SPICY EGG BIRYANI

Today being a saturday is family time for me. After a hectic week each of us looks forward to the weekend. Have you planned what to cook? or still looking for ideas? hmm…. don’t worry I am here with a fab recipe of Spicy Egg Biryani that is loved by my boys.it is made to suit the palette of my family.

Biryani is made in different ways  depending on the diaspora of the region. The styles are distinct .The origin of Biryani is unknown but in India it was introduced by the Muslim Community. It is mostly made with variety of fresh spices and meat. Vegetarian version has been developed over a period of time to suit the taste of Vegetarians.Today I am sharing a easy and delish recipe for Egg Biryani. You have to try it to believe it. This recipe is for spice lovers and not faint hearts.

Recipe for Spicy Egg Biryani:

2 Cups Biryani Rice Soaked for 30 Mins

6 Eggs hard boiled

3 Onions sliced Lengthwise

2 Tomatoes finely chopped

4 Green Chillies

2 Dry Red Chillies

20 Cashews

1 Cup Yogurt

Salt to taste

1/2 Tsp Red Chilli Powder

1.5 Tsp Tikka Masala

1/4 Tsp Turmeric

4 Cloves / Laung

1Inch Cinnamon / Dalchini

1 Bay Leaf / Tej Patta

2 Green Cardamom / Choti Elaichi

1 Black Cardamom /Badi Elaichi

1 Tsp Cumin / Jeera

1.5 Tsp Ginger Garlic Paste

1/2 Cup Finely chopped Coriander

3 Tbsp Oil

2 Tbsp Fried Onions

Method:

Rinse well and soak Basmati rice for 30 Mins. Chop the onions lengthwise and keep it aside. Finely chop the tomatoes and coriander and keep it aside.

Grind 10 Cashews, green chili and red chili to get a smooth paste.

Heat a wide bottom pan. Add oil .First roast hard boiled egg until they turn slightly crisp and brown on all sides. Once done remove them and keep them aside. In the same oil add all the whole spices including Jeera. Once you smell the aroma of the spices add cashews and lightly roast.Once done add the chopped onions and roast well until they turn golden brown.Once done add the tomatoes and mix well.Once they turn mushy add turmeric, chili powder, chili cashew paste  and tikka masala and allow it to cook on medium flame untilloil starts to leave the sides.Add yogurt and mix well .Allow it to simmer for 2 mins. Add shallow fried eggs and mix well. Now add soaked rice and 4 glasses of water and allow it to cook well for about 25 -30 mins on low flame until the rice is fluffy and cooked.

Garnish with chopped coriander , roasted cashews, and fried onions and serve with Raita of your choice.

SPICY BRAISED TOFU / DUBU-JORIM (KOREAN STYLE)

 

It’s Monday and I am here with a wonderful recipe for this week.I am sharing an easy  spicy braised tofu .

My boys love Tofu and  i love to try new recipes .I am not  a great fan of Tofu though.But I loved this korean style Spicy Braised tofu.This recipe is my contribution for 152nd theme #Foodiemonday #Bloghop  #AsianCuisine.

Recipe for Spicy Braised Tofu:

Ingredients:

1 Packet of Firm Tofu

2 Tbsp Oil

1/2 Tbsp Sesame Oil

1/2 Cup Finely Chopped Onion

1 Clove Garlic Minced

4 Spring Onions finely chopped

1/2 Tsp Sesame Seeds

For the Sauce:

1 Tbsp Soya Sauce

Salt to Taste

1 Tbsp Korean Chilli Paste / Gochujang

1/2 Cup Water

Method:

Take Firm Tofu and rinse well in cold running water .Pat dry with a Kitchen  paper towel. No slice them into 1/4Inch thick slices. Heat a heavy bottom flat pan. Add cooking oil. Now place tofu slices and cook on both sides untilnicely done. It will take about approx 7-8 mins for tofu to cook on each sides.Once done remove the crunchy tofu slices and place them on  a paper towel. Now add chopped onions , Spring onions (keep some aside for garnishing).Slightly roast untill the onions are slightly brown and crunchy.

Add all the ingredients for sauce in a bowl and keep it aside. Once the onions are done add the sauce until the oil starts to leave the sides and  the sauce becomes slightly thick.Add Sesame oil and tofu .Mix well.Sprinkle sesame seeds and garnish with spring onions .

Serve with steaming hot rice .

REFRESHING SUMMER SALAD

 

Summer season is in full swing here. It is very Important to keep yourself hydrated all the time to beat the heat.Refreshing Summer Salads are a boon for me as i can whip up some yummy salads quickly.

I have been missing in action for sometime and have been missing you all. Work and home front have kept me bus.It is school holidays here and my boys are keeping me busy.Well i promise you to be more active and share some wonderful recipes with all of you.

