Cranberries are considered super foods as they have the ability to help prevent urinary tract infections (UTIs) due to its strong acidic nature.Raw cranberries have moderate levels of vitamin C, dietary fibre and the essential dietary minerals, manganese as well as other essential micronutrients in minor amounts.
I got some fresh cranberries which were sour and hence my kid did not want to eat it. I made this yummy spread without gelatin or agar agar. Absolutely finger licking good that can be eaten anytime. You can eat it like a jelly too. It is very easy to make and can be stored in an air tight container in the refrigerator.
Recipe for Cranberry Spread:
Ingredients:
1Cup= 250 ML
- 330 Gms Fresh Cranberries
- 2 Medium Size Apples peeled and diced into 1/2 inch pcs
- 1 Cup Sugar(Add more if you want to adjust the sourness of the cranberries)
4.3/4 Cup Water - 1 Tsp Honey
Method:
Mix all the ingredients in a heavy bottom pan and keep it on medium flame. Stir frequently till the cranberries are broken and you can see the thick sauce. It will take about 20 to 25 mins. Once you see the sauce is thick and the cranberries are well broken and well blended with the other ingredients ,switch off the flame.
Grease a cake tin and pour the thick sauce in it. Refrigerate it for about 3 to 4 hours.
Remove from the refrigerator and serve before eating. You can eat it just like that or spread it on Bread,Buns ,Chapatis.
