  • 1 Heavy Bottom Pan

Ingredients
  

  • 2 Nos Ripe but firm plantains (Pisang Raja variety recommended)
  • Salt to Taste
  • 2 Nos Dried red chili
  • 1 Tbsp Za’atar spice
  • Oil for deep frying

Instructions
 

1.Prep the Plantains

  • Start by peeling the plantains and slicing them into thick rounds. Make sure they're ripe but still firm — this helps them hold their shape while frying.

2.Make the Chilli Powder

  • Dry roast the red chillies in a pan until fragrant, then grind them into a fine powder. This adds a wonderful smoky heat to the dish.

3.Fry the Plantains

  • Heat oil in a wide pan over medium heat. Once the oil is hot, carefully place the plantain slices in and deep-fry until they turn golden brown and crisp on all sides. Be careful not to let them burn.

4.Drain and Season

  • Remove the fried slices and place them on a paper towel to absorb any excess oil. In a mixing bowl, combine the salt, za’atar spice, and chilli powder. Toss the warm plantains in this mixture until evenly coated.

5.Serve & Enjoy!

  • Serve hot as a snack, appetizer, or a side dish. They're best enjoyed fresh and crispy!

  • For best results, use the Pisang Raja variety of plantains, known for its rich flavor and firm texture.
  • Adjust the amount of chilli powder based on your spice preference.
