3/4Cup Mixed Vegetables (beans , carrot, green peas and Potato)

Juice of 1/2 Lemon
Salt to taste
For the Green Masala
1/4NoRed onion sliced
6NosGarlic Cloves
2InchGinger slices
6NosFresh Green Chili (mildly spicy variety)
4TbspFreshly Grated Coconut
1InchCinnamon / Dalchini
4NosCloves / Lavang
2NosCardamom / Elaichi
1NoKapok Buds / Maratha Moggu (optional)
1NoStar Anise
1TspPoppy Seeds / Gasgase
1/2TspCoriander Seeds / Dhaniya
Fist Full of Fresh Mint Leaves
Few Sprigs of Fresh Coriander Leaves
Instructions
Soak rice for an hour and then drain and set aside. Soak Poppy seeds or gasgase for about 20 minutes.
Add all the ingredients mentioned under Ingredients for Green Masala to a blender and grind to make a fine paste. You can add 1/4 cup of water to the mixture to get a smooth paste.
Heat oil in a pressure cooker. Add Tej patta , Cumin and Saunf. Once you get the aroma add the sliced onions and saute till they are slightly browned.
Add the chopped tomatoes and sauté until they are nice and mushy.
Now add all the chopped veggies and sauté for a minute.
Once done add the ground green masala paste. Mix well and sauté for 3 minutes until the raw smell is gone. Do not skip this step.
Add the rice and mix well. Let is sit for a minute.
Add 2 cups of water to the rice mix , lemon juice and salt . Mix well.
Once it comes to boil, close the lid and pressure cook upto 2 whistles.
Once the pressure is released remove the lid . Serve the fluffy Mix vegetable Pulao with any raita of your choice.

Notes
I have made this pulao with Sona Masoori and Basmati rice. In this particular recipe I have used Basmati rice as my stock of Sona Masoori was over.
Feel free to add cauliflower and Knol Knol too. I have not used here as I did not have stock.
Adjust the green chilies as per your spice tolerance.
Do not Skip any other ingredients mentioned here to enjoy the authentic taste.
You can use any variety rice if you don't have sona masoori or basmati.
