Today Preethicuisine completes 6 years. It has been a wonderful learning journey till date. Juggling home, office commitments and blogging is not easy. I am sure many can relate to this. Blogging helps me to keep my passion alive as i record my experiments in kitchen. My recipes are usually unique . I would like to thank all my readers and followers who have been constantly supporting and encouraging me.I hope to see your continued support . I would like to thank my family without whom I could not have managed all these. Sharing a quick and easy Coriander with Blistered Tomato Raita recipe to celebrate this ocassion.
What is Raita?
Raita is a delicious accompaniment with yogurt from South Asian Cuisine. It can me made with raw or cooked vegetables. You can serve it with pulao ,biryani or fried rice. I would like to have it as a meal as it is so refreshing and nutritious.There are many varieties of Raita. This can be served as an accompaniment or as a dip too. A very Versatile recipe.
Ingredients for Coriander with Blistered Tomato Raita:
Thick Yogurt : Yogurt is rich on protein and probiotics.Has cooling properties and rich in nutrients.
Cherry Tomatoes : These are rich in Vitamin A , C ,E and Potassium.Good for skin health.
Fresh Coriander: It is rich in Immune boosting antioxidants.Aids digestion and good for heart and brain.
Cumin Powder: Makes the raita more flavorful. Has anti oxidants properties and many health benefits.
Salt: Main Ingredient of the dish.
Coarsely Pounded red Pepper Corns: Helps in Nutrient Absorption.
1 Red Chilli: This is completely optional . I like to add a chilli to raita.
Recipe for Coriander with Blistered Tomato Raita:

Ingredients for Coriander With Blistered Tomato Raita:
1 Cup Thick Yogurt
1.5 Tbsp Finely Chopped Fresh Coriander
1/2 Tsp Cumin Powder
1/4 Tsp Coarsely crushed Red Pepper Corns
Salt to Taste
10 Cheery Tomatoes
2 Tsp Olive Oil
1 Red Chilli roughly Chopped
Method:
In baking dish place the cherry tomatoes and drizzle some olive oil. Put it in the pre heated oven for about 15 mins at 190C .
Once you see the blisters on the tomatoes and hear the sizzling sound turn off the oven
In a wide bowl mix yogurt, salt , chopped coriander , cumin powder, chopped red chilli, coarsely pounded red pepper.
Transfer this mixture to a serving bowl. Garnish with blistered tomatoes and the juice .
Serve and Enjoy…………
Notes:
Use fresh thick yogurt. You can use greek yogurt or home made thick yogurt.
Fresh Cherry tomatoes tastes best.
Add lemon zest if you like.
Skip red chilli if you don’t want some spice kick.
