BAKED MIX VEGETABLE BITES

Today I am back with a delicious non fried recipe that is served as snacks or can be packed for school tiffin box . It is a delicious bake. So go ahead and gorge on guilt free. I always prefer to have non fried snacks . Fried snacks are also equally enjoyed at home as it is served only once in a while. These baked mix vegetable bites is approved by family. A great relief for any mom.. right ? I served these bites with green chutney and chai. You are free to serve with any chutney or dip of your choice.

Ingredients for Baked Mix Vegetable Bites:

  • Chickpea Flour / Besan / Gram Flour: It is Gluten free flour . Great Alternative for wheat flour. Widely used in Indian cooking.
  • Potatoes: It is a versatile vegetable and is rich in antioxidants. It is a powerhouse of Nutrients.
  • Green Bell Pepper:I love Bell Peppers. I have used green bell pepper here. You can use any color bell pepper. An excellent source of Vitamin A, C and Potassium.Bell Peppers also contain a healthy dose of fiber, folate, and iron. 
  • Cauliflower: This vegetable is a power house of nutrients.Rich in fiber and a good source of antioxidants.
  • Aachari Masala: Gives a nice flavor and taste to the dish.
  • Ajwain / Carom Seeds:Carom seeds have powerful antibacterial and antifungal properties. It aids digestion.
  • Jeera / Cumin: Adds a nice crunch and flavor to the dish
  • Salt:Main Ingredient of the dish.
  • Asafoetida: Adds a nice flavor and aids digestion.
  • Fresh Coriander : I love to add greens to my dish. Imparts a nice flavor and taste.
  • Onion: These are a powerhouse of nutrients. I love to add onions to this dish.
  • Extra Virgin Olive Oil: It has anti inflammatory properties and many other benefits when used rightly.
  • Water: Helps to bind all the ingredients together.

Recipe for Baked Mix Vegetable Bites:

Ingredients:

  • 1 Cup Chickpea Flour / Besan
  • 3 Medium Size potatoes boiled and grated
  • 1 Green Bell Pepper Finely Chopped
  • 2 Medium Size Onions finely chopped
  • 6 Cauliflower florets grated
  • 1 Tsp Aachari masala
  • 1/2 Tsp Jeera / Cumin
  • 1 Tsp Ajwain / Carom Seeds
  • Salt to taste
  • 2 Tbsp chopped fresh Coriander
  • 1 Tbsp Evvo (plus extra for brushing )
  • 1/4 Cup Water ( Add more or less as required)

Method:

  • Pressure cook potatoes upto 2 whistles. Soak cauliflower florets in hot water with salt for about 10 minutes.
  • Take a wide bottom bowl.
  • Add besan , grated boiled potatoes , grated cauliflower, finely chopped onions, green bell pepper and chopped fresh coriander.
  • Mix all the ingredients with clean hands as the bell pepper and onions will release moisture.
  • Add 1/2 tbsp EVVO , jeera , ajwain , salt and aachari masala.
  • Mix all the ingredients and add water slowly to make a thick paste.
  • Pre heat the oven at 180C for about 10 minutes.
  • Spread the parchment paper on the baking tray. Take a spoonful of mixture and spread it evenly about 1/2 ” thickness. Repeat the process for the balance mixture.
  • Place the tray in the middle rack of the oven and bake for 20 minutes.
  • Flip the sides and brush with little oil on the top. Bake it for another 20 minutes or until the top is nice and crisp.
  • Allow it to sit in the oven for about 5 minutes.
  • Remove and serve crispy Baked Mix Vegetable bites with green chutney or any dip or chutney of your choice.

Notes:

  • Add water to the flour and veggie mix in small quantity .You may need very less water if the veggies release a lot of moisture. Adjust water accordingly
  • It should be a thick paste and not watery.
  • You are free to use veggies of your choice.
  • I have prepared these to suit the palate of my family.
  • Oven temperature varies from Oven to Oven . You some will need less time to bake and some might take longer. You know your oven well. So adjust the baking time accordingly.
