NUCHINUNDE SOUP / DUMPLING SOUP

Today I am sharing a unique and wholesome soup recipe which is a complete meal in itself. It is nutritious and filling too. Nuchinunde soup / Dumpling soup is a recipe from my kitchen. Nuchinunde is a lentil dumpling usually served with chutney or majjige huli. I served Nuchinunde soup to my boys and they loved it. It is a very easy recipe . Do try and I am sure you will love it too. Perfect for the cold weather.

What is Nuchinunde?

It is a lentil based dumpling from the state of Karnataka. Popularly served as a snack or for breakfast in Karnataka. Rich in proteins and fiber it is healthy too as it is steamed. It is a versatile recipe.These dumplings can be added to curries . .I love to add fresh dil leaves and other greens too.This is completely optional.

Ingredients for Nuchinunde Soup / Dumpling Soup:

  • Masoor dal– This orange colored dal is nutritious and loaded with proteins.
  • Channa dal: An excellent source of protein for vegetarians.Rich in fiber andgood source of energy.
  • Fresh Ginger: Aids digestion and fights germs and soothes sore muscles too.
  • Coriander: Enhances the flavor and taste of the dish. Rich in immune boosting antioxidants.
  • Fresh Coconut: Rich in anti oxidants and is known to be good for the heart
  • Green Chilli: Adds a nice spice kick to the dish. Aids digestion and is rich in fiber.
  • Dil Leaves: Fresh dil leaves gives a nice aroma to the dish .Rich in antioxidants and a good source of vitamin C, magnesium, and vitamin A.
  • Salt: Main ingredient of the dish.
  • Jeera / Cumin Seeds: Rich in anti oxidants and good for health
  • Oil— A small quantity of odourless oil for the tadka.
  • Roasted Peanuts: Rich in Protein and fiber.Contains plenty of potassium, phosphorous, magnesium, and B vitamins. It is low in carbs too.
  • Asafoetida: Has Antibacterial, antifungal, and antimicrobial effects. 
  • Turmeric: Turmeric Contains Bioactive Compounds with Powerful Medicinal Properties.

Recipe for Nuchinunde Soup / Dumpling Soup:

Ingredients for Nuchinunde Soup / Dumpling Soup :

For Nuchinunde:

  • 1/2 Cup Masoor Dal
  • 1″ Fresh Ginger
  • 1/2 Cup Channa dal
  • 1 Tsp Jeera / Cumin
  • 1/4 Tsp Asafoetida
  • 2 Tbsp Dil Leaves
  • 1 Tbsp Fresh Coriander
  • Salt to Taste
  • Oil to grease your palm
  • 1 Cup Freshly grated Coconut
  • 2 Green chillies finely chopped

Ingredients for Soup:

  • 1 Cup Fresh Coriander
  • 2 Tbsp Roasted Peanuts
  • 1 Tsp Jeera
  • 1/4 Tsp Turmeric
  • Salt to taste
  • 1″ Ginger
  • 1/2 Tsp Oil
  • 1/4 Tsp Asafoetida

Method:

  • Soak Masoor dal and channa dal for about 3 hours. Drain the water completely after 3 hours.
  • Grind the soaked dal and ginger to a coarse paste. Do not add water while grinding.
  • Add freshly grated coconut, finely chopped green chillies , jeera , asafoetida and salt.
  • Add dil leaves and finely chopped fresh coriander . Mix all the ingredients.
  • Grease your palm and take a small qty of mixture and make oval shaped dumplings. Repeat the process for the balance mixture.
  • I got about 21 dumplings. I used 8 dumplings for the soup and freezed the balance in an air tight container for next day .
  • Steam the required amount of dumplings for about 15 mins.
  • If you are steaming in a cooker then do not put the weight.
  • Keep them aside.

For the Soup:

  • In a grinder make a fine paste of roasted peanuts, ginger and coriander.
  • In a wide bottom pan add oil. Add jeera and let it splutter. Add turmeric and asafoetida.
  • Now add the peanut coriander mixture. Add the same quantity of water as the mixture. Allow it to simmer. Add salt as required.
  • Once it starts to simmer add the steamed nuchinunde / dumplings and let it simmer for about 5 mins.
  • Turn off the heat.
  • Garnish with Fresh coriander and dried dil leaves and serve.

    1. Yes Archana you can mix the dals and make. Chana dal adds a nice texture hence I like to add. Just Ensure the dals are coarsely grinded. Do share your feedback whenever you try.

  1. What an interesting soup recipe Preethi. Looks so delicious and wholesome. It actually reminds me of rasiya muthiya, a Gujarati dish where doodhi and methi dumplings are added to a yogurt based curry. For us that’s a meal option.
