Karela Stuff / Bitter Gourd Stuff

Bitter Gourd is disliked by many because of it’s bitter taste. It is Widely used in Chinese , Japanese and Indian cuisine due to its medicinal values.

There are many ways to cook bitter gourd. I love Bitter gourd stuff . I will share this spicy and tangy bitter gourd stuff recipe and it is not bitter too.

It is very easy and tastes Yummy . A person who dislikes Karela will also fall in love with this dish.

Recipe for Bitter Gour Stuff:

Ingredients:

3 Karelas /Bitter gourd( Long green ones)

1 Tsp Haldi / Turmeric

1/2 Tsp Salt

1 Tsp Red Chilli Powder

Juice of 1 lemon

3 Medium Size onions chopped

1″ Ginger chopped

6 Garlic pods chopped

2 Red Tomatoes chopped

1 Tsp Kali Mirch /Pepper corns

1 Tsp  Dhania powder/ Coriander Powder

2Tsp Jeera Powder / Cumin Powder

1/2 Tsp Garam Masala

1/2 Tsp Chaat Masala

3 Dry Red Chillies

8 Cashews

Salt to taste

Method:

Cut each  Karelas or Bitter gourd into 4 parts. Scoop the  seeds but ensure there is a thin layer at the bottom so that we can stuff the masala. Mix 1/2 Tsp salt, lime juice  and Haldi / Turmeric and keep it aside for 45 mins. Throw the water later.

Heat 1/2 tsp of oil. Add  Kali mirch / pepper corns . Add Chopped Garlic  and Ginger. Roast for 1 min. Add the chopped onions and roast well till they turn brown.Add Cashews, red Chilli, Chilli powder, Garam masala, Jeera powder, Dhania powder and chaat masala. Mix well and roast well for 5 mins. Add the chopped tomatoes. Mix well and keep it on low flame till the tomatoes turn mushy and blends well with the masala.

Switch off the flame and allow it to cool.

Once the masala has cooled, blend well to a fine paste in a blender. Add salt to taste. Blend the mixture once again.

Stuff the Karelas with this masala generously. Bake in an oven at 180 C for 30 mins.

Once done heat a tsp of oil in a wok. Add the baked stuffed Karela . Add the extra masala.Roast on medium flame for 25 mins. Switch off the flame. Garnish with Raosted sesame seeds and serve hot with steamed Rice.

Dragon Fruit Jujubes (Vegetarian)

Jujubes are chewy candies that can be easily made at home without using any artificial colours. You can use natural fruit puree and I am sure you wouldn’t mind if you kiddo pops them regularly. The Sugar levels can be adjusted as per our taste.

Presenting Dragon fruit Jujubes made from Natural fruit puree.

Recipe for Dragon Fruit Jujubes:

Ingredients:
1 cup Sugar
2 tsp Agar agar
Half dragon fruit (pink one inside)
Juice of 1/4 Lemon

Method:

Soak 2 Tsp Agar Agar powder in 1 cup of hot water for 10 mins.

Boil 1/2 cup of water. Add sugar and keep stirring till the sugar dissolves. Once the sugar has fully dissolved add the agar agar soaked water and keep stirring for 15 mins. Let it boil. You will see the liquid becomes slightly thick and sticky.Switch off the stove. Add the lemon juice and dragon fruit puree. Mix well and pour it in a container and let it set in the fridge overnight. In the morning cut it into desired shapes and size and roll them in icing sugar .Keep it in a air tight container.

PS: Dragon fruit was sweet hence added sugar accordingly. You can increase or decrease as per your taste. You can try with other fruits too.

Hello Everyone as you are aware me and my team of 7 talented bloggers challenge ourselves every week to cook and present something new as per the theme .This weeks theme is #Alphabetname  which means we have to cook something using an ingredient that starts with the same alphabet as our name.

As my name starts with P , I chose Paneer which is loved by majority of us.I always like to experiment with it. This Recipe can be made within 25 Mins and is very rich in taste too. Once in a while I indulge myself and my family to such yummy treats.

This can be made whenever you want to please your guests. A quick and easy recipe that will tantalize your taste buds and leave you asking for more.

