Okra or Bhindi is rich source of dietary fiber, minerals, and vitamins. It is often recommended by nutritionists in cholesterol controlling and weight reduction programs.There are many recipes of Okra/ Bhindi.
My family loves Okra /Bhindi. This is one of the most popular vegetable at my place. I cook Okra/ Bhindi in many ways.
This is one of the hit recipe which is yummy and easy to prepare.
Recipe for Bhindi Masala/ Okra Spice Curry:
Ingredients:
- 800 Gms Okra/ Bhindi (Tender ones)
- 6 Onions chopped
- 5 Tomatoes chopped
- Handful of Coriander
- 10 Pepper Corns
- 3 Tsp Jeera/ Cumin
- 1 Tsp Garam Masala
- 1 Tsp Rasam Powder
- 1 Tsp Ginger Garlic Paste
- Salt to Taste
- 12 Cashews
- 15 Almonds
- 10 ML Fresh Cream
- 3 Dry red chillies
- 1/4 Tsp Haldi/ Turmeric
Method:
Wash and cut the Okra/ Bhindi and keep it aside.
Heat 1 Tsp oil in a wok. Add 2 Tsp Jeera, pepper corns, turmeric/haldi and ginger garlic paste.Roast for a few seconds. Add the red chillies and chopped onions and coriander. Roast till the onions turn slightly brown.Add the chopped tomatoes, rasam powder, cashews and almonds.Roast all the ingredients till the tomatoes turn mushy. Allow the mixture to cool and blend to a fine paste.
Heat a tsp of oil in the same wok. Add 1 Tsp of Jeera/ Cumin Seeds. Add Bhindi and roast well. Ensure it does not burn.I roast till they are slighlty crunchy and not soggy(Approx 20 mins). Add Garam Masala and salt to taste.Mix well. Add the ground Masala and let it simmer for 10 mins on low flame. Add fresh cream , mix well and switch off the stove.Garnish with fresh coriander.
Serve hot with Rotis or Phulkas.
