Equipment

  • 1 Mixing Bowl
  • 1 Deep frying Pan
  • 1 Rolling pin and baking paper
  • 1 Cookie cutter / Cup

Ingredients
  

  • 1 Cup Unbleached Maida / All purpose flour
  • 1 Cup Rice Flour
  • 1 Tbsp Dried coriander leaves
  • 2 Tsp Kasuri Methi / Dried Fenugreek leaves
  • 1 Tsp Dried green chili powder
  • 2 Tsp Roasted white Sesame seeds
  • Salt to taste
  • 1/2 Tsp Hing / Asafoetida
  • 1 Tbsp Hot Oil for the dough
  • 3 Cups Oil for deep frying (increase or decrease as per your requirement )
  • Water to knead the dough

Instructions
 

For the Dough:

  • In a mixing bowl add maida , rice flour , roasted sesame seeds , green chilli powder ,dried coriander powder , kasuri methi , salt amd Hing. Mix well .
  • Heat 1 Tbsp oil until it sizzles. Pour the sizzling hot oil on the dough mix.
  • Be careful and use a spoon to mix all the ingredients. Now slowly add water to mix the dough to chapati dough consistency.
  • Cover the dough and let it rest for 10 minutes.
  • Heat oil for frying.
  • Make big ball of the dough . Roll it on a baking paper .Not too thin and not too thick . Using a cookie cutter or a cup cut them into desired round shape.
  • Fry them in hot oil until both the sides are nice and golden brown .
  • Repeat the process for the balance dough and enjoy.

Notes

  1. Make sure sizzling hot oil is added to  the dough.
  2. Do not skip any herbs added here for the perfect taste.
  3. You can red chilli powder if you wish to have spicier pooris.
  4. Stays good for a week in air tight container.
