BERRYLICIOUS BRUSCHETTA LOADED WITH MUESLI

Hope you all gearing up for the  upcoming festivities and new year.I am also looking forward to it as I have some travel plans to unwind and usher in the new year with a bang. Looking for healthy appetizers or breakfast ideas? Then try this easy and yummy recipe.

My Contribution for 123rd #Foodiemonday #Bloghop theme #Berryrecipes. Berries are in season here and I love to have them very often.I have not baked for a long time now due to hectic work schedules. I would love to bake. Today I am sharing a very easy recipe will be loved by all age groups. It just takes max 10 mins to assemble and seconds to wipe off.

Recipe for Berrylicious Bruschetta Loaded with Muesli:

Ingredients:

1 French Baguette sliced

1/2 Cup Greek yogurt

2 Tbsp Honey

2 Tbsp Cream Cheese

1 Cup Muesli

12 Strawberries

12 Blueberries

Method:

Slice the baguette into 1/4 Inch thick slices .Lightly toast them on both sides in a oven for about 5 mins. Once done remove from the Oven. In a bowl mix greek yogurt ,honey and cream cheese. Spread this mixture on the toasted slices. Garnish with Muesli and  chopped strawberries and whole blueberries and serve.

I loved the flavours with naturally sweet berries and crunchy Muesli.

STRAWBERRY SOFT SERVE (NO COOK RECIPE)

Hello!!!!!!!!

I just love Ice cream in any season. I like to whip up soft serve with frozen fruits when you have a sudden craving for desserts or sudden guests at home. Absolutely no cooking involved. Just a few ingredients and a yummy dessert is ready.

Soft serve is a type of ice cream that is softer than regular ice creams as a result of air being introduced during freezing.These days it is commercially sold in many flavours.

This week’s theme for 102 #Foodiemonday #Bloghop is #FirelessCooking and my contribution for this theme is Strawberry Soft Serve. This theme will be very useful for many parents who participate in cooking competitions in their Kid’s school or elsewhere.Do check out all the recipes from my fellow bloggers too for all the amazing ideas.

Recipe for Strawberry Soft Serve:

Ingredients:

10  big Strawberries fresh or frozen

3/4 Tin Condensed Milk

2 Tins Nestle  Cream

1/2 Tsp Vanilla Extract

Method:

Freeze fresh strawberries one day before you plan you make the soft serve. You can use store bought frozen strawberries if you plan to make it on the same day.

Puree the frozen strawberries in a blender until they are no lumps. Then add the condensed milk, cream and vanilla essence and pulse it until all the ingredients blend well. Pour this mixture in a metal baking pan. Cover it with a cling wrap and freeze it until firm.

Remove from the freezer 5 minutes before serving . Scoop it and serve it in wafer cones garnished with fresh strawberries.

CHOCOCHIP PANCAKES

 

A pancake  is a flat cake, often thick, and round, prepared from batter that may also contain eggs, milk and butter, and cooked on a griddle or a pan.They may be served at any time with a variety of toppings or fillings including jam, fruit, syrup, chocolate chips. In America, they are typically considered to be a breakfast food. You can serve healthy pancakes to your family for breakfast .Kids will love them anytime.

Today i am sharing a easy and yummy recipe.

Recipe for ChocoChip Pancakes:

Ingredients:

1 Cup All purpose flour (Unbleached)

1/2 Cup Almond Meal

1/2 Cup Wheat Flour

3/4 Tbsp Baking Powder

1.25 Cup of Milk

2 Eggs

Fresh Strawberries

1/2 Cup Chocochips

1.5 Tbsp Honey

Butter for Greasing

Honey or Maple Syrup to drizzle before serving

Pinch of Salt

Method:

Combine all the flours ,baking powder and salt in a wide bowl. In a seperate bowl beat the eggs and mix with honey and milk.Add1/2 of the  choco chips to the flour mixture and mix with the egg mixture.Mix well to ensure there are no lumps.Heat a  griddle on medium heat and grease the surface with a little butter. Pour a level tablespoon full of  batter onto the griddle  and cook the pancakes for 2 minutes on each side, or until they turn golden brown.Transfer the pancakes as they are cooked to a plate, top it with fresh strawberries, chocochips and drizzle some honey or Maple syrup.

Serve!!!!!!!!!!