Recipe for Paneer Aachari Makhmali :

Ingredients:

200 Gms Paneer / Cottage Cheese
2 Onions finely chopped
170 Gms of Full Cream(I have used Nestle Cream)
1 Tsp Jeera/ Cumin Seeds
1/4 Tsp Haldi/ Turmeric
¾ Tsp Aachaar Masala
1 Inch Ginger (Crushed Coarsely)
6 Garlic Pods Crushed
Salt to taste.
1 Tsp Kasuri Methi (Crushed by hand) to garnish
½ Tsp Chaat Masala

Method:

Heat 1/2 tsp oil in a wok. Add Jeera, Haldi, ginger and Garlic. Roast for 1 Minute. Add the onions and roast till they turn golden brown. Add Paneer ,Aachaar masala and Chaat masala. Mix well and keep it on low flame. Once the paneer is well coated with the Masala add the cream and mix well.
Add salt to taste.

Once the oil starts to leave the sides, add Kasuri Methi ,mix well and switch off the flame.

Serve hot with Naan / Phulkas /Rotis.

Mirchi Ki Sabzi

Chillies add a ton of flavour to dishes. Besides adding a vibrant colour, it also increases appetite. It is cheap and easily available all over, making it a popular food of peasants who have Rotis with raw onion and Chilli. It has been regularly used throughout India for its antibacterial qualities.
This recipe is a hit at my place and is a regular affair. Easy to make and yummy to eat. I have used Bajji Chilli which is not hot.

Recipe for Mirchi Ki Sabzi:
1 Cup =250 Gms

Ingredients:

15 Bajji Chillies cut into 1Inch long pcs
1 Tsp Jeera/ Cumin
½ Cup Peanut Powder (Roasted peanuts coarsely ground)
½ Cup Besan / Gram Flour
1 Tbsp Roasted Flax Seeds
½ Tsp Chaat Masala
½ Tsp Garam Masala
Salt to Taste
Finely Chopped Coriander
1 Tbsp Oil

Method:

Heat oil in a pan. Add Jeera/ Cumin. Add the cut Chilli pcs and roast for 10 Mins on medium flame.Add Besan and roast till the raw smell of besan is gone. Add peanut powder, garam masala, chaat masala. Roast for 5 to 7 Mins. Add salt and mix well. Switch off the flame after 5 mins.

Garnish with fresh coriander, sprinkle roasted flaxseeds and serve hot.

This sabzi goes well with rice , phulkas and with cocktails too.

Thinai Pongal / Foxtail Millet Pongal

Navratri literally means ‘nine nights’ and during these nine days which mark the celebration of Durga Puja in India, different incarnations of the Goddess Durga /Shakti or the original creator, observer and destroyer of the universe, are worshipped. The festival is an integral part of the Hindu tradition and different regions in the country follow different rituals to perform puja on this auspicious occasion.

We offer different types of Offering to goddess each day.I would like to share one of the easiest and yummiest recipe with you.

Recipe for Thinai / Foxtail Millet Pongal

2 Cups Thinai /Fox Tail Millet
1.5 Cups Moong dal/ Green Gram Split
2 Tsp Jeera/ Cumin
1.5 Tsp Coarsely Crushed Black Pepper
2 Green Chillies Slit.
Fresh Curry Leaves

Method:

Mix foxtail millet and Moong dal/ Green Gram Split with 3.5 cups of water in cooker and cook upto 3 whistles. Keep it aside.

Heat ghee/ clarified butter in a wok. Add Jeera / Cumin and coarsely crushed black pepper. Add 2 slit green chilles and fresh curry leaves.
Add the cooked millet and moongdal mix. Add salt to taste and mix well . Switch off the stove after 5 mins.

You can garnish with extra tadka and serve hot with peanut chutney.

Cranberry Spread (without gelatin or agar agar)

Cranberries are considered super foods as they have the ability to help prevent urinary tract infections (UTIs) due to its strong acidic nature.Raw cranberries have moderate levels of vitamin C, dietary fibre and the essential dietary minerals, manganese as well as other essential micronutrients in minor amounts.

