PALKOVA / MILK SWEET (DESSERT)

Today I am sharing a very popular sweet from TamilNadu. Palkova / Milk Sweet is a delicious lip smacking sweet. I planned to make this after a long time. I have a lot of memories associated with this sweet. Whenever we travelled from Bangalore to Tirupathi we used to buy this sweet from the Milk Dairy as they always sold fresh Palkova. I used to enjoy with all my cousins who are also great fans of this sweet.

What is Palkova?

Srivilliputhur â€“ A famous city in Virudhunagar district in the Indian state of Tamil Nadu is the place where Palkova originated.Palkova or Palgova however called Thiratipal or milk peda. Palkova is traditional milk sweet enriched with the richness of pure milk and is usually served in a thick manner. Sugar is the only sweet ingredient added to it.But there are many variations to it these days. It is something similar to Kalakand. Traditionally it is made with only 3 Ingredients. It is time consuming process. It is made on Auspicious Occasions in South India.

I joined this wonderful group when it was just started and post from their 3rd Theme onwards. This group is one of the main reason for encouraging me to blog and not give up. We are more like a family now. Many bloggers left the group for personal and professional reasons.We are still bonding very well . Learnt a lot from this group.My humble contribution for this week is my most favorite sweet Palkova.

Ingredients for Palkova / Milk Sweet:

  • Full Fat Milk : Full fat milk gives the best results. I have used Amul full cream milk .
  • Coconut Sugar: I prefer non refined sugar. I have used coconut sugar. You can use any variety as per your choice.
  • Ghee: Gives nice aroma to the sweet and also nice texture.

Recipe for Palkova / Milk Sweet:

Equipment :

  • 1.Heavy Bottom Non Stick Pan
  • Spatulla

Ingredients for Palkova / Milk Sweet:

  • 1 Litre Full Cream Milk (Full Fat milk)
  • 6 Tbsp Coconut Sugar
  • 1 Tbsp Ghee / Clarified Butter

For Garnish:(Completely Optional)

  • Few Saffron Strands
  • Slivered Almonds

Method:

  • Heat a heavy bottom Non Stick Pan and pour the milk.
  • Let it boil and allow it to simmer on low flame.
  • Keep stirring the milk and scrape the sides with the spatula.
  • Milk will start to thicken slowly .
  • Keep stirring and scraping the sides untill the milk quantity is reduced to half the quantity.
  • Add sugar and ghee and keep stirring continuously.
  • You will see the mixture turns grainy as the moisture is lost.
  • This thick mass is now done.
  • Transfer the mass to a greased plate. Garnish with saffron and Almond slivers.
  • Serve warm or Chilled.
  • Enjoy…………..

Notes:

  • Always use a heavy bottom non stick pan to make this sweet.
  • You need a lot of patience to make this sweet.It is time consuming.
  • You full fat milk for best results.
  • Garnish is completely optional.
  • I have used coconut sugar. You can use any sugar as per your choice
  • Adjust the sweetness as per your taste.
  • The proportion i have used suits my family.

  2. Omg.. one of my favorite from childhood. Too too tempting and this looks exactly like how we get in srivalliputhur. Love the idea of using coconut sugar

  3. Palkova sounds so much similar in texture to North Indian milk cake.. I have heard a lot about this dessert from South India but never got a chance to try it.. sounds perfect to try for some special occasion or festivals like Diwali.

  4. Wow! Palkova looks so delicious, soft and yum. I have heard so much about it. Will try making it but I will use sugar as coconut sugar is not available here.
