Capsicums are bursting with flavor and commonly found around the globe. Slice them, dice them, roast them, enjoy them in a range of colors. They can be eaten raw or cooked, stuffed or roasted.
Research shows the health benefits of capsicum include relief from cancer, peptic ulcer, menopausal problems, low risk of cardiovascular disease and diabetes. It has anti-inflammatory, analgesic properties and may also provide relief in pain related to arthritis.
My family loves Capsicum.I learnt yummy Capsicum stuff recipe from my mom.I have tried her recipe ample times and each time it is a hit. Thought of experimenting and here I would like to share my successful experiment with you .
Recipe for Capsicum Stuff:
4 Medium Size Green Capsicum
2 Tsp Channa Dal / Bengal Gram
1 Tsp Urad Dal/ Black Gram
1 Cup (250 Gms) Peanuts
3 Tsp Flax Seeds
3 Dry Red Chillies
1 Tsp Sesame Seeds
1 Onion finely chopped
Salt to taste
Roast all the above ingredients except onion and salt and coarsely grind. Mix salt and finely chopped raw onions to the powder.
Wash the Capsicum . Slit the the top (ensure it is not fully slit),remove the center and deseed. Stuff 3/4 of the capsicum with the onion and powder mix. Heat 2 tsp of oil in a wok.Place the stuffed capsicum and close the lid. Keep it on medium flame till it is nicely done(Approx 20 to 25 mins). Serve hot with steamed rice and Rasam or Chapati.
