POTATO SEMOLINA BITES

As we are in second half of 2021 , we pray and hope we can lead a normal life without the masks and not the new normal as we all call it.It has been a long time since we had a get together or a picnic with family and friends. We can cherish our memories reminiscing through the old photos . It makes me so Nostalgic. We have school holidays during summer and we would often head out for a picnic with a group of friends and family.

Some Facts about Picnic:

  • Picnic is a wonderful idea to meet friends and family with some yummy outdoor food.
  • The word ‘picnic’ stems from the French word ‘pique-nique’
  • Some Camp out for days or go hunting too.
  • Here we have a day picnic from morning till late evening.
  • Schools organize Picnics too
  • After the meal, people often play games and sports, for example, playing catch, badminton and Frisbee or some other card games.
  • We can even play music and sing songs.
  • A great escape from the daily routine and helps us to relax and enjoy some valuable time with friends and family.

Ingredients for Potato Semolina Bites:

  • Boiled Potatoes: I have medium size potatoes. You can replace it with sweet potatoes or raw banana. Mash it nicely and ensure there are no lumps.
  • Fresh Coriander: Gives a nice aroma and good to add some greens to the dish.
  • Fine Semolina : Binds well and gives a nice crunch in every bite.
  • Rice Flour: Adds crispiness to the potato semolina bites.
  • Red Chilli Flakes : Adds a mild spice kick to the dish.
  • Jeera / Cumin: I love adding this whole spice as it adds so much flavor.
  • Chaat Masala: Perfect Masala to balance all the flavors and enhance the taste.
  • Kashmiri Red Chilli Powder: Give a nice red colour and mild heat to the dish.
  • Coriander Powder :It is rich in anti oxidants and an importatnt ingredient for this dish.
  • Grated Ginger: Adding fresh grated ginger imparts a nice flavor and i good for digestion too.
  • Onion: Gives a nice crunch to the potato semolina bites.
  • Pepper Powder: I have used coarse black pepper powder here.
  • Salt : I have used himalayan pink salt. You can use your normal salt.
  • Oil : I have used sunflower oil. You can use any Odorless oil.

Recipe for Potato Semolina Bites:

Equipment Used:

  • Frying Pan
  • Spatula
  • Mixing Bowl
  • Chopping Board
  • Knife
  • Grater

Ingredients for Potato Semolina Bites:

  • 3 Medium Size Boiled Potatoes grated
  • 1/2 Cup Finely Chopped Fresh Coriander
  • 2 Tbsp Fine Semolina
  • 1 Tbsp Rice Flour
  • 1/2 Tsp Red Chilli Flakes
  • 1 Tsp Jeera / Cumin
  • 1.5 Tsp Chaat Masala
  • 1 Tsp Kashmiri Red Chilli Powder
  • 3/4 Tsp Coriander Powder
  • 1″ Grated Ginger
  • 1 Big Onion finely chopped
  • 1/2 Tsp Black Pepper Powder
  • Salt to taste
  • Oil for shallow frying

Method:

  • In a mixing bowl add all the ingredients except oil.
  • Nicely mash and mix all the ingredients until you get a dough like texture.
  • Divide the dough into equal number of balls.
  • Take a ball of dough and flatten it and shape the edges to ensure there are no cracks.
  • Repeat the process for the balance dough balls.
  • Heat oil in a frying Pan.
  • Shallow fry each flattened disk on medium flame until both the sides are nice golden brown.
  • Transfer the contents to a kitchen towel to absorb excess oil if any.
  • These Potato semolina bites are crisp on the outside and soft inside.
  • Serve them with any sauce, green chutney or red chutney as per your choice.
  • Perfect to serve as snacks, starters, pack for snack box for school and even for Picnics.

  1. love how the humble potato transforms itself to a picnic-worthy snack. the addition of rava is so good here, I would like to make this using raw banana given the family’s dietary (CURRENT) restrictions 🙂
