GONGURA THOKKU / SORREL LEAVES PICKLE

Today’s recipe is about a wonderful leafy vegetable that is rich in Iron. It improves your eyesight and helps in detoxifying our body. Gongura is known to have many more health benefits.Today i am sharing the delicious Gongura thokku recipe that can be eaten as an accompaniment or mixed with rice. It is absolutely lip smacking.

Recipe for Gongura Thokku :

Ingredients:

  • 3 Cups Loosely Packed Sorrel leaves / Gongura leaves
  • 1/4 Cup Curry Leaves
  • 1 Tbsp Channa Dal
  • Salt to taste
  • 1 Tbsp Urad Dal
  • 4 Tbsp Gingelly Oil
  • 1 Tbsp Toor Dal
  • 35 Dry Red Chillies
  • 1 Lemon sized Tamrind
  • 1/4 Tsp Fenugreek / Methi dana
  • 15 Whole Black Pepper
  • 1 Tsp Coriander seeds
  • 3/4 Tsp Mustard
  • 1/2 Tsp Hing / Asafoetida

What is the method to prepare this thokku?

  • Remove the sorrel leaves from the stem. Wash and dry them . Wash the curry leaves and dry them as well. Keep them aside.
  • Heat a wide bottom pan. Add 1/2 tsp of oil. Roast channa dal, urad dal and toor dal until they turn slightly brown .Ensure it does not burn. transfer them to a plate and allow it to cool completely.
  • Heat 1/2 tsp oil in the same pan. Roast coriander seeds , black pepper and methi seeds. Once they are fragrant . remove and transfer to a plate.
  • In the same pan add 1/2 tsp oil and slightly roast red chillies and tamrind. Once they swell switch off the flame and allow it to cool.
  • Heat 1/2 tsp oil in another pan. Add the sorrel leaves and curry leaves. Once they change colour and wilt switch off the flame. Allow it to cool completely.
  • In blender grind all the roasted ingredients except greens , mustard, asafoetida and salt. As the mixture is coarsely ground add the cooked greens and blend by sprinkling some water. Grind coarsely.
  • In pan add the balance oil and heat. Add mustard seeds and hing. As the mustard splutters add the ground mixture to the oil. Add salt to taste and mix well. Cook for 5 mins untill the oil starts to leave the sides and mixture is dry. Thokku is ready.
  • Transfer the thokku to a nice and clean glass jar. Stays good for 2 weeks in the fridge.Enjoy with piping hot rice and ghee.

PANEER PEPPER PIZZA(DESI STYLE)

In today’s world there are very few people who don’t like Pizza.You can easily make it at home for your family.My boy was home from his camp and this weekend.Both my boys were craving for Pizza for quiet sometime. I decided to treat them with this extremely delicious Paneer Pepper Pizza.Yes tweaked in Aachari Paneer to give it a desi touch. Paneer pepper Pizza is a hit at my place. You need to try this recipe to believe it.

There are many types of Pizza. Both vegetarian and Non Vegetarian.You can make your own version to suit your family’s preference and taste.This week I had suggested a few themes and majority voted for Pizza Theme.

My contribution for 215th #Foodiemonday #Bloghop theme #PizzaMania is this extremely delicious Paneer Pepper Pizza.

Recipe for Paneer Pepper Pizza:

Ingredients:

1.5 Cup Plain Flour (Unbleached)

1 Cup Wholemeal Flour (Organic &Non gmo)

2 Sachets of Instant yeast (11 gms each)

1 Purple Pepper chopped

20 Paneer Cubes

1 Tsp Aachari Masala

1/2 Yellow Pepper chopped

1 Red Pepper chopped

10 Cherry Tomatoes halved

Generous serving of Mozzarella Cheese

Salt to taste

2 Tsp Olive Oil

For Coriander Chutney:

A Bunch of Cleaned Coriander leaves

1 Red Onion finely chopped

Salt to taste

1 Tsp Jeera / Cumin seeds

2 Green Chillies

Method:

Take a wide bottom bowl. Add both the flours,instant yeast ,oil and salt to taste. Mix all the ingredients and add water slowly.It will form a slightly sticky dough.Cover the dough with a wet cloth and allow it to rest for about 15 to 20 mins in a warm place.

