It is raining sweets everywhere as we are gearing up to celebrate Diwali. The celebrations are not the same in the new normal except for the variety of sweets and savory dishes we get to enjoy during this festival. What is Diwali?

Diwali / Deepavali — festival of lights celebrated during the month of Kartika. We decorate the whole house with colorful lamps and lighting. Diwali is celebrated by Indians across the world. Families gift each other with amazing gifts. Whole street is well lit and decorated with beautiful Rangoli. In North India Lakshmi Puja is performed to attract wealth. All the offices do perform puja in office .

She gave me two secret ingredients Ghee and Saffron and I gave her Milk Powder and Almonds.She created these delicious Milk Powder Chocolate Ladoo and I made Paneer Almond Coconut Burfi.

PANEER ALMOND COCONUT BURFI

Equipment

  • Wide Bottom Pan
  • Spatula
  • Grater

Ingredients
  

  • 1 Cup Freshly Grated Coconut
  • 1/2 Cup Finely grated Paneer
  • 2 Tsp Coconut Cream
  • 1/2 Cup Finely Powdered Almonds
  • 3/4 Cup Sugar
  • 1/4 Cup Milk
  • 10 Strands Saffron
  • 1 Tbsp Ghee
  • 1/2 Tsp Cardamom Powder

Instructions
 

  • Soak saffron in warm milk and keep it aside
  • Finely grind the Raw almonds and keep it aside
  • Heat the wide bottom pan on medium flame. Add ghee
  • Add freshly grated coconut and roast for 3 minutes.
  • Add sugar , finely grated Paneer and mix all the ingredients.
  • Keep stirring and ensure it does not burn.
  • After 5 minutes add saffron soaked milk and powdered Almonds.
  • Mix well until it starts to form a lump and leave the side.
  • Lastly add coconut cream and give it a good mix.
  • After 2 minutes sprinkle cardamom powder and mix gain
  • Turn off the heat.
  • Grease tray and place the baking paper.
  • Transfer the mixture on this baking paper and spread evenly.
  • Let it rest for 10 minutes.
  • Cut into desired shapes and serve or store it in an air tight container.
  • The weather being unpredictable here I keep the container in the fridge.

    Preethi, I am a huge fan of coconut barfi. Your paneer almond coconut barfi is super tempting. For this Diwali season have already made my coconut barfi.     Preethi, I loved the addition of paneer and almond powder to your coconut barfi. Sometimes, one does not have khoya, so paneer is a wonderful replacement. With the aroma of saffron these must have tasted heavenly. I am adding these to my bucket list.
