Equipment

  • 1 Air Fryer
  • 1 Wooden Board
  • 1 Mixing Bowl

Ingredients
  

  • 1 Cup Grated Paneer
  • 1/2 Cup Sweet Corn Kernels (boiled or thawed)
  • 2 Tbsp Finely Chopped fresh Coriander
  • 1/2 Tsp Green Chili Flakes
  • Salt to Taste
  • 1 Tbsp Toasted Sesame Seeds
  • 12 Nos Rice Paper sheets
  • 3/4 Tsp Chaat Masala
  • 1 Tbsp Green Chili Sauce
  • Oil for brushing / Spraying

Instructions
 

1. Prepare Filling:

  • In a bowl, mix grated paneer, corn, coriander, green chilli flakes, chaat masala, salt, and green chilli sauce. Mix well to combine.

2.Assemble Dumplings:

  • Soften a rice paper sheet in warm water for 5–10 seconds.
  • Place it on a flat surface (wooden board) and add 1–2 tbsp of filling in the center.
  • Fold the sides inward, then roll it like small pockets.
  • You can double wrap for extra strength and crunch. But this is totally optional.

3.Add Crunch:

  • Lightly brush or spray the rice paper pockets with oil and sprinkle sesame seeds on top.

4.Air Fry:

  • Preheat air fryer to 180°C (350°F).
  • Place dumplings in the basket in a single layer.
  • Air fry for 8–10 minutes, flipping halfway, until golden and crisp.

5.Serve:

  • Enjoy hot with Chili sauce, mint chutney, or yogurt dip.

Notes

Notes :
  • Don’t oversoak rice paper—it tears easily.
  • Double wrapping prevents bursting and adds crunch.
  • Adjust spice levels by increasing or decreasing chilli flakes or sauce.
  • You can use red chili flakes or finely chopped fresh green chili in case you don't have green chili flakes as I have it home made.

Rice Paper Handling

  • Quick Dip Only: Dip the rice paper in warm water for just 5–10 seconds. It should still feel slightly firm—it will continue to soften as you work.
  • Use One at a Time: Rice paper becomes sticky quickly. Prepare and roll each dumpling one by one to avoid tearing or sticking.

Filling Tips

  • Keep It Dry: Ensure corn and paneer are not watery. Drain or pat dry excess moisture—too much liquid can make the dumplings soggy.
  • Customize the Flavor: Add finely chopped onions, bell peppers, or crumbled tofu for variation. Grated carrots or shredded cabbage also work well.
  • Binding Tip: The green chilli sauce acts as a binder. If your filling feels too crumbly, add a bit more sauce or a teaspoon of cornstarch.
  • Air Fryer Tips

    • Don’t Overcrowd: Leave space between dumplings in the air fryer basket for even crisping. Cook in batches if needed.
    • Flip Carefully: Flip halfway through for even browning, but do so gently to avoid tearing.
    • Extra Crispiness: Lightly spray or brush with oil before air frying to get that perfect golden crust.
    • Serving Ideas

      • Dipping Sauces: Serve with green chilli sauce, sweet chilli dip, mint chutney, or garlic yogurt sauce.
      • Make it a Meal: Serve over sautéed greens or with a side salad for a light lunch or dinner.
    • Make-Ahead & Storage

      • Prep Ahead: Assemble the dumplings and store them uncooked in an airtight container with parchment paper between layers. Air fry when ready to serve.
      • Storage: Leftovers can be stored in the fridge for up to 2 days and reheated in the air fryer for 2–3 minutes at 160°C (320°F) to crisp them back up.