I got some fresh cranberries which were sour and hence my kid did not want to eat it. I made this yummy spread without gelatin or agar agar. Absolutely finger licking good that can be eaten anytime. You can eat it like a jelly too. It is very easy to make and can be stored in an air tight container in the refrigerator.

Recipe for Cranberry Spread:

Ingredients:

1Cup= 250 ML

1. 330 Gms Fresh Cranberries
2. 2 Medium Size Apples peeled and diced into 1/2 inch pcs
3. 1 Cup Sugar(Add more if you want to adjust the sourness of the cranberries)
4.3/4 Cup Water
5. 1 Tsp Honey

Method:

Mix all the ingredients in a heavy bottom pan and keep it on medium flame. Stir frequently till the cranberries are broken and you can see the thick sauce. It will take about 20 to 25 mins. Once you see the sauce is thick and the cranberries are well broken and well blended with the other ingredients ,switch off the flame.
Grease a cake tin and pour the thick sauce in it. Refrigerate it for about 3 to 4 hours.

Remove from the refrigerator and serve before eating. You can eat it just like that or spread it on Bread,Buns ,Chapatis.

Zebra Cuppies

I never felt baking is therapeutic until I started baking .I love to bake Cup cakes. Cup Cakes are loved by all age groups. I tried these Zebra Cuppies. They are tasty and just melt in your mouth. These are easy to bake too.

Here is my recipe for Zebra Cuppies.

Ingredients:

1 Cup Maida(250 gms)
1/2 Cup warm water
1/4 Cup oil
1/2 Tsp baking soda
1/2 Tsp baking powder
1 Tsp vanilla extract
1/4 Cup Milk
1/2 Tsp lemon juice
3/4 Cup powdered sugar
(Below mentioned ingredients to be added to chocolate batter)
2.5 Tsp unsweetened cocoa powder
1 Tbsp powdered sugar
1/4 Cup warm water

Method:

Mix sugar, oil, milk, warm water, Vanilla extract and lemon juice.
Sieve the flour, baking soda and baking powder.
Add the wet ingredients to the dry ingredients and mix to form a smooth batter.
Divide this batter into 2 equal parts. Keep one part plain and to the other part add cocoa powder, sugar and warm water and mix to form a smooth batter.
Use separate laddle for both the batters.
Grease the muffin tray. First pour a spoon of white batter. On top pour a spoon of chocolate batter. Again pour a spoon of white batter. Swirl only in the centre with a spoon from top to bottom.
Pre heat the oven at 190 C for 10 mins. Place the muffin tray in the preheated oven and bake for 30 mins. Check with a toothpick, if it comes out clean it is done.

Berrylicious dates smoothie has all the goodness of Blueberry, Strawberry,Cranberry ,Dates and Flaxseeds. A Power packed nutritious drink that is easy to make. I managed to get some fresh cranberry after a long time .I love to have Smoothie in the morning especially when I am running late to work.

Some Nutritional Facts about them:

1.Blueberries are packed with antioxidants
2. Strawberry is rich in Fiber and Vitamin C.
3.Cranberries are rich in phyto-nutrients which are essential for all-round wellness. Consuming cranberries helps to lower the risk of urinary tract infections, prevent certain types of cancer, improve immune function, and decrease blood pressure.
4.Flax seeds are a good source of omega-3 fats and fiber. Flax seeds have anti-inflammatory properties that promote bone health, and help protect against heart disease, cancer and diabetes. The nutrients in flax seeds can help prevent and lower high blood pressure and cholesterol.
5.Dates are excellent source of minerals and vitamins and compose health benefiting flavonoid polyphenolic antioxidants known as tannins. Date fruits are also rich in minerals like calcium, manganese, copper, and magnesium.

