half the Roti. On top of that add the onion and capsicum mix and crisp tofu puffs.
  • Fold it.Place it on the hot gridle until both the sides are nice golden brown and crisp.
  • Repeat the process for the remaining rotis.
  • Just serve and enjoy as it is. You don't need any Sauce or chuntey to go with it.
  • Best enjoyed hot.

Notes

  1. You can use red and yellow peppers too. I did not have them so have not used it.
  2. In case you do not have Harissa spice you can add our very own Garam Masala (same quantity) or even a mix of Tandoori masala and subzi masala. 
  3. You can use fresh roti in case you do not have leftovers.
  4. You can add chilli sauce and cheese in case you do not have mango chutney . I would suugest you try with mango chutney before the season ends.
  5. You can even use pickle spice or leftover pickle masala.
  6. You can add paneer instead of tofu puffs too.
  7. Substitutes are endless.
