We have school holidays here for two more weeks and then my boy will be super busy with school activities. These days I am cooking what my boys like ,so that they can enjoy a hearty meal or snack at home with a peace a mind.This Morning I decided to treat them with a quick and flavorful garlic mushroom pasta. You need just 15 minutes to whip up this delicious pasta. The smell of the garlic, Intensely flavors from the mushrooms, savory parmesan cheese ,aromatic parsely and yummy cherry tomatoes is too good to resist.

Pasta -An Overview:

Pasta is a dish originally from Italy consisting of dough made from durum wheat and water, made into various shapes and typically cooked in boiling water. It is high in Carbs and low in fats.There are many different types of fresh and dried Pasta. They come in various shapes and sizes . These are many varieties of pasta and varies from region to region in Italy. You can find gluten free pasta as well these days.Pasta comes in different shapes ,sizes and colors too.

This week our hostess is Priya Iyer who suggested the theme #PastaPlease is a versatile blogger with many delicious south Indian ,gujarati and Thai recipes on her blog.She is an avid lover of thai cuisine. I love her Zucchini Thepla recipe and also her Peanut Pesto Recipe. My humble contribution to this theme is a quick and flavorful Garlic Mushroom Pasta (No cream).

Ingredients for Garlic Mushroom Pasta (No Cream):

  • Pasta: I have used Spaghetti. You can use any variety of pasta. Spaghetti works perfect with garlic and mushrooms.
  • Mushrooms: I have used fresh Portobello variety. You can useany variety that you can easily get. Cooking time will vary/
  • Garlic: I love the strong intense flavor of roasted garlic. Pairs well with mushrooms.
  • Cherry Tomatoes: I love adding cherry tomatoes. You may skip if you don’t like it. The feeling when you bite into these blistered cherry tomatoes is incredible.
  • Fresh Parsley: Fresh Parsley is rich in antioxidants. Fresh herbs add a nice intense flavor to the pasta.
  • Extra Virgin Olive Oil: I prefer to use EVVO for making pasta. You may use normal olive oil as well.
  • Parmesan Cheese: Aside from flavor, Parmesan can help thicken a dish and bind ingredients. I have used Vegetarian parmesan cheese.
  • Salt : I have used low sodium salt here. You can use normal salt.
  • Pepper: Freshly ground black pepper adds a nice flavor and heat to the pasta.Black pepper increases the absorption of essential nutrients and beneficial plant compounds.
  • Chilli Flakes (Optional):I love to add red chilli flakes to my pasta. You can substitute with cayenne pepper instead.

Recipe for Garlic Mushroom Pasta (No Cream):

Ingredients for Garlic Mushroom Pasta (No Cream):

  • 300 Gms Spaghetti or any other Pasta
  • 450 Gms Fresh Portobello Mushroom
  • 8 Cherry Tomatoes
  • 4 Large Garlic finely chopped
  • 1/2 Tsp Chilli Flakes (Optional)
  • 1/3 Cup Parmesan Cheese plus extra for serving
  • 2 Tbsp Extra Virgin Olive Oil plus extra for drizzling
  • 1/4 Tsp Freshly ground Black pepper
  • Salt to taste
  • 3 Tbsp Fresh Parsely Finely chopped


  • Cook Spaghetti in a large pot of water as per instructions on the package until al dante.
  • Wash the mushroom in cold water to remove any debris or dirt and pat dry with paper towels.
  • Finely Chop garlic and Parsely .
  • Slice the fresh clean mushrooms.
  • Heat the olive oil in a large wide bottom pan. Add finely chopped garlic and chilli flakes and cook for a minute.
  • Now add sliced mushrooms and cherry tomatoes and season with salt and pepper.
  • Keep stirring and tossing them for 6 minutes untill the mushrooms are browned and cherry tomatoes are sizzling .
  • Once the pasta is cooked reserve 1/2 cup of cooked pasta water and drain the pasta.
  • Add cooked pasta, chopped parsley and cheese . Add pasta water gradually untill it combines nicely. Cook over medium heat for 2 minutes untill the pasta is nicely coated.
  • Add salt and pepper if needed . Drizzle some olive oil and sprinkle some extra cheese and chilli flakes and serve.

  • Makes a great weeknight dinner as it comes together in just 15 mins
  • You can use cremini mushrooms too. it realease more water and will take additional time for the water to be used up.
  • This will please your family anytime.
  • Any variety of pasta can be used.
  • Adding chilli flakes is optional but i would say do not skip it.
  • All the ingredients used here make a delicious lip smacking combo.