Recipe for Berrylicious Dates Smoothie:

Ingredients:

650 ML Skimmed Milk / Low Fat Milk
250 Gms Strawberries
125 Gms Blueberries
20 Cranberries
4 Seedless dates
1 Tbsp Honey
1.5 Tbsp of Roasted Flaxseeds

Method:

Blend the Strawberries with 325 ml of milk and roasted flaxseeds.Keep it aside.
Blend blueberries,cranberries,dates and balance milk. Add honey to the smoothly blended mixture. Fill half of the glass with Strawberry mixture and balance half with the blueberry mixture, add a piece of strawberry on top and serve. You can even refrigerate and serve chilled.

Burji Stuffed Chilli Boats

Another innovative dish from my Kitchen . This recipe has been on my mind for some time now.It is a yummy dish which you will definitely not want to miss. A crowd pleaser for sure.My family just love Bajji chilli and burji so this combo was just mind blowing.

Recipe for Burji Stuffed Chilli Boats:

8 Bajji Chillies deseeded and slit and keep it aside

Ingredients for Burji:

8 Bajji Chillies deseeded and slit
1 Onion finely chopped
½ Cauliflower grated
1 Tsp Aachari Masala
1 Tsp Jeera/ Cumin
Salt to Taste
Finely Chopped Coriander
Oil

Ingredients for Gravy:

6 Onions Medium Size chopped
4 Tomatoes medium size chopped
10 Cashews(Soaked in water for 30 mins)
10 Almonds(Soaked in water for 30 mins)
1/2 Tsp Garlic Paste
1 Tsp Ginger Paste
Salt to taste
1 Tsp Chilli Powder
1 Tsp Sabji Masala / Garam Masala
1 Tsp Jeera / Cumin
1 Tsp Haldi / Turmeric

Method:

Burji Preparation:

Heat some oil in a pan. Add Jeera/ Cumin,onion and grated cauliflower. Roast till golden brown. Add Aachari masala /Pickle Masala and salt. Once done switch off the flame.

Slit the Chilli ,cuti into 2 parts and deseed. Stuff the chillies with this Burji. Put them on a greased baking tray and place the tray in a pre-heated oven at 180C for 25 Mins.Once done keep it aside.

Gravy Preparation:

Heat some oil in a pan. Add ginger and garlic paste. Saute for 2mins and add Onions.Roast the onions till golden brown. Add tomatoes and saute till they turn mushy. Add the soaked Cashews and almonds and saute for 2 mins. Allow it to cool. Once the mixture is cool blend to get a fine paste.

Heat some oil in the same pan. Add Jeera/Cumin, Haldi/turmeric , chilli powder. Mix well. Add Sabji masala or Garam masala(I have only added sabji masala).Mix well again. Add the onion tomato mixture and mix well. Add salt to taste. Let the mixture simmer for 5 mins. Switch off the flame.

Place the baked burji boats in the gravy , garnish with fresh coriander, sprinkle some toasted sesame seeds and serve hot with Rotis/Phulkas /Rice

Healthy Chinese Soup (Vegetarian)

Soups are healthy. I make different types of Soups. I learnt this yummy and healthy Chinese soup from my elderly neighbour. Well I have made the vegetarian version.
It is more like a clear soup. I got these long bean leaves from aunty. She wanted me to try this soup.No cream has been used. It is very simple and quick recipe.

I am glad to have been introduced to this yummy comforting soup.

I have tweaked in a little by adding multi grain powder.

Recipe for Healthy Chinese Soup:

Ingredients:

1 Cup= 250 ML

Vegetable stock 3 Cups (I had boiled some veggies for sambhar and had kept aside the excess water for soup)
10 Long bean Leaves with midrib removed
1 big carrot diced
1 onion sliced
4 Garlic Pods minced
2 Tsp of finely chopped ginger
1 Tbsp Multi Grain Powder( a mix of Green gram powder, Quinoa, Flaxseeds and Chia seeds)
Salt to Taste
1 Tsp Coarsely crushed Pepper

Method:

Wash the leaves , remove the midrib, tear the leaves and keep it aside.

In a heavy bottomed vessel add all the ingredients except Multi grain powder and salt.
Keep it on slow flame. Let it simmer till the quantity of stock reduced to 3/4th.

Add the multigrain powder and let is simmer for 5 mins. Switch off the stove. Serve hot!!

PS: You can add any veggies or meat of your choice.
