BARLEY BELL PEPPER SALAD

Today I am sharing a very simple ,quick and delicious salad recipe.Salads have become an integral part of our diet and they are not boring any more.There are many simple yet interesting wholesome salads that we can incorporate in our diet. Barley bell pepper salad is a very yet flavorful salad. Tossed with Japanese seven spice mix it is absolutely lip smacking.I prefer to have wholesome yet simple salads without any fancy dressing.Always prefer homemade dressing.

What is a Salad?

A salad is a dish consisting of mixed pieces of food, sometimes with at least one raw ingredient. It is often dressed, and is typically served at room temperature or chilled, though some can be served warm.These are many region specific salads made with local ingredients.Salads can be served as appetizer, sides or a complete meal in itself. There are many Interesting salad recipes that can be tailored to suit out taste and preferences.We make Sundal varieties that fall under this category.

Ingredients for Barley Bell Pepper Salad:

  • Pearl Barley:Barley is an excellent source of dietary fiber, but also contains other essential minerals, including magnesium, manganese, and selenium. It is chewy with a mild nutty flavor.
  • Green Bell Pepper: Green Bell pepper adds a nice crunch to the salad.They are high in Vitamin C.Other vitamins and minerals in bell peppers include vitamin K1, vitamin E, vitamin A, folate, and potassium.
  • Small Red Onion:These are loaded with Anti Oxidants and helps to lower blood sugar.It aids digestion , has anti bacterial properties and adds a nice flavor to the salad.
  • Lemon Juice: Helps to balance the slight heat from the seasoning.
  • Salt:Main ingredient of the dish
  • Nanami Seasoning: A popular seven spice Citrusy Japanese Spice blend consists of white sesame , black sesame, chilli flake ,orange peel, parsley flakes and szechuan pepper.I am in love with this flavorful spice blend.
  • Dill Leaves:I have added some dried dill leaves. You can add fresh coriander also. I did not have coriander hence used dried dill leaves.
  • Roasted Peanuts: A great source of protein.

Recipe for Barley Bell Pepper Salad:

Ingredients for Barley Bell Pepper Salad:

  • 1/2 Cup Pearl Barley
  • 1 Small red Onion Finely Chopped
  • 1/2 Green Bell Pepper chopped into small pieces
  • Juice of 1 Lemon
  • 1/2 Tsp Nanami Seasoning
  • Salt to taste
  • 1/2 Tsp Dried dill leaves
  • 2 Tsp Roasted Peanuts

Method:

  • Cook Barley in 4 Cups of water untill it is cooked and soft.It will take 10-15 mins.
  • Drain the barley and do not discard the water.
  • In a bowl add chopped onions, bell pepper ,warm barley , salt ,lemon juice, nanami seasoning and mix well
  • Add dill leaves and mix again.
  • Garnish with roasted peanuts and serve.