Coming back to cooking in summers,I personally prefer to whip up quick meals for my family and avoid spending long hours in kitchen. I like to whip up up salads with fresh and yummy ingredients . Sometime simple salads with no fancy dressing is an absolute delight .

For our #149th #Foodiemonday #Bloghop theme #Salads my humble contribution is this refreshing summer salad that can be prepared within 10 mins from start to finish.

Recipe for Refreshing Summer Salad:

Ingredients:

1 Cup Corn (Frozen corn defrosted  or boiled corn)

1 Small  Onion Finely Chopped

1 Red Tomato finely chopped

Juice of 1/2 Lemon

1/4 Tsp Coarse Pepper Powder

Salt to Taste

1 Tsp Apple Cider Vinegar

2 Tbsp fresh Coriander finely chopped

1/2 Green Chilli / Jalapeno  finely Chopped ( as it gives a nice aroma)

 

Method:

Mix all the above ingredients in a bowl. Allow it to rest for 2-3 mins. Then serve this refreshing salad with the goodness of fresh ingredients.

Remember to keep yourself hydrated all the time!!!

BREAD STICKS

 

Hello!!!

Today i am sharing a very easy recipe that you can make along with your kids during these summer holidays.One of the easiest recipe that your kids will enjoy. We need to keep our kids engaged and at the same time teach them to be independent .Kids will have the sense of pride when they are able to make such simple recipes.My boys love to cook and they do help me whenever they can.They have learnt the basics of cooking and can manage when I am travelling or busy at work.

When this theme was selected i had many ideas. I was preparing to travel so chose to settle with this simple recipe.My Contribution for 146th #Foodiemonday #Bloghop theme #Bread Recipe is this simple and yummy recipe Bread Sticks that is so cheesy.Kids will eat without any fuss .It is irresistible and you cannot just stop at one.

Recipe for Bread Sticks:

6 Slices of White Bread

1 Cup Mozzarella Cheese

1/4 Cup Cheddar Cheese

2 Tbsp milk

3 Tsp Oil

Method:

Mix both the cheese in a bowl.

Remove the sides of the bread. Roll each slice to make it flat.Repeat this process for all the slices of bread. place the cheese generously in the centre and roll the bread .Pat the sides with milk so that the sides can stick together.Repeat this process for the balance slices of bread.

Heat a flat pan. Add oil in the pan. Place the rolls and roast them untill they turn slightly brown and all the sides are crisp.

Serve these yummy bread sticks with any sauce of your choice and enjoy!!!!!

TANDOORI ALOO PAPAD CHAAT

 

Hello!!!

Many of us are in dilemma when there is a feast at home and there is lot of left over food. Well if you do not wish to have the same food again you can  recreate and make something interesting out of the dishes  out of it. I had some jeera aloo sabzi left along with papad, finely chopped onions and tomatoes that were left after i used some of it to make Raita. As we did not want to have the same sabzi again ,i made a simple chaat out this sabzi and left over papads and chopped onions and tomatoes.

This was insanely yummy without any fancy sauces and chutneys.So my contribution for 142nd  #Foodiemonday #Bloghop theme #The leftovers is this absolutely lip smacking Tandoori Aloo Papad chaat.

Recipe for Tandoori Aloo Papad Chaat:

Ingredients:

1 Cup Jeera Aloo ki Sabzi( This aloo ki sabzi is made with just jeera tadka, salt and chilli powder.

1 Green Chilli Finely chopped

1 Cup finely Chopped Onions

1/2 Cup Finely Chopped Tomatoes

1/2 Cup Finely chopped Fresh Coriander

1 Tsp Tandoori Masala

Salt to taste

6 Pepper Corns

1/2 Tbsp Oil

1/2 Cup Corn Mixture

Juice of 1/2 Lemon

Method:

Heat oil in a wide bottom pan. Add pepper corns and chopped green chilli. Now add Jeera Aloo ki sabzi. Mix well. Now add tandoori masala and cook untill the potatoes are well coated. Once done switch off the flame.

In a small bowl mix chopped onions,salt, tomato and lemon juice.

To Assemble:

Take a clean plate. Place the onion ,tomato and lemon mixture. On the top place the Tandoori aloo mixture.Sprinkle corn mixture , some more onion tomato mixture and chopped coriander.Crush some oven roasted Papad and serve.

PANEER STIR FRY / COTTAGE CHEESE STIR FRY

Today is a memorable day in my life. Today it’s been 2 Yrs since I stepped into the world of blogging. It has been an immense learning journey . I am learning new things everyday from all the fellow bloggers. I would like to thank my family,readers, and wonderful friends who have been encouraging and guiding me selflessly.I am truly blessed to have such wonderful people around me.Balancing home ,office and blogging is not easy but my readers keep me going .Thank you all once again.I have been travelling due to long weekend and have not been able to cook anything exclusive to celebrate this occasion.

