I love to make pickles with fresh vegetables during winters. Fresh carrots and chillies known as gajar and mirchi in Hindi. Gajar Mirchi ka Aachar / Pickle is an all time favourite pickle at my place. This is an Instant pickle recipe ans stays good for 2 weeks in an air tight container . Always remember to use a dry spoon. This pickle is quickly over at my place. Hence I make it regularly with different mix of vegetables. The crunch when you bite the carrots is what I love. Do try this to believe it.
Pickles with Winter vegetables:
Pickles are an integral part of winters in most of Indian households. The aroma of the freshly ground spices transports you to a different world. I am a great fan of pickles and my meals are incomplete without these pickles. These are home made and can be eaten guilt free. It used to be a favorite passtime to assist grandmom in making some exotic pickles to carry them back with us. Gajar Mirchi Ka Aachar / Pickle is an all time favorite of mine as you know that I am crazy about chillies.

- 1. Green Chillies are rich in Vitamin C and Vitamin K
- 2. Consumption of green chillies prevents heart problems like atherosclerosis.
- 3.It is a rich source of Iron has Anti Bacterial Properties.
- 4. It is rich in Beta Crotene
- 5.Green chillies have zero calories.
This recipe is my humble contribution for the A TO Z Recipe Challenge season 2 . This month was letter G and hence Gajar Mirchi ka Aachar.
GAJAR MIRCHI KA AACHAR / PICKLE
Equipment
- 1 Wide Bottom Pan
- 1 Dry Spatula
- 1 Glass Container (cleaned and dried)
- 1 Mixing Bowl
Ingredients
- 3 Nos Large Fresh Carrots cleaned ,peeled
- 8 Nos Fresh Green Chillies Slit
- 1 Tsp Turmeric / Haldi
- 2 Tsp Kashmiri Red Chilli Powder
- 2 Tbsp Mustard Powder
- 2 Tsp Lemon Juice
- 2 Tbsp Mustard Oil
- 2 Tsp Salt
Instructions
- Wash and completely dry the carrots and green chillies.
- Peel the carrots and cut them into 1" Pieces.
- Slit the green chillies into Half.
- Dry roast the mustard seeds for a minute and coarsely grind it. Keep it aside.
- Heat the Mustard oil until smoking point and turn off the heat.
- Allow it slightly cool.
- In a clean mixing bowl add carrots , green chilies , mustard powder , chilli powder , turmeric, salt and lemon juice and mix well.
- Pour the warm mustard oil of the over the carrot chilli spice mix.
- Mix all the ingredients and transfer it to an air tight container .
- Serve and enjoy ……
Notes
- You can reduce the number of green chillies if you wish to.
- You can add radish or mooli too to this pickle.
- I have added kasmiri red chilli powder and it adds a nice colour but not the heat.
- I have used raw carrots and chillies as it is an instant pickle.
- This recipe is perfect to suit my family’s palate.

Simple and tasty gajar mirchi ka achar. No meal is complete without some achar on the side. The colour looks so attractive too.
I think every Indian household has its own version of this famous gajar mirchi ka aachar. As kids I remember we would pick out all the carrots and leave other veggies for the adults. An easy to make and delicious pickle. I like to add tender French beans and fresh turmeric slices. If I get mango ginger I add that too.
This is my favourite way of having achar. Simple and it pairs well with most comfort meals. What I really enjoy is the crisp bites of the achar.
