Ingredients
  

Ingredients for the Dough

  • 2 Cups Wholegrain flour (Unbleached) 240 ml cup
  • 1/2 Tsp Salt
  • 1/2 Tsp Sugar
  • 25 Grams Cold Butter(Unsalted)
  • 1/2 Cup Thick yogurt(Unsweetened)

Ingredients for Thandai Powder

  • 1 Tbsp Cashew pieces
  • 1 Tbsp Melon Seeds
  • 1/2 Tsp Saffron strands
  • 1/2 Tsp Cinnamon Powder
  • 1/2 Tsp Nutmeg Powder
  • 1/2 Tsp Fennel Seeds Powder
  • 12 Nos Almonds Coarsely Powdered
  • 15 Nos Pistachios Coarsely powdered
  • 1 Tbsp Poppy Seeds and coconut mixture(I have powdered dry coconut and poppy seeds together)
  • 3 Nos Pepper Corns Powdered
  • 1 Tbsp Dry rose petals
  • 2 Tbsp Sugar
  • 1/4 Tsp  Cardamom Powder

Other Ingredients

  • 1 No Nectarines deseeded and cut into pieces per Mini Galette
  • 1 Teaspoon Thandai Powder per Mini Galette
  • Butter for brushing the Galette

Instructions
 

For Dough

  • Combine the flour,salt,sugar and cold butter in a large mixing bowl. Mix well . Start adding yogurt little by little to the flour mix. Continue till you can gather the dough into a round ball (like chapati dough). Place the dough in a bowl, cling wrap it and keep in the fridge. Let it rest for 30 mins.

For Thandai Powder

  • Mix together all the ingredients mentioned under the Thandai powder ingredients and your Thandai powder is ready. It is be stored in an air tight container.

For Thandai Nectarine Mini Galette

  •  Preheat the oven at 200C for 10 mins.
  • Take a small ball of dough, roll out, arrange the pieces of nectarines in the center. Sprinkle Thandai powder(1 Tsp) and fold the edges over the nectarines.
  • Place the mini galette on the parchment paper on a baking tray. Place the tray in the pre heated oven and bake for 30 to 35 mins.
  • Flaky and yummy Thandai Nectarine mini Galette is ready. Sprinkle some thandai powder on top and serve.

Notes

  1. Always prefer Unbleached Flour
  2. You can Substitute with any berries if you don't have nectarines.
  3. Increase or decrease the quantity of sugar in the thandai powder as per your preference.
  4. There is always scope to substitute  the ingredients but I want you to try this recipe as it is. You will definitely love them.
