I am back after a two week hiatus. Today i am sharing a very simple and easy vegetable recipe made from beautiful beets.Beetroot is of exceptional nutritional value; Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium. I make beetroot stir fry , add it to tikkis , bisibele bath, raita ,Soups ,Salad, fried rice to name a few. It adds a beautiful color to any dish it is added to.My family loves Beetroot palya / stir fry with Phulkas ,Roti and even Chapati. I am Sharing my family recipe with you all.
Benefits of Beetroot:
eetroot is considered as one of the healthiest veggies. It is the taproot portion of the beet plant. It is rich in nutrients .They boost physical stamina and helps to regulate blood pressure.It also helps fight Inflammation and is great for detoxification.
Ingredients for Beetroot Palya / Stir Fry:
Beetroot : I have used medium sized beetroot nicely washed and peeled. I pressure cook when i am short of time to cook.
Grated fresh coconut: Fresh Coconut enhances the taste of the palya.Do not skip it.
Green Chilles :Adds some spice kick to the sweet beetroot palya.
 Channa Dal: Channa dal is used for tempering.
Split Urad Dal: I like to add split urad dal for the tempering . It is so crisp and crunchy.
Mustard: Another important ingredient for the tempering . Has many health benefits.
Hing / Asafoetida: Gives a nice aroma to the dish. You can skip it if you want to make it Vegan.
Curry Leaves: An integral part of any palya in south indian cuisine.Has numerous health benefits and gives a nice aroma to the dish.
Finely chopped fresh Coriander: Fresh coriander has so many health benefits and I like to add in most of my dishes.
Oil: Use any odorless oil for the tadka.
Recipe for Beetroot Palya / Stir Fry:

Ingredients for Beetroot Palya / Stir Fry:
3 Medium Sized Beetroot washed and peeled
3/4 Cup Grated fresh coconut
1 Tsp Channa Dal
4 Green Chilles Slit
1 Tsp Split Urad Dal
1/2 Tsp Mustard
1/4 Tsp Hing / Asafoetida
5-6 Curry Leaves
1/4 Cup Finely chopped fresh Coriander
1 Tsp Oil
Method:
Pressure cook the peeled beets upto 2 whistles in a cup of water.
Once done remove the beets and finely chop them.
Keep the water aside.
Now heat a wok. Add oil.
Once the oil is hot add channa dal and split urad dal.
As they turn slightly brown add mustard seeds ,curry leaves, green chillies and hing.
Once the mustard splutters add the chopped beetroots.Mix well.
Now add the beet water that was kept aside.
Add salt to taste ,close the lid and allow it to cook for about 7-8 mins on medium flame.
Once the beets are cooked add the grated fresh coconut and mix well. Let it cook for about 2 mins.
Switch off the flame .
Garnish with finely chopped fresh coriander and mix well.
Serve hot with Rotis, Chapati ,Phulka or Rasam and hot rice.

Preethi Beetroot Palya looks so welcoming. I love beetroot and therefore any dish that has beetroot. I’ve yet to try making a sabji or stir fry with it. With coconut this one does sound delicious.
