Today I am here with a very delicious and quick recipe .The idea is to include garlic and vegetables in our diet. You just need 20 mins to whip this . Perfect for busy week nights . It is very flavorful and delicious. Garlic Roasted Mixed Vegetables is a delightful side dish .A flavorful dish with minimal spices is my go to on busy weeknights. This is good for people who want to have Anti -Inflammatory diet. You will believe it if you try it.

Fresh Garlic:

GARLIC ROASTED MIXED VEGETABLES

Equipment

  • 1 Pan
  • 1 Spatula

Ingredients
  

  • 2 Tbsp Finely Chopped Fresh Garlic
  • 120 Grams Snow Peas
  • 150 Grams Baby Asparagus
  • 200 Grams Small red Cherry Tomatoes
  • 1 Tsp Coarsely Ground Black Pepper
  • Salt to Taste
  • 2 Tsp Olive Oil

Instructions
 

  • Heat oil in a pan .
  • Add finely chopped fresh garlic and roast until it turns golden brown .
  • Now add snow peas and baby asparagus and saute for 5-7 minutes.
  • Once done add the cherry tomatoes and saute until it turns soft . Sprinkle salt and black pepper powder and mix well.
  • Turn off the heat.
  • Serve with Main course or as a complete light meal in itself and Enjoy…………….

Notes

1.I have used organic Cherry Tomatoes , baby asparagus and snow peas .
2.You can use normal variety in case you can’t find organic.
3. Always use freshly ground black pepper that is slightly coarse.
4.You should enjoy the pepper in every bite
5. It is very Flavorful and delicious. Always use Olive oil.
6. This is perfect for people following Anti-Inflammatory diet.