Blend all the ingredients for chutney in a blender. Do not add water.Keep the chutney side.

Take a wok. Add a tsp of oil. Add 1/2 Tsp jeera. Throw in the Paneer cubes and achari masala. Mix well. Add salt to taste and mix well. Once Paneer is soft and the masala is well coated, switch off the flame and keep it aside.

Roll the dough on a flat base. Spread the coriander chutney.Now add the achari paneer. Garnish the chopped mixed peppers. Sprinkle cheese generously. Add some cherry tomatoes as well. Repeat the process for the balance dough as well.

Pre heat the oven at 190C for about 10 mins. Place the pizza in the pre heated oven. Bake for 20-25 mins. Once done allow it to cool completely.

Garnish with chilli flakes and enjoy!!!!!!!!!!!!

Herbed Crust with Pickled Potato Pizza / Aachari aloo Pizza

 

 

Pizza is loved by many including my kids and hubby.I am not a Pizza lover but yes I do experiment with different toppings. This fusion pizza is so amazing and yummy that you can’t stop at one. I have made this Pizza at home from the scratch with easily available ingredients .I have used unbleached plain flour with some multi grain powder , pickled potatoes and cheese…

Hmm ,enjoy this yummy pizza with a desi touch at the comfort of your home. It can be made within an hour from the start to the end.

Recipe for Herbed Crust with Pickled Potato Pizza:

Ingredients:

2 Cups Plain flour / Maida (Unbleached)

2.25 Tsp of Baking Powder

1Tsp Salt

1 Tbsp Olive Oil

1 Tsp Mixed Italian herbs

1 Tsp Chilli flakes

15 Baby Potatoes boiled and peeled

Spicy Chilli Sauce

1.5 Cup Permesan Cheese for generous topping

1 Tbsp Multi grain powder (A mix of quinoa,  chia seeds,flax seeds and green gram –all roasted and powdered)

8 Cheery Tomatoes halved

2 Onions chopped length wise

2 Bell peppers cut lengthwise

5 Cheese Slices torn into Pcs

1 Tsp Jeera / Cumin

1.5 Tsp Aachar Masala/ Pickle masala

1 Tsp Oil for roasting potatoes

Method:

Take a heavy bottom pan. Add a tsp of oil. Add jeera and  aachar masala and saute for few seconds on low flame. Add the boiled and peeled potatoes and roast on medium flame for about 7 to 8 mins. Add salt and mix well. Switch off the flame after 5 mins.

In a wide bowl, add the flour, baking powder, mixed Italian herbs,multi grain powder,salt ,chilli flakes and olive oil and knead the dough. Gradually add water as required to knead the sticky dough.Cover the dough and allow it to rest for about 10 mins.

Make small balls of the dough. Roll the dough in any shape you desire. Spread about 1.5 Tsp of Chilli sauce. Sprinkle some onions and bell pepper.Top it up with Permesan cheese and 1 cheese slice torn into pcs. Lastly add cherry tomatoes, pickled potatoes and garnish with some more cheese.

Pre heat the oven at 180 C for 10 mins. Please the Pizza in the preheated oven and bake it for about 20 to 25 mins.

 

Serve Hot!!!

Quinoa Pizza Bites (Flourless)

 

Pizza is an all time favorite of many of us. Today I am sharing a quick and healthy recipe . It is flour less and loaded with colorful veggies and cheese. You can have it guilt free and kids will love it too.A good idea to incorporate Quinoa in our diet.

A quick snack idea  for kids parties .

Recipe for Quinoa Pizza bites:

1Cup=250 ML

Ingredients:

1 Cup Cooked Quinoa

½ Cup Pizza Sauce

½ Cup Sliced Onions

½ Cup Red bell pepper chopped

½ Cup Yellow bell pepper chopped

½ Cup Tomato chopped

½ Cup Mozzarella Cheese

½ Cup Chilli Sauce

 

Method:

Cook Quinoa in Beetroot stock or vegetable stock and allow it to cool.