I am sharing a simple Paneer Stir fry recipe on this occasion.

As a part of our 90th #Foodiemonday #Bloghop theme #Cheese my contribution is this simple and quick Paneer stir fry.

Recipe for Panner stir fry / Cottage cheese stir fry

Ingredients :

1Cup=250 ML

1 Cup Paneer Cubes

3 Onions roughly Chopped

1 Cup Freshly grated Coconut

3 Green Chillies

1/2 Tsp Jeera /Cumin Seeds

1/2 Tsp Red Chilli Powder

1/4 Tsp Haldi / Turmeric

Salt to Taste

1/2 Tsp Egg Curry Masala

8 Black Pepper Corns

1 Tbsp Olive Oil

Few Curry Leaves

Method:

Grind grated coconut, 2 green chillies and pepper corns without adding water.Keep this mixture aside.

Heat oil in the wok. Add jeera, haldi and red chilli powder.Add the chopped onions, one green chilli sliced and roast until they turn golden brown. Add Paneer cubes and roast on medium flame until the paneer is slightly roasted. Once done add the coconut mixture,salt and egg curry masala and mix well. Keep it on low flame till all the paneer is well coated with the coconut mixture. Garnish with Curry leaves.

Serve hot with Rotis or Rice.

Enjoy this quick Paneer stir fry that can be made in a jiffy.

NUTELLA BANANA CHOCOCHIP ICECREAM

Hola !!!!

It’s Summer and also School holidays  in many parts of the world.My kids love to have Icecream to beat the heat. Homemade Ice cream  is always the best.This frozen cooler is a yummy treat for your kids and guests anytime during summer. Nutella and Banana makes a yummy combo and is loved by many of us.

Well in this part of the world where I live ,the climate is humid .Rains are unpredictable.Sometimes the heat is unbearable. We treat ourselves with healthy liquids to keep ourselves hydrated at all times.

Today i will be sharing a yummy No churn Nutella and Banana Ice cream with the goodness of Choco Chips which can me made by your kids as a summer project.

My Contribution for our 87th #Foodiemonday #Bloghop Theme #FrozenCoolers is Nutella Banana Chocochip Icecream.

Recipe for Nutella Banana Chocochip Ice cream:

Ingredients :

1 Ripe Banana

2 Tbsp Nutella

250 ML Milk

1 Tbsp Cream (I have used Amul Cream)

2 Tbsp Choco Chips

Method:

Blend all the ingredients except chocochips and ensure there are no lumps. Pour this in the  iceccream moulds and sprinkle some chocochips.Freeze it for about 6-8 hours or overnight. Just before serving remove the icecream from the moulds sprinkle some choco chips and serve.

Enjoy this creamy yummy icecream at the comfort of your home!!!!!!!!!!!!!

NOODLE TACOS(FUSION RECIPE)

 

Fusion recipes are always exciting as you get to experiment with different cuisines from around the world. I feel variety is the spice of life.Fusion Cuisines are not categorized according to any one particular  style and have played a vital part in innovation of new recipes.

Our theme for #68th #Foodiemonday #Bloghop theme is #Fusionrecipes. My contribution is a fusion of Mexican ,Chinese,Thai and Indian flavours that will leave you craving for more. My kids loved these yummy Tacos bursting with chinese and Indian flavors.

Recipe for Noodle Tacos:

Ingredients:

2 Pkts Maggie Noodles (cook as per instructions)

4 Multigrain Tortillas

1 Medium Green bell Pepper cut length wise

1 Medium Carrot grated

1/4 Green Cabbage shredded

4 Green Chillis

1.5 Table Spoon Chings Chilli Sauce

1/2 Tsp Dynamite Chilli Sauce

1/2 Tsp Sriracha Sauce

2 Sachets Maggie Masala

1/4 Tsp Rice Vinegar

1/2 Cup finely chopped Spring Onions

1 Tsp Oil

Method:

Cook Noodles as per instructions on the packet. Heat a wok. Add oil. Once the oil is hot add half of the veggies (except green chillies)and toss on high flame to retain the crunchiness. Add all the sauces ,rice vinegar  and mix well.Add the maggie masala and mix well.Once the masala blends well with the veggies add the boiled noodles and mix well. Keep it on medium flame for 5 mins and switch off the flame.

Take a small pan. Add a few drops of oil and shallow fry the green chilles with some salt.

Slightly warm the multigrain tortillas. Place the tortilla on a plate. Add some shredded cabbage and carrots.Place 2 Tbsp of noodle mix. Garnish with some spring onions and shallow fried green chilli.Add more chilli sauce if you want and serve .
