MINI KHARA BUN / SPICED BUN

Gloomy weather calls for something spicy along with filter coffee. Mini Khara Bun / Spiced Bun served with coffee is perfect to enjoy with family. It is a very easy recipe and will be loved by your family. Khara bun has a special place in my heart as it is my childhood favorite. We could have khara bun from Iyengar bakery only when we visited Bangalore. My mom used to bake it at home so that we could enjoy these buns as we did not have a bakery at my place. We were presented with different variations and enjoyed it always.

  • Khara means Spicy in Kannada.
  • Very Popular bun from Karnataka.
  • Iyengar Khara Buns are very Popular in Bangalore and have sprung up in many countries world wide now.
  • The taste of the buns sold at Iyengar bakery here slightly varies from the ones we get in Bangalore.
  • There are many recipes and variations to the khara bun.
  • I have tweaked the recipe to suit my palate. My family loves these flavorful mini khara buns.

Ingredients for Mini Khara Bun / Spiced Bun:

For the Dough

  • All Purpose Flour (Unbleached): I have used unbleached All Purpose flour.
  • Instant Yeast : You can directly add instant yeast to the flour.
  • Warm Milk: Milk should be lukewarm . I have used full fat milk here.
  • Sugar: I have used raw cane sugar. You van use normal white sugar too.
  • Salt :Salt is a flavor enhancer . I have used Kosher Salt here.It slows fermentation and checks on yeast development.You can use table salt or sea salt too.
  • Butter: I have used unsalted butter. Makes the buns soft and fluffy.

For the masala:

  • Onions: I have used medium size red onions.
  • Jeera / Cumin: Adds a nice flavor to the masala.
  • Red Chilli Powder: I have used kashmiri chilli powder. It is not spicy and gives a nice colour.
  • Fresh Coriander: Fresh coriander adds a nice aroma to the buns.
  • Green Chilli: I have added one mildly spiced green chilli for the spice kick. You can increase or decrease as per your spice tolerance.
  • Pav Bhaji Masala : Adding pav bhaji masala makes the bun more flavorful and delicious. I would suggest not to skip this.
  • Salt: I have added Himalayan pink salt.You can use any regular salt.
  • Oil: I have used sunflower oil. You can use any odorless oil here.

Equipment Used:

  • Wide bottom Pan
  • Spatula
  • Small cup
  • Oven
  • Mixing Bowl
  • Baking Tray

Ingredients for Mini Khara Bun / Spiced Bun

For the Dough:
  • 2 Cups All Purpose Flour (Unbleached)
  • 1 1/4 Tsp Instant Yeast
  • 1/2 Cup Warm Milk
  • 1 Tsp Sugar
  • 1/4 Tsp Salt
  • 2 Tsp Butter
For the masala:
  • 2 Medium Size Red Onions finely chopped
  • 1 Tsp Jeera / Cumin
  • 1/2 Tsp Red Chilli Powder
  • 2 Tbsp Fresh Coriander finely chopped
  • 1 Green Chillies finely chopped
  • Salt to taste
  • 1 Tsp Pav Bhaji Masala
  • 2 Tsp Oil

Method:

  • Heat Oil in a wide bottom pan. Add cumin .
  • Once it splutters add finely chopped chilli and finely chopped onions.
  • Saute untill the onions are soft . Add red chilli powder , salt and pav bhaji masala.
  • Mix well add finely chopped coriander and keep it on medium flame for 5 minutes.
  • Turn off the heat and allow it to cool completely.
  • Warm the milk slightly and turn off the heat.
  • Add sugar and keep it aside.
  • Add flour to the mixing bowl. To this add instant yeast and mix well.
  • To this mixture add the onion masala and knead the dough. Slowly add milk and keep kneading the dough until it is nice and soft.
  • Add butter and knead again until it is nice and soft and non sticky.
  • Tuck the dough nicely .Cover and rest for 1 Hour in a warm place to rise.
  • The dough will rise after an hour .
  • Lightly punch the dough to remove the air and knead again.
  • Take a lemon size dough and tuck the sides to form mini balls.
  • Place these balls on the tray lined with butter paper.
  • Cover with a moist cloth .
  • Let it to rest for another 30 mins for the dough to double.
  • Brush with milk gently.
  • Place the tray in a pre heated oven at 180C for 30 mins or untill the buns turn golden brown on top.
  • Remove the tray from the oven .
  • Brush with butter for a lovely shine and allow it to cool completely.
  • Serve Khara Bun with Coffee and enjoy the evening with family.

Notes:

  • If you use active yeast ,remember to proof it in warm milk and sugar.
  • Once it is bloomed add it to the flour.
  • In case you do not have fresh coriander ,You can use curry leaves.

  3. Wow Preethi khara buns looks awesome. A perfect recipe for this monsoon. Spicy khara buns can be also enjoyed with a bowl of soup. Loved the use of pav bhaji masala in buns. I would love to try it soon.