Take a ramekin and grease it with butter.

Add a Tsp of Pizza sauce at the bottom .

Next add a tsp of cooked quinoa, add the chopped bell peppers, tomato and onions.

Add a Tsp of Chilli Sauce

Add the chopped bell peppers again.

Sprinkle cheese generously on the top.

Preheat the oven at 180 C for 10 Mins. Place the Ramekins in the preheated oven and bake for 15 Mins.

Serve hot and enjoy this yummy Pizza.

Wholegrain Veggie Pizza (Yeast Free)

 

 

Many of you must be  looking forward to celebrate Holi this year.  On this day, individuals forget their enmity and forgive each other. This festival fosters a sense of brotherhood among people. I hope that people will celebrate Holi responsibly and help save the environment.

As a part of 32nd #Foodiemonday #bloghop theme #FestivalofColors I decided to make Pizza loaded with lots of vegetables and Cheese. Just as each vegetable imparts its unique taste ,flavor and colour to the Pizza , I hope people from different backgrounds will come together to make this earth a better place to live and teach the same to the future generations .

Celebrate Holi with this Healthy, yummy and colourful Pizza.

Recipe for Whole Grain Veggie Pizza(Yeast Free) :

Makes 6 Pizzas

Ingredients:

2.5 Cups Whole Grain Flour (Unbleached)

2.5 Tsp Baking Powder

1 Tsp Baking Soda

1Tbsp Olive Oil

¾ to 1 Cup Water

1 Red Bell Pepper Chopped

1 Yellow Bell Pepper Chopped

1 Green Bell Pepper Chopped

2 Potatoes Boiled and cut lengthwise

3 Florets of Broccoli cut into small pcs

6 Mushrooms chopped lengthwise

1 Cup Mozzarella Cheese (Increase or decrease as per your requirement)

6 Tbsp Pizza Sauce

4 Tsp Sriracha Sauce

Salt to taste

 

Method:

In a large bowl, sieve the flour, baking soda and baking powder. Mix well. Add Olive oil and salt  to the flour mix. Gradually add water and mix until the dough starts to come together. Knead until you get a soft dough. Cover it with a clean Kitchen towel and let it rest for 10 Mins.

After 10 Mins, place the dough out onto a lightly floured surface, and divide into 6 equal parts. Preheat the oven to 200 degrees C for 10 mins. Roll a ball of dough in circular shape with a rolling pin. When the circle has reached the desired size, place it in a greased pizza pan. Mix the Pizza Sauce and Sriracha sauce in a bowl. Spread the sauce on the pizza base. Top it with all the veggies and cheese. Bake for 15 to 10 mins, in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

Repeat the process for the balance dough.

Fusion Pizza(My Style)

Pizzas come in many flavors and varieties. Being a vegetarian my kids always have Veggie Lovers Pizza.I am not a Pizza fan , but I loved this Fusion Pizza.

My kids were craving for Pizza . I was late from work and hence could not make the normal Pizza as it is time consuming . I came up with this idea of making fusion Pizza that turned out totally lip smacking and vanished in a jiffy. Got a thumbs up from my boys too. My experiment was successful. When my experiments are loved and appreciated by my family, I feel accomplished.

This is easy to make and can be made with basic ingredients in your Pantry. It can be eaten guilt free.

Recipe for Fusion Pizza( My Style):

Ingredients:

3 Potatoes (medium size) boiled and mashed or grated

4 Florets of Broccoli grated

1 Tsp Chilli Powder

Salt to Taste

I Green Bell Pepper chopped

1 Tomato chopped

2 Tbsp Bread Crumbs or 2 brown bread slices mashed

Cheese for Topping generously

Method:

Mix the boiled and mashed potatoes, grated broccoli, chili powder,mashed bread slices and salt. Shape them as desired and place it on a greased tray. Smear some Pizza sauce or Chilli sauce . Top it up with chopped Bell Pepper and Tomatoes. Sprinkle cheese generously.

Pre heat the Oven at 180C for 10 Mins. Place the tray in the pre heated oven and bake for 15 to 20 mins.

Fusion Pizza is ready.
