I love no cook desserts to treat myself especially during summers. I try to whip up delicious yet quick recipes to beat the heat. Mango chia Mousse ( Dessert) is one such classic dessert.
What is a No Cook Recipe?
Any dish whipped with ingredients that involves no cooking is a no cook recipe. Just whip and serve. These range from healthy Salads to grain bowls to desserts. It can be healthy and quick to make without compromising on the taste. Ripe Mangoes: Mangoes contain high level of vitamin C, fibre and pectin making it a perfect fruit that helps in controlling high cholesterol level. Pitted Medjool dates: Rich source of Anti Oxidants and is a ntural sweetner. Raw Cashews: Give a nice creamy rich texture to the Mousse. Great Vegan Alternative.It is low in sugar and rich in fiber. Vanilla Ice cream: You can use full cream and vanilla essence in case you do not have ice cream. Gives a nice texture to the mousse. Saffron Strands: Used to garnish and gives a nice rich look. It is rich in Anti Oxidants. Red Glazed Cherry: Completely Optional for garnish. You can substitute with tutti frutti or nuts . Chia Seeds:Rich in Fiber and has minerals and Anti Oxidants. 2 Ripe Mangoes (peeled and Cut into Pcs) 5 Medjool Dates (Pitted) 10 Cashews ( 7 for grinding and 3 for garnish) 2 Scoops Vanilla Ice cream 1/4 Cup Milk 1 Tbsp Chia Seeds Few Saffron Strands Few Red Glazed Cherries for Garnish Method:
Wash the mango ,peel and chop them into pieces. Finely Chop the cashews and pitted dates.Keep some chopped cashews aside for garnish. In a blender add the mango pulp , finely chopped dates and cashews , milk and ice cream. Blend to a fine creamy paste. Divide the Mango mousse into two equal parts . Add chia seeds to one part ,mix and let it sit for 30 minutes. Take the serving bowls . Add plain mango mousse .On top add the chia seeds soaked mango mousse. Garnish with saffron strands , glazed cherries and chopped cashews. Serve Chilled and Enjoy…………………….

Preethi, Mango Chia Mousse looks so tempting. Perfect summer time dessert. Like the idea of using ice cream instead of cream. Ground cashew nuts adds to the creaminess of the mousse.
