PANEER PAYASAM / PANEER KHEER

This week I am sharing a delicious sweet dish that is perfect for this festive season. Ganesh Chaturti is round the corner. Paneer payasam / paneer kheer is perfect offering to the Elephant God . I am glad as it falls on this saturday and we can celebrate this festival with a lot of fervor along with my family. This recipe will be perfect for those who are still planning and unable to decide on what to offer to the Lord every day or even for gala dinners to treat your guests.

Recipe for Paneer Payasam / Paneer Kheer:

Ingredients:

  • 1.5 Ltrs Full fat Milk
  • 10 Pistachios sliced
  • 2 Dates Finely Chopped
  • 1/4 Tsp Saffron Strands
  • 1.5 Cup Crumbled Paneer / Cottage Cheese
  • 10 Tsp Sugar
  • 1/2 Tsp Cardamom Powder
PANEER PAYASAM / PANEER KHEER

Method:

  • Soak Saffron strands in 2 Tbsp Milk and keep it aside
  • You can make fresh paneer at home or use store bought.
  • Crumble the paneer and do not mash it completely.
  • Heat milk in a heavy bottom pan.
  • Allow the milk to simmer on medium flame untill the quantity is reduced to half of the original quantity.Add cardamom powder.
  • Stir on regular intervals and scrap the cream on the sides and add it back to the milk.
  • Once the milk has thickened add the saffron soaked milk,chopped dates and sugar.
  • Stir untill the sugar is dissolved completely.
  • Add crumbled paneer and allow it to cook for 10-15 mins.
  • Turn off the heat and allow it to cool completely.
  • Refrigerate Paneer Payasam before serving .
  • Garnish with few saffron strands ,and Sliced Pistachios before serving chilled.
  • Enjoy the delicious payasam at the comfort of your home.
Notes:

  • Home made Paneer is very soft and delicious as it is fresh.
